Background: The consumption of ultra-processed foods (UPFs) represents an important public health challenge, especially among education workers, whose intense routine can negatively impact eating habits. This study aimed to analyze the factors associated with the regular consumption of UPF among employees of the Federal Network of Professional, Scientific and Technological Education (RFEPCT) in Brazil. Methods: This was a cross-sectional study, with a quantitative approach, carried out with 1563 education workers. Validated instruments on eating habits (PeNSE), mental health (DASS-21) and quality of life (WHOQOL-bref) were used. The regular consumption of UPF was defined as intake on ≥5 days in the last seven days. The association between the regular consumption of UPF and sociodemographic, occupational, behavioral, mental health and quality of life variables was assessed by Poisson regression with robust variance, generating adjusted prevalence ratios (PRadj) and respective 95% confidence intervals. Results: The regular consumption of UPF was associated mainly with female gender, a lower age group, Southeast and Midwest regions, dissatisfaction with sleep and the body, physical inactivity and poor sleep quality. In addition, the findings suggested a significant relationship between the worst stress scores and soft drinks (PRadj: 2.11; CI: 1.43–3.13), anxiety and soft drinks (PRadj: 1.83; CI: 1.24–2.70) and depression and industrialized/ultra-processed salty foods (PRadj: 2.43; CI: 1.82–3.26). The same was observed in the scores for the worst perception of quality of life, where there was a prevalence of up to 2.32 in the psychological domain and the consumption of industrialized/ultra-processed salty foods. Conclusions: The findings indicate that multiple interrelated factors—individual, psychosocial and occupational—are associated with the consumption of UPF among education workers. These results reinforce the importance of institutional policies that integrate actions to promote dietary health, mental health care and improved working conditions in the education sector. Selenium (Se) is an essential trace element involved in antioxidant redox regulation, thyroid hormone metabolism, and cancer prevention. Among its different forms, elemental selenium (Se0), particularly at the nanoscale, has gained growing attention in food, feed, and biomedical applications due to its lower toxicity and higher bioavailability compared to inorganic selenium species. However, the detection of Se0 in real samples remains challenging as current analytical methods are time-consuming, labour-intensive, and often unsuitable for rapid analysis. In this study, we developed a method for rapidly measuring Se0 using carbon nanodots (CNDs) produced from the Maillard reaction between glucose and glycine. The fabricated CNDs were water-dispersible and strongly fluorescent, with an average particle size of 3.90 ± 1.36 nm. Comprehensive characterisation by transmission electron microscopy (TEM), Fourier-transform infrared spectroscopy (FTIR), fluorescence spectroscopy, and Raman spectroscopy confirmed their structural and optical properties. The CNDs were employed as fluorescent probes for the selective detection of Se0. The sensor showed a wide linear detection range (0–12.665 mmol L−1), with a low detection limit (LOD) of 0.381 mmol L−1 and a quantification limit (LOQ) of 0.465 mmol L−1. Validation with spiked real samples—including ultra-pure water, tap water, and soft drinks—yielded high recoveries (98.6–108.1%) and low relative standard deviations (<3.4%). These results highlight the potential of CNDs as a simple, reliable, and environmentally friendly sensing platform for trace-level Se0 detection in complex food and beverage matrices. Full article

Background/Objectives: Recent research indicates a global transition from healthy and balanced diets to unhealthy Westernized dietary patterns (WDPs). This transition is linked to increased rates of non-communicable diseases (NCDs), e.g., obesity, type 2 diabetes, and cardiovascular diseases, often preceded by metabolic syndrome (MetS). Therefore, the objective of this study was to develop a diet quality index, termed Westernized Diet Index (WDI), to assess adherence to WDPs and its association with main cardiometabolic health issues, for which MetS and its components were chosen as representatives of NCDs. Methods: The development of the WDI was driven by a semi-systematic and comprehensive examination of the literature (n = 491 articles) that evaluated the influence of WDP components on health outcomes. The scoring algorithm involved multiple steps, assigning scores based on study design, sample size, and the direction of food effects on health outcomes. Results: The final developed index encompassed 30 food groups/items. It was revealed that soft drinks, processed foods, red meat, sodium, and hydrogenated fats had the most detrimental effects on health, significantly influencing the index’s coefficients. In contrast, dietary fiber, plant-based metabolites, vitamins, minerals, nuts/seeds, and fish had the most substantial beneficial impacts. Conclusions: The WDI aligns with the existing literature on the importance of specific food items and with other validated diet quality indices, e.g., the Dietary Inflammatory Index (DII) and Alternate Healthy Eating Index (AHEI). Thus, the WDI can provide evidence for clinicians and researchers in formulating evidence-based dietary guidelines as well as strategies for the prevention and treatment of diet-related health issues. However, further validation is proposed to verify the WDI’s capability across different contexts. Full article

