Dear Colleagues,
Food allergenicity is a critical issue affecting global public health, food safety, and the food industry. Recent advancements in molecular biology, immunology, and food technology have led to new insights into allergen identification, detection, and mitigation strategies.
This Special Issue aims to provide a comprehensive understanding of food allergenicity by integrating molecular research, technological advancements, and practical applications to enhance food safety and consumer health.
We welcome original research and review articles on topics including:
- Molecular and immunological mechanisms of food allergenicity;
- Advances in food allergen detection: biosensors, mass spectrometry, and immunoassays;
- Role of gut microbiota in food allergy development and tolerance;
- Genetic and biotechnological strategies for allergen reduction in novel foods;
- Food processing techniques to mitigate allergenicity;
- Development of hypoallergenic food alternatives and novel protein sources;
- Personalized nutrition approaches to managing food allergies.
