Background: Thallium is a metal that is ubiquitous in our natural environment. Despite its potential for high toxicity, thallium is understudied and not regulated in food. The California Department of Public Health was alerted to a household cluster of elevated urine thallium levels noted among a mother (peak 5.6 µg/g creatinine; adult reference: ≤0.4 µg/g creatinine) and her three young children (peak 10.5 µg/g creatinine; child reference: ≤0.8 µg/g creatinine). Objectives: This case report identifies questions raised after a public health investigation linked a household’s thallium exposure to a commercially available food product. We provide an overview of the public health investigation. We then explore concerns, such as gaps in toxicological data and limited surveillance of thallium in the food supply, which make management of individual and population exposure risks challenging. Methods: We highlight findings from a cross-agency investigation, including a household exposure survey, sampling of possible environmental and dietary exposures (ICP-MS analysis measured thallium in kale chips at 1.98 mg/kg and 2.15 mg/kg), and monitoring of symptoms and urine thallium levels after the source was removed. We use regulatory and research findings to describe the challenges and opportunities in characterizing the scale of thallium in our food supply and effects of dietary exposures on health. Discussion: Thallium can bioaccumulate in our food system, particularly in brassica vegetables like kale. Thallium concentration in foods can also be affected by manufacturing processes, such as dehydration. We have limited surveillance data nationally regarding this metal in our food supply. Dietary reviews internationally show increased thallium intake in toddlers. Limited information is available about low-dose or chronic exposures, particularly among children, although emerging evidence shows that there might be risks associated at lower levels than previously thought. Improved toxicological studies are needed to guide reference doses and food safety standards. Promising action towards enhanced monitoring of thallium is being pursued by food safety agencies internationally, and research is underway to deepen our understanding of thallium toxicity. Urban Agriculture for Post-Disaster Food Security: Quantifying the Contributions of Community Gardens

Wellington, New Zealand, is highly vulnerable to disaster-induced food security crises due to its geography and geological characteristics, which can disrupt transportation and isolate the city following disasters. Urban agriculture (UA) has been proposed as a potential alternative food source for post-disaster scenarios. This study examined the potential of urban agriculture for enhancing post-disaster food security by calculating vegetable self-sufficiency rates. Specifically, it evaluated the capacity of current Wellington’s community gardens to meet post-disaster vegetable demand in terms of both weight and nutrient content. Data collection employed mixed methods with questionnaires, on-site observations and mapping, and collecting high-resolution aerial imagery. Garden yields were estimated using self-reported data supported by literature benchmarks, while cultivated areas were quantified through on-site mapping and aerial imagery analysis. Six post-disaster food demand scenarios were used based on different target populations to develop an understanding of the range of potential produce yields. Weight-based results show that community gardens currently supply only 0.42% of the vegetable demand for residents living within a five-minute walk. This rate increased to 2.07% when specifically targeting only vulnerable populations, and up to 10.41% when focusing on gardeners’ own households. However, at the city-wide level, the current capacity of community gardens to provide enough produce to feed people remained limited. Nutrient-based self-sufficiency was lower than weight-based results; however, nutrient intake is particularly critical for vulnerable populations after disasters, underscoring the greater challenge of ensuring adequate nutrition through current urban food production. Beyond self-sufficiency, this study also addressed the role of UA in promoting food diversity and acceptability, as well as its social and psychological benefits based on the questionnaires and on-site observations. The findings indicate that community gardens contribute meaningfully to post-disaster food security for gardeners and nearby residents, particularly for vulnerable groups with elevated nutritional needs. Despite the current limited capacity of community gardens to provide enough produce to feed residents, findings suggest that Wellington could enhance post-disaster food self-reliance by diversifying UA types and optimizing land-use to increase food production during and after a disaster. Realizing this potential will require strategic interventions, including supportive policies, a conducive social environment, and diversification—such as the including private yards—all aimed at improving food access, availability, and nutritional quality during crises. The primary limitation of this study is the lack of comprehensive data on urban agriculture in Wellington and the wider New Zealand context. Addressing this data gap should be a key focus for future research to enable more robust assessments and evidence-based planning. Full article

