Dear Colleagues,
With growing concerns about health, consumers are increasingly seeking out healthier food options. In response, the food sector has been developing new products and adapting existing ones by adding healthy ingredients such as fiber, vitamins, and phenolic compounds while reducing chemical additives. However, industrial processing can alter or even destroy molecules that are beneficial to the human body, such as antioxidant compounds, reducing their biological activity.
To preserve these compounds, researchers have been developing alternative methods to conventional ones. Various extraction methods of antioxidant compounds have been studied to maintain these compounds’ biological activity and meet safety requirements while being ecologically sound, efficient, and cost-effective. In addition, new systems for preserving and releasing these substances have gained researchers' attention. The release of antioxidant compounds contributes to critical biological properties such as anti-inflammatory, antitumor, healing, and anti-aging effects.
Therefore, it is essential to study the bioavailability and bioaccessibility of antioxidant agents so that they can be potentially absorbed and metabolized in the human body. Moreover, the study of the protection of these substances can also be explored for applications in other industrial segments in addition to food.
In this Special Issue on "Protection and Delivery Systems of Antioxidant Compounds: Principles and Technological Trends", we invite scientists from all over the world to submit research and review articles reporting on studies related to emerging extraction, preservation, and release technologies, as well as those on the bioavailability and bioaccessibility of antioxidant molecules from natural sources. These properties will enable the prediction of the behavior of these compounds regarding a process, product, or specific characteristic. The articles will be published online in Antioxidants.
