Special Issue Information

Dear Colleagues,

This Special Issue will explore the multifaceted roles of antioxidants naturally present in food and plants, emphasizing their impact on human health, food quality, and plant physiology. With increasing interest in natural bioactive compounds, antioxidants are recognized not only for their ability to neutralize free radicals and reduce oxidative stress but also for their broader biological effects, including anti-inflammatory, anti-aging, and disease-preventing properties.

We invite contributions that investigate the identification, quantification, and mechanistic understanding of antioxidant compounds in edible plants, herbs, fruits, vegetables, and processed food products. Studies that integrate advanced analytical techniques (such as chromatography, spectroscopy, or metabolomics) with biochemical or in vivo assays are particularly welcome. Moreover, research on the effects of cultivation practices, processing, and storage on antioxidant levels and bioavailability will enrich the scope of this Special Issue.

Interdisciplinary approaches that connect plant biology, food science, nutrition, and health outcomes are encouraged. Reviews and experimental studies shedding light on the synergistic effects of antioxidant mixtures, their interactions with cellular pathways, and their potential for disease prevention are of particular interest.

This Special Issue will provide a platform for researchers to present novel findings that contribute to the growing body of knowledge on natural antioxidants, facilitating their practical applications in health-promoting diets, functional food development, and sustainable agriculture. We will support evidence-based strategies that leverage the potential of nature-derived compounds for improving both human and environmental well-being.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
