Special Issue Information

Dear Colleagues,

Animal production systems vary significantly, and the choice of a specific livestock farming system has an impact on animal welfare and thus directly and indirectly determines the quality of raw materials. In turn, the quality of raw materials is of significant importance to consumers and processing, and trends in the food market show that there is growing interest in food from production systems that respect the principles of sustainable development and animal welfare. In short, today's consumers expect products derived from animals that have been provided with an adequate level of welfare, but also products that stand out for their health-promoting properties.

Therefore, the scope of this Special Issue “Improving the Quality of Raw Materials and Products of Animal Origin: From Farm to Processing Innovation” encompasses all factors that may affect the quality of raw materials of animal origin (meat, milk, and eggs) and, consequently, the quality of the end products. Submissions on the quality characteristics of animal products as valued by consumers are also welcome, as are articles on the use of additives or technologies in the processing of animal-origin raw materials that aim to improve quality, health benefits, and product shelf life.

Agriculture is an international peer-reviewed open access semimonthly journal published by MDPI.