This study presents a computational analysis of industry-specific advertising message strategies through the theoretical lens of the FCB (Foote, Cone & Belding) grid framework. Leveraging the AiSAC (AI Analysis System for Ad Creation) system developed by the Korea Broadcast Advertising Corporation (KOBACO), we analyzed 27,000 Korean advertisements across five major industries using advanced machine learning techniques. Through Latent Dirichlet Allocation topic modeling with a coherence score of 0.78, we identified five distinct message strategies: emotional appeal, product features, visual techniques, setting and objects, and entertainment and promotion. Our computational analysis revealed that each industry exhibits a unique “message strategy fingerprint” that significantly discriminates between categories, with discriminant analysis achieving 62.7% classification accuracy. Time-series analysis using recurrent neural networks demonstrated a significant evolution in strategy preferences, with emotional appeal increasing by 44.3% over the study period (2015–2024). By mapping these empirical findings onto the FCB grid, the present study validated that industry positioning within the grid’s quadrants aligns with theoretical expectations: high-involvement/think (IT and Telecom), high-involvement/feel (Public Institutions), low-involvement/think (Food and Household Goods), and low-involvement/feel (Services). This study contributes to media science by demonstrating how computational methods can empirically validate the established theoretical frameworks in advertising, providing a data-driven approach to understanding message strategy patterns across industries. In 2023, the USDA reported that 17.9% of U.S. households with children were food insecure, meaning they had limited or uncertain access to adequate food. However, there is evidence that far more children experience food insecurity than is currently being reported, and the effects of that insecurity on child health and development are broad and far-reaching. Childcare and early childhood education centers are particularly well-positioned to make a difference yet are often not discussed in the scientific literature. Childcare arrangements provide meals and snacks to the children they serve, buffer the effects of food insecurity by supporting children’s cognitive and social–emotional development, and provide an important point of intervention for food-insecure families. In this report, we unpack the definition of food insecurity and who is considered food insecure, review how food insecurity impacts child health and development across physical, social–emotional, and cognitive domains, and explore the evidence behind childcare’s role in addressing childhood food insecurity. Additionally, we make recommendations for policy and practice, advocating for a multi-stakeholder approach, with a special focus on how childcare providers can change to best combat children’s food insecurity. In order to fulfil SDG 13—taking urgent action to combat climate change and its impact—SDG 2—ending hunger and poverty—and the African Union CAADP Strategy and Action Plan: 2026–2035, which’s goal is ending hunger and intensifying sustainable food production, agro-industrialisation, and trade, the resilience of commercial livestock farmers to agricultural droughts needs to be enhanced. Agricultural drought has affected the economies of many sub-Saharan African countries, including South Africa, and still poses a challenge to commercial livestock farming. This study identifies and determines the factors affecting commercial livestock farmers’ level of resilience to agricultural drought. Primary data from 123 commercial livestock farmers was used in a principal component analysis to estimate the agricultural drought resilience index as an outcome variable, and the probit model was used to determine the factors influencing the resilience of commercial livestock farmers in the Northern Cape Province of South Africa. This study provides a valuable contribution towards resilience-building strategies that are critical for sustaining commercial livestock farming in arid regions by developing a formula for calculating the Agricultural Drought Resilience Index for commercial livestock farmers, significantly contributing to the pool of knowledge. The results showed that 67% of commercial livestock farming households were not resilient to agricultural drought, while 33% were resilient. Reliance on sustainable natural water resources, participation in social networks, education, relative support, increasing livestock numbers, and income stability influence the resilience of commercial livestock farmers. It underscores the importance of multidimensional policy interventions to enhance farmer drought resilience through education and livelihood diversification. Full article

