Special Issue Information

Dear Colleagues,

Sustainability in food processing by the food industry is a necessity that needs to be addressed and tackled from multiple perspectives. The application of food safety control and detection integration procedures in combination with the analysis of the impacts of environmental, social and economic factors will improve sustainable development in food processing. The integrated application of safety control and quality detection through the use of traceability technologies with data digitisation, automation and the promotion of green technologies will reduce deviations in food processing. This will lead to a reduction in food loss and an improvement in the efficient use of the resources needed to ensure safe, nutritious food products that meet high ethical and environmental standards. The integration of safety control and quality detection processes must be evaluated throughout the entire food processing chain, as long as they are obtained through technological procedures. The aim of this Special Issue is to address the processes that can be applied to improve food safety and quality in order to promote sustainability in the food industry through processing technologies and development based on improving the sustainability of the food chain.

For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Sustainability is an international peer-reviewed open access semimonthly journal published by MDPI.

Please visit the Instructions for Authors page before submitting a manuscript. The Article Processing Charge (APC) for publication in this open access journal is 2400 CHF (Swiss Francs). Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
