Special Issue Information

Dear Colleagues,

The scope of this Special Issue includes all factors or circumstances that may affect the quality of pork or pork products. Articles may be related to the comparison of different pig genotypes or different production systems, such as extensive, ecological or differentiated systems, that may affect pork quality. Furthermore, papers related to the influence of diet and animal welfare (such as immunocastration) on meat quality will be included. In vivo (e.g., ultrasonography) and postmortem technologies (NIRS, photographic image analysis, etc.) predicting meat quality are also within the scope, as well as the development of innovative meat quality analytical methods. In addition, the Issue may include articles related to extrinsic meat quality attributes appreciated by consumers, such as environmental sustainability or animal welfare. Finally, manuscripts may address the application of meat processing additives or procedures, as well as feeding strategies (including feed additives, crop biofortification, etc.) to increase pork quality and durability.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Animals is an international peer-reviewed open access semimonthly journal published by MDPI.

Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
