Special Issue Information

Dear Colleagues,

This Special Issue focuses on Research on the Molecular Mechanisms of Food Quality Regulation, aiming to explore the molecular-level regulatory mechanisms of quality formation, deterioration and maintenance in agricultural and aquatic food during growth, processing and storage. It covers transcriptomics, proteomics and metabolomics technologies, revealing the regulatory roles of key genes, transcription factors and food macromolecule interactions on food texture, flavor, nutrition and safety quality. The issue collects original research and review articles related to molecular regulation of fruit and vegetable postharvest quality, meat and aquatic product freshness maintenance and grain processing quality improvement. It intends to summarize the latest research progress, provide a theoretical basis for precise quality control and green preservation technology development and promote the integration of molecular biology and food science engineering, as well as academic exchange and innovative application in this field.

Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. International Journal of Molecular Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
