Special Issue Information

Dear Colleagues,

This Special Issue, titled “Sustainable Food Quality and Food Processing”, focuses on the integration of sustainability principles with the preservation and enhancement of food quality, understood in terms of nutritional composition, functional attributes, sensory characteristics, and technological stability. In this context, this Special Issue highlights innovative processing methods, efficient resource utilization, reduction of environmental impact, and valorization of by-products within circular food systems. Furthermore, it explores how sustainable approaches influence multiple dimensions of food quality while contributing to the advancement of durable and responsible agri-food chains.

Objectives of this Special Issue are as follows:

  1. To examine innovative and sustainable processing methods that improve food quality while reducing environmental impact.
  2. To evaluate strategies for efficient resource utilization and the valorization of by-products within circular food systems.
  3. To investigate the effects of sustainable approaches on nutritional, functional, sensory, and technological attributes of food.
  4. To provide interdisciplinary insights that integrate scientific, technological, and socio-economic perspectives in sustainable food systems.
  5. To promote knowledge exchange and highlight practical solutions supporting the transition towards durable and responsible agri-food chains.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Sustainability is an international peer-reviewed open access semimonthly journal published by MDPI.
