Dear Colleagues,
This Special Issue aims to provide a comprehensive platform for recent advances in animal product quality, with a particular focus on the roles of nutrition and physiological mechanisms in livestock production systems. Improving the quality of animal-derived products, including meat, milk, and eggs, is increasingly important to meet consumer demands for safety, nutritional value, and sustainability. Emerging research highlights the complex interactions between dietary strategies, gut health, metabolic regulation, and genetic factors in determining product quality traits. This Special Issue welcomes original research and review articles addressing innovative nutritional approaches (e.g., functional feed additives and alternative feed resources), physiological and molecular mechanisms underlying product quality, and their implications for animal performance, health, and product characteristics. Studies integrating omics technologies, precision nutrition, and sustainable production practices are particularly encouraged. Collectively, the contributions are expected to enhance our understanding of how to optimize animal product quality through science-based strategies, supporting both industry applications and future research development.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Animals is an international peer-reviewed open access semimonthly journal published by MDPI.