Background/Objectives: Ancient grains are increasingly recognized for their nutritional value, environmental sustainability, and connection to traditional agriculture. This study examines Italian consumers’ awareness, purchasing habits, and willingness to pay (WTP) for ancient grain pasta, focusing on the influence of product origin, price, and flour type on preferences. Methods: An online survey was conducted with 3020 Italian household grocery shoppers. Descriptive statistics assessed awareness and purchasing behavior, while conjoint analysis (CA) evaluated the relative importance of key product attributes (origin, price, and flour type) in pasta choices. The sample was segmented based on consumer knowledge of ancient grains. Results: A significant portion of respondents reported familiarity with ancient grains, perceiving them as “less refined” and “more digestible”; pasta emerged as the most purchased product. CA results indicated product origin as the most influential factor, followed by price, with flour type having comparatively lower influence. Notably, consumers more familiar with ancient grains showed a slight preference for ancient flour types and were less sensitive to price. Conclusions: While origin and price are primary drivers for pasta choices, knowledgeable consumers show greater valuation for flour type and accept higher prices. These findings provide strategic insights for stakeholders seeking to promote traditional, sustainable agri-food products through targeted marketing and transparent value communication. Full article

COVID-19 has caused global problems with complex ramifications. Vulnerable households worry about disruptions to food security. Mobility restrictions, decreased salaries, and supply chain disruptions have increased food insecurity. This study examined the best food security model and its determinants. The primary research data were collected from 257 respondents via cluster random sampling. Binary logistic regression, using R-Studio, was employed to analyze the data. The study showed that the Minimal Model (MM) was optimal in explaining food security status, with three predictors: the available food stock (AFS), education of the household head (EHH), and household income (HIc). This aligned with studies showing that food purchase ability depends on income and education. Male household heads demonstrated better food security than females, while women’s education influenced consumption through improved nutritional knowledge. Higher income provides more alternatives for meeting needs, while decreased income limits options. Food reserve storage influenced household food security during the pandemic. The Minimal Model effectively influenced food security through the AFS, EHH, and HIc. The findings underline the importance of available food stock, household head education, and household income in developing approaches to assist food-insecure households. The research makes a significant contribution to ensuring food availability and promoting sustainable development post-pandemic. Full article

Digital Literacy and Food Consumption Structure: Evidence from Rural China

Background/Objectives: Healthy diets and proper nutrition are fundamental for human survival. With economic development and rising incomes, the food consumption structure of rural residents in China has noticeably changed. However, substantial disparities still exist in the quality of food consumption between urban and rural areas, and the dietary structure of rural populations remains imbalanced. Methods: This study uses 2020 China Rural Revitalization Survey (CRRS) samples of rural residents for analysis since it asked residents questions about their digital literacy and food consumption. A total of 2827 valid rural resident samples were finally obtained, and the participants had a mean age of 54.844 years. This study employs the ordinary least squares (OLS) model and the two-stage least squares (2SLS) method to examine the impact of digital literacy on the food consumption structure of rural households and its underlying mechanisms. Results: Based on the regression analyses, digital literacy significantly improves the food consumption structure of rural residents (p < 0.05). Heterogeneity analysis shows that at the regional level, digital literacy has a stronger impact on the food consumption structure of rural residents in southern China (β = −153.255, p < 0.05); at the individual level, its impact is more pronounced among rural residents with lower educational attainment (β = −427.506, p < 0.01) and among middle-aged and elderly populations (β = −212.705, p < 0.05). The mechanism analysis reveals that digital literacy can enhance the food consumption structure of rural residents by increasing their awareness of dietary health and food safety. Conclusions: These findings highlight the necessity of integrating the optimization of food consumption structures with enhancements in digital literacy into policy-making and provides valuable insights for developing policies aimed at improving the nutritional health of rural residents. Farm household pluriactivity has become increasingly prevalent in China; however, its influence on crop structure remains insufficiently explored. This study examines the impact of farm household pluriactivity on crop structure in China, focusing on factor input mechanisms. Based on survey data from 473 farm households in Sichuan Province, this study employs ordinary least squares (OLS), two-stage least squares (2SLS), and mediation analyses to systematically assess the impact of pluriactivity on crop structure through factor input mechanisms. The analysis reveals three key findings. First, rather than reducing the grain planting area, an increase in part-time farming is associated with a significant rise in the proportion of grain cultivation. Second, factor inputs partially mediate this relationship: while pluriactivity tends to reduce staple crop cultivation through mechanisms such as cultivated land transfer-out, land abandonment, and increased non-agricultural labor input, it simultaneously promotes staple crop expansion via enhanced agricultural technical services. Third, heterogeneity tests indicate that the positive effect of pluriactivity on staple crop cultivation is especially pronounced among households in hilly areas and those that have adopted agricultural insurance. These findings provide valuable policy insights for fostering sustainable agricultural transitions and enhancing food security in developing regions. Full article