Background: Method quantification limits are typically determined by measuring variability at blank level only, without accounting for the uncertainties associated with the parameters of the calibration function applied. Methods: A method for the determination of artificial sweeteners and caffeine in soft drinks was validated. The effect of chosen regression function on quantification limits was assessed, considering both trueness and precision. Results: The validated method exhibited heteroscedasticity for all analytes, which is common in experimental methods. A linear response was observed within the working range for sweeteners, while a quadratic regression was required for caffeine. Due to the heteroscedasticity nature of the responses, weighted regressions were necessary to obtain the lowest method quantification limits, allowing for accurate (i.e., unbiased and precise) estimates at the lower end of the calibration range. Under weighted conditions, the regression equations obtained, with an upper range set at 600 mg·L−1, were as follows: y = 3.9 + 58.9x for acesulfame K; y = 0.8 + 185.1x for saccharin; y = 3.5 + 43.3x for aspartame, and y = −7 + 159x − 0.242x2 for caffeine. The method quantification limits determined using weighted regressions were 2 mg·L−1 for each analyte, whereas these limits increased to 20 mg·L−1 when non-weighted regressions were applied. Conclusions: The choice of regression function for transforming instrumental signals into analyte concentrations significantly affects the determination of quantification limits, owing to the inherent heteroscedasticity of analytical and bioanalytical calibrations. Weighted regressions are essential for producing accurate estimates at lower concentration levels. Applying weighted regression in the context of heteroscedastic calibrations can lead to quantification limits that are more than 10 times lower than unweighted approaches. Full article

Background/Objectives: Non-communicable diseases (NCDs) are strongly linked to beverage consumption. This study aimed to assess the average daily beverage intake of Saudi residents, energy intake from beverages, and the influence of socio-demographic factors, health behaviors, and health status on beverage intake. Methods: A nationally representative, cross-sectional study utilized stratified quota sampling to survey adults (≥18 years) across all 13 administrative regions of Saudi Arabia. Data were collected from April 2022 to December 2023 using the validated Arabic Beverage Frequency Questionnaire (ABFQ), assessing consumption patterns of 28 beverage types. Results: The study included 4385 participants (mean age: 36.1 ± 11.14 years, 65% male). Sweetened tea (28 mL/day), regular soft drinks (22.1 mL/day), and Saudi coffee (18 mL/day) were the most frequent beverages after water. Sweetened tea contributed to the highest average energy intake (33.2 ± 46.4 kcal/day). Consumption of sugar-sweetened beverages (SSBs) was higher among younger individuals (18–29 years: OR: 4.0, 95% CI [2.6–6.3]; 30–44 years: OR: 2.8, 95% CI [1.8–4.3]), males (OR:1.6, 95% CI [1.4–1.8]), and residents of specific regions [Al-Jawf (OR: 1.9, 95% CI [1.2–3.2]) and Jazan (OR: 3.2, 95% CI [2.2–4.7])]. Higher water intakes were associated with males (OR: 1.5, 95% CI [1.3–1.7]), higher education levels (OR: 1.4, 95% CI [1.2–1.8]), physically active (OR: 1.5, 95% CI [1.3–1.8]), and those overweight (OR: 1.6, 95% CI [1.2–2.3]) or obese (OR: 2, 95% CI [1.4–2.8]). Conclusions: This study provides a valuable insight into beverage consumption patterns among Saudi residents. The findings highlight the need for targeted public health interventions to promote healthier beverage choices, particularly among younger populations and those with lower socioeconomic status. Background/Objectives: This study aimed to examine the association between ultra-processed food (UPF) consumption and obesity in Korean adults. Methods: Data from the 2019 to 2021 Korea National Health and Nutrition Examination Survey were analyzed. Dietary intake and UPF consumption were assessed using the NOVA food classification based on 24 h recall data from 9662 participants (aged 19–64 years). The participants were divided into three groups based on the tertile of UPF intake. Obesity was defined as a body mass index of ≥25 kg/m2. Multivariable logistic regression was used to estimate the adjusted odds ratios (AORs) with 95% confidence intervals (CIs) after controlling for potential confounders. Results: Of the participants, 50.2% were men and 49.8% were women. Men consumed more UPFs daily (401.3 g) than women (260.1 g; p < 0.0001). Among the various categories of ultra-processed foods, ‘soft drinks, fruit and vegetable drinks’ were the most frequently consumed by both men and women, with men showing a notably higher intake than women. Compared to the lowest quartile of UPF intake, the highest tertile was significantly associated with obesity in men (AOR: 1.28; 95% CI: 1.05–1.55; p for trend = 0.0003). Conclusions: This study suggests that a high intake of UPFs is associated with increased odds of obesity in men. Further research is needed to elucidate the specific negative health effects of UPFs in different populations, and targeted efforts should promote healthy diets for both men and women. Full article

