Special Issue Information

Dear Colleagues,

Enzymes have unsurpassed physicochemical, biological and biocatalytic functionalities, allowing biocatalysis with selectivity and specificity in the conversion of raw materials. For this reason, the food industry has taken advantage of enzymes as green catalysts to extract bioactive substances, improve sensory, taste, and texture properties, produce nutrient-rich foods, and eliminate food safety hazards. Enzymes offer several benefits over traditional catalytic agents with respect to process efficiency, sustainability, reuse, and cost–benefit ratio.

With a central focus on the food industry, this Special Issue seeks to explore emerging challenges, opportunities, trends, and approaches in the development of biocatalytic procedures, as well as the enzymatic engineering of innovative biocatalysts.