Background/Objectives: Anemia and undernutrition are severe public health concerns in Ethiopia. These are the two most common nutritional disorders in pregnant women and frequently coexist. However, to our knowledge, there is little evidence of the coexistence of anemia and undernutrition among pregnant women. Therefore, this study aimed to examine the prevalence of coexisting anemia and undernutrition (CAU) and associated factors among pregnant women. Methods: A community-based cross-sectional study was conducted from 1 to 25 June 2024, on 515 pregnant women in the Hawela Lida district of Sidama, Ethiopia. We utilized a multi-stage sampling method to choose eligible study participants. A pre-tested and structured questionnaire was used to collect data via the online Open Data Kit mobile tool. We controlled the effect of confounders and clustering by using a multi-level mixed-effect modified Poisson regression analysis model. Results: The prevalence of CAU among pregnant women was 25.4% (95% CI: 21.9–28.9). The prevalence of CAU was associated with household food insecurity (adjusted prevalence ratio [APR]: 2.17; 95% CI: 1.43–3.28), training on model family (APR: 0.66; 95% CI: 0.45–0.96), inadequate dietary diversity (APR: 1.51; 95% CI: 1.18–1.95), and having poor knowledge of nutrition (APR: 1.55; 95% CI: 1.06–2.26) at individual levels. Low community-level women’s autonomy (APR: 6.19; 95% CI: 3.42–11.22) and community-level road accessibility (APR: 0.65; 95% CI: 0.43–0.98) were the identified determinants of CAU at the community level. Conclusions: One in four pregnant women had CAU in the study area. Household food insecurity, inadequate dietary diversity, and poor nutrition knowledge were associated with an increased likelihood of CAU, while participation in model family training and improved road accessibility were associated with reduced CAU. We have also indicated that low community-level women’s autonomy significantly increased the risk of CAU. Therefore, inter-sectorial collaboration should be required to comprehensively address CAU’s determinants at different levels. Additionally, any CAU prevention and intervention programs should provide model family training explicitly targeting women with poor nutritional knowledge and low autonomy in healthcare decision-making. Municipal solid waste management (MSWM) on islands involves several challenges relating to politics, society, the environment, and technology. This paper addresses the potential for producing biogas and biomethane from food waste on Tenerife, including waste from households, with the aim of reducing landfill and primary fossil energy consumption. The study also introduces the European and Regional policy framework and requirements. Effective microorganisms have been studied as proposals to stabilise the food waste from households, avoiding odours and decomposition during storage. The trials show positive results in terms of the preservation of organic matter until the food waste is transported to the biogas plant. In addition, a new concept for a small biogas plant made of textile materials, which are suited to the municipalities of Tenerife, is presented to provide an easy-to-build solution, with ranges of up to 75 kW in electrical power. With a theoretical potential of 299,012 tons of food waste being available per year (based on 2022), preliminary laboratory experiments with real samples of the island showed a theoretical potential of 28.97 × 106 Nm3 for biogas and 264,612 tons for digestate, which can be used as fertilisers, with potential savings of 18.15 × 106 L of gasoline and 42.66 × 103 equivalent CO2 tons. We conducted a survey of n = 1049 lactating or recently lactating individuals from a US nationally representative population to explore breastmilk storage practices among this group. The data revealed that 83% of respondents store breastmilk in their homes, with 68% using freezers to do so for >1 month. The lowest available temperature in most household freezers is −20 °C, a temperature that is inadequate to maintain human milk’s emulsified structure, leading to separation, degradation of fats, loss of key vitamins, and changes in palatability. We developed a first-of-its-kind high-throughput screening platform to identify food-derived compounds and combinations of compounds that, when added to human breastmilk, preserve fat content, retain antioxidant capacity, and reduce production of rancid-associated free fatty acids during extended freezer storage. Our screening identified pectin (0.5% w/v) and ascorbic acid (100 μg/mL) as optimal preservation agents. Compared to untreated controls, this formulation reduced glycerol production by approximately 60% and maintained antioxidant capacity after 6 months of storage at −20 °C. Lysozyme and protease activity were maintained at >75% of the levels in fresh breastmilk. This formulation represents a lead for the development of safe and affordable frozen breastmilk shelf-life extenders for at-home use to increase the longevity of stored breastmilk. Full article