Obesity among adolescents has increased over the past decades in most parts of the world in low- and middle-income countries. This study aimed to investigate the dietary practices and anthropometric status of the rural university students in Limpopo Province. A cross-sectional study was conducted among university students in Limpopo Province. A total of 363 students aged 18 to 42 years residing at the university residences were randomly selected. A structured self-administered questionnaire was used to collect data. Anthropometric measurements were conducted by a qualified biokinetist. Data were analysed using SPSS version 29. More than half (57.3%) of the students were females. About 42.1% reported that they consume fast food once per week. The prevalences of overweight and obesity were 21.8% and 7.5%, respectively. A chi-square analysis revealed a significant association between soft drinks, juice, and energised drink consumption frequency and BMI status (p = 0.006). Results revealed a significant association between the frequency of eating processed food per week and the WHR status (p = 0.013). Overweight and consuming fast food and sugary drinks are significant concerns amongst rural-based university students. The current study recommends that regular nutrition education campaigns be conducted at the university to encourage students to make healthier eating choices. Full article

Background: The majority of Australian children exceed the World Health Organization’s recommended dietary intake of free sugar, particularly through the consumption of sugar-sweetened beverages. Front-of-pack nutrition labels increase perceived risk and deter the consumption of sugar-sweetened beverages. However, past studies of young children have focused almost exclusively on a parent’s choice of beverage for children. This study investigated the influence of four label designs (text-based warning, tooth decay pictorial, teaspoons of sugar, and Health Star Rating) on the beverage choices of N = 1229 Australian children (aged 4–11 years) and their parents. Methods: In an online vending machine scenario, parent–child dyads were separately asked to select which beverage they would choose for themselves before and after being randomised to one label condition. The beverages displayed included 100% fruit juice, soft drink, soft drink with a non-nutritive sweetener, flavoured milk, plain milk and bottled water. Beverage healthiness was determined by a 1–10 rating based on a review by a panel of experts (10 dietitians and nutritionists). Results: Mixed-model ANOVAs showed that for parents, each label design performed comparably; however, for children, small but significant differences were seen in the effectiveness of different label designs, with the teaspoons of sugar label, text-based warning, and tooth decay pictorial found to be more impactful in promoting healthier drink choices than the Health Star Rating. Conclusions: These findings can inform public health advocacy efforts to improve food labelling and could be incorporated into educational resources to help children understand the nutritional profiles of different sugary drinks. Background/Objective: With a prevalence linked to modern lifestyle, erosive tooth wear (ETW) is a growing clinical problem among children and adolescents. The aim of this cross-sectional study was to record the awareness and knowledge of ETW among Greek dentists and to explore their preferred treatment decisions. Methods: A case-based digital questionnaire was distributed to a stratified sample of dentists practising in Athens (n = 218). We collected data regarding clinical scoring, possible aetiological factors, and clinical management of ETW and used descriptive statistics, chi-square tests, and odds ratio calculations to process the outcome. Results: The response rate was 92%. The majority (71%) recorded ETW among their patients, but only 5% used an established and validated scoring system. Almost 1/3 registered only the location of the lesions. Over 70% disclosed the possible causes of ETW, with frequent consumption of fizzy soft drinks (67%) and acidic foods (56%) being the most common. Most respondents managed the ETW patients in their own clinic, while 23% referred them to another dentist or a university clinic. The respondents focused on secondary prevention (dietary advice, oral hygiene, and fluoride exposure) and preferred less invasive options for anterior teeth, with restorative care restricted to the lower molars. Conclusions: The majority of the dentists participating in this survey registered ETW and its possible causes and seem to have adopted a preventive and minimally invasive approach for the management in children and adolescents. For the case documentation, a minority took advantage of standardised scoring systems for lesions and dietary habits, and very few performed salivary diagnostics. The findings underscore the need of continuing education to offer updates on the most current guidelines and focusing on patients’ needs and expectations. Full article

