Dear Colleagues,

Wheat is a cornerstone of global food security, providing essential nutrients and serving as a primary ingredient in countless food products. Historically, breeding programs have focused on yield and disease resistance, often neglecting nutritional and functional traits. Today, climate change, population growth, and consumer demand for healthier foods require innovative solutions that combine sustainability with improved wheat quality.

This Special Issue explores genetic approaches and advanced technologies for enhancing wheat’s nutritional profile, such as increasing protein content, essential amino acids, and bioactive compounds, while optimizing functional properties critical for processing and end-use performance. Its scope includes conventional and molecular breeding, genomic selection, gene editing, and biotechnological strategies that strengthen resilience to biotic and abiotic stresses, ensuring sustainable production and superior technological performance during transformation processes.

We invite cutting-edge research integrating genetics, physiology, and food science, demonstrating how genetic improvements translate into better nutritional value. Original research articles, reviews, and case studies on genetic variability, omics-based approaches, and innovative breeding tools are welcome. Contributions linking genetic and technological advancements to global challenges, such as food security, climate resilience, and sustainable agriculture, are particularly encouraged.

Manuscript Submission Information

Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Agriculture is an international peer-reviewed open access semimonthly journal published by MDPI.