Background/Objectives: Safety-net health centers are increasingly screening for food insecurity and providing patients with referrals to public assistance programs—e.g., the Supplemental Nutrition Assistance Program (SNAP). However, not all individuals actively participate in or are eligible for these programs. Onsite distributions of free produce at health center sites represent a promising complementary option for addressing this need. This study examines free produce events at these sites and their associations with attendees’ food and vegetable consumption, household food insecurity, and SNAP participation (study outcomes). Methods: In 2024, an intercept survey was conducted with 497 adults attending produce events at 16 safety-net health center sites in Los Angeles County, California, USA. Descriptive analyses profiled these food events, gathering information on attendee characteristics. Multivariable regressions examined associations between event attendance and study outcomes. Results: Over 80% of attendees lived in food-insecure households. Among those who were patients of the event site, 68% and 28%, respectively, indicated they received information about Medicaid and SNAP from the clinic staff. Compared to first-time attendees, those who attended produce events frequently consumed, on average, one additional serving of fruit and vegetables a day (p < 0.000). Conclusions: Offering free produce events at health center sites, where many attendees receive usual care, is a promising strategy for increasing healthy food access among safety-net populations. This underutilized approach is a viable intervention for improving access to healthy food, especially in circumstances where patients are not eligible for public assistance or nutrition incentive and/or food pharmacy programs are not readily available. This study examines consumers’ ethical and responsible food purchasing decisions in Istanbul Province, Türkiye. These decisions are crucial for sustainable food consumption and policies. The data for this study were collected through a survey of 616 individuals who are influential in food consumption decisions within their households in Istanbul. Factor analysis was conducted to identify the factors influencing food purchasing decisions among consumers. After conducting factor analysis on food purchasing decisions, eight subgroups were identified: environmentalism, economy, conservatism, diligence, innovativeness, informativeness, caring, and transformativeness. After the factor analyses, the differences and similarities in the factors considered in food purchasing decisions were analyzed. According to the results of the analyses, the demographic characteristics and socio-economic status (SES) group were found to be different. In this study, logit analysis was also employed to identify the profiles of conscious consumers in their food purchasing decisions. It was determined that 51.00% of consumers were conscious of their food purchasing decisions, and women were more conscious of these decisions than men, with women having higher age and educational status than men. Consumers’ food purchasing decisions were analyzed, and recommendations are presented for decision-makers regarding sustainable food policy, with the aim of providing information and raising awareness. Limited access to education in rural areas of Senegal is a structural barrier to human development and equal opportunities. The Bicycles for Education project, promoted by the Utopia Foundation—Bicycles Without Borders (BSF), aims to improve the educational participation of young people aged 12 to 21 by providing bicycles to facilitate their travel to school. In this study, the GRITS research group from the University of Barcelona externally evaluates the impact of the project on improving access to education, reducing gender inequalities, and the associated socioeconomic as well as community benefits. A qualitative approach based on individual interviews (n = 23), focus groups (n = 6) and group interviews (n = 8) was used, with a total of 80 participants, including students, families, teachers, project coordinators, and institutional managers. The analysis was carried out through thematic coding and content analysis, identifying four main axes: educational impact, gender equity, economic effects, and community transformation. The results show that the provision of bicycles throughout the school year led to increased school attendance and punctuality, improvements in academic performance, a reduction in social inequalities, gender inequalities in access to education, and a decrease in household costs associated with transport and food. In addition, there has been a cultural transformation in the perception of cycling as a viable means of mobility and a change in those communities where the project has been running for more than a decade.