Alcohol Consumption and Beverage Preferences in a Predominantly Female, Highly Educated Spanish Population: A Sociodemographic and Network Analysis

Understanding alcohol consumption patterns is critical for developing effective public health strategies, particularly in countries like Spain where cultural and regional drinking norms vary widely. This study examined sociodemographic factors affecting alcohol consumption patterns across Spain, employing a cross-sectional design. A total of 22,181 Spanish adults over 18 years of age were recruited between August 2020 and November 2021, using non-probabilistic snowball sampling through social media networks. Data were gathered via a validated questionnaire (NutSo-HH Scale) encompassing sociodemographic details, health indicators, and lifestyle habits, with a focus on alcohol use. The sample included n = 22,181 participants, 80.8% women, with a mean age of 34.9 years. Most respondents (48.2%) reported no or very occasional alcohol consumption, 33% drank 2–4 times per month, 13.8% consumed alcohol 2–3 times weekly, and 5% drank daily or nearly daily. Alcohol consumption was significantly higher among men (72.1% consuming fermented beverages) and individuals with higher income and education (p < 0.001 for all variables). Regional differences were also notable, with the highest percentage of regular drinkers in Asturias (80.9%) and the Valencian Community (73.3%) as revealed by a Kruskal–Wallis test (p < 0.001). Fermented beverages were the most popular, with 68.4% of alcohol consumers preferring these, compared to distilled beverages (18.8%), fortified beverages (15.1%), and liqueurs (3.3%). A Gaussian graphical model was used to explore conditional relationships between alcohol consumption and other beverages in the Spanish population. Alcohol showed strong positive associations with fermented and distilled beverages, and with the habit of getting drunk. Weaker negative correlations were observed with water and soft drinks, suggesting contrasting consumption patterns. These findings underscore significant sociodemographic and regional variations in alcohol consumption patterns across Spain, suggesting the need for public health interventions tailored to different population segments. Here, we report a review based on three databases (PubMed, Scopus, and Web of Science) from 2014 to 2024 using medical subject heading (MeSH) terms “electrochemical polymerisation” OR “electropolymerisation” crossed with the terms “molecularly imprinted polymer” AND “vitamin A” OR “vitamin D” OR “vitamin E” OR “vitamin K” OR “fat soluble vitamin” OR “vitamin B” OR “vitamin C” OR “water soluble vitamin”. The resulting 12 articles covered the detection of vitamins in ascorbic acid, riboflavin, cholecalciferol, calcifediol, and menadione using monomers of catechol (CAT), 3,4-ethylenedioxythiophene (EDOT), o-aminophenol (oAP), o-phenylenediamine (oPD), pyrrole, p-aminophenol (pAP), p-phenylenediamine (pPD), or resorcinol (RES), using common bare electrodes including graphite rod electrode (GRE), glassy carbon electrode (GCE), gold electrode (GE), and screen-printed carbon electrode (SPCE). The most common electrochemical detections were differential pulse voltammetry (DPV) and linear sweep voltammetry (LSV). The imprinting factor (IF) of the eMIP-modified electrodes were from 1.6 to 21.0, whereas the cross-reactivity was from 0.0% to 29.9%. Several types of food and biological samples were tested, such as supplement tablets, poultry and pharmaceutical drugs, soft drinks, beverages, milk, infant formula, human and calf serum, and human plasma. However, more discoveries and development of detection methods needs to be performed, especially for the vitamins that have not been studied yet. This will allow the improvement in the application of eMIPs on portable-based detection and POCT devices. Full article

Excessive sugar consumption has been reported to be associated with various health issues such as obesity, diabetes, cardiovascular diseases, and dental problems. In the UK, effective strategies have been implemented to reduce sugar intake, including the Change4Life Sugar Smart campaign, product reformulation, traffic light labelling, portion control, and the Soft Drinks Industry Levy (SDIL). This review of empirical studies (n = 11) shows that product reformulation, especially in beverages and packaged foods, is effective, as consumers can prefer reduced-sugar alternatives when clearly labelled. The UK traffic light labelling scheme and portion control were also reported to help consumers make informed, healthier food choices. The SDIL, introduced in 2018, was also found to significantly lower sugary beverage consumption. While progress is evident, further nutrition education, public awareness, particularly for people with low socioeconomic status, and more comprehensive policies for long-term positive dietary behavioural shift are essential to limit diseases and conditions associated with high sugar consumption. Future research must evaluate the combined effects of these interventions and examine their long-term effectiveness across diverse population groups. Full article

This study examines the relationship between the 1141 most consumed foods in Brazil and their individual and combined health and environmental impacts. Foods are analyzed across different food system clusters, based on the health burden (DALYs) in minutes of healthy life using the Health Nutritional Index (HENI), greenhouse gas emissions, and water use. The most consumed foods were in natura products, such as rice, beans and meat, and a few ultra-processed products such as biscuits and soft drinks. Our results revealed an average HENI of −5.89 min, with values varying from −39.69 min of healthy life (stuffed cookies) to 17.22 min (freshwater fish). Animal-derived products, particularly red meat, had the highest environmental costs, contributing significantly to greenhouse gas emissions and water use. In contrast, plant-based foods like beans and fruits had better HENI scores and lower environmental impacts. We also found that greenhouse gas emissions reached up to 21.3 kg CO2eq (beef dish), and water use peaked at 306.1 L (mozzarella pizza). Our findings provide valuable insights into the real-world consequences of individual and institutional food choices, demonstrating their measurable impacts on health and the environment. By moving beyond theoretical assumptions, this evidence strengthens the case for integrating sustainability into public food policies, including dietary guidelines that consider regional specificities and environmental concerns alongside nutritional recommendations. In the current study, the Prussian blue analog decorated with zinc oxide (PBA@ZnO) was produced using a simple chemical co-precipitation method. The nanohybrid was examined using XRD, EDX, SEM, and TEM techniques, where it exhibited a polycrystalline structure with highly intense broadening peaks. The surface morphology was observed as thin nanosheets decorated with tiny spheres. Following excitation at 360 nm, the fluorescence spectra of PBA@ZnO showed fluorescence emission at 455 nm. The developed PBA@ZnO was used to qualitatively and quantitatively assess sunset yellow (SY), where its native fluorescence was selectively quenched as SY concentrations increased. For the first time, PBA@ZnO was used as a turn-off nano-sensor for the spectrofluorimetric measurement of SY. The method’s markable sensitivity was demonstrated within an SY linearity range of 50–500 ng/mL, where the limit of detection was calculated as 9.77 ng/mL. Real sample analysis in the food industry, including samples from real food, soft drinks, and sun cream, was made possible by the detection of tiny amounts of SY. Analytical Greenness (AGREE), AGREEprep, and the complementing Green Analytical Procedure Index (Complex MoGAPI) were used to illustrate the new approach’s exceptional eco-friendliness and greenness. The RGB 12 algorithm worked to demonstrate that the suggested approach is less costly, more environmentally friendly, more sustainable, analytically sound, and whiter than the ones that were previously published. In accordance with ICH principles, the suggested method was validated. This approach offers a promising way to rapidly and accurately identify and measure SY in the food industry, helping to guarantee food safety and maintain the health of customers. Full article

How Screen Time Affects Greek Schoolchildren’s Eating Habits and Functional Food Consumption?—A Cross-Sectional Study

Background: Television (TV), video games, PC and devices such as tablets and smart phones have become part of everyday life at an ever-younger age. Increased screen time correlates with unhealthy eating habits among children. Methods: 374 children aged 9–12 years and their parents (n = 159), from 3 schools in Lemnos and 5 schools in Thessaloniki, Greece, took part in this cross-sectional study. The children completed the KIDMED score and a questionnaire about their physical activity, time spent watching TV, PC and playing electronic games, the frequency of cooking or shopping with their parents, the frequency of eating fast food, soft drinks and Functional Foods (FFs). Statistical analysis was performed with SPSS-29.0, using One Way ANOVA and Pearson chi-square. Results: As the hours of TV viewing increased, so did the percentage of children who consumed soft drinks (p = 0.03). A statistically significant association detected between television (p = 0.024), video games (p = 0.028), all screen categories (p = 0.011) and fast-food consumption. Increased screen time is associated with a higher weekly consumption of fast food (p = 0.011). The more hours children spent in front of screens, the less adherence they had to the Mediterranean Diet (p = 0.001) and less natural FFs consumption (p = 0.001). Conclusions: The results suggest that screen time seems to affect children’s eating behaviors. The study concluded that the longer the screen time, the unhealthier the dietary habits of schoolchildren become. Future research should focus on reducing screen time, as a means of improving dietary patterns and potentially reducing childhood obesity. Full article
