Special Issue Information

Dear Colleagues,

I can announce a Special Issue of Sensors entitled “NIR Sensing for Food Analysis and Process Control”.

In recent years, Near-Infrared Spectroscopy (NIR) has emerged as a powerful, non-destructive analytical technique within the food sector. This Special Issue will gather the latest advances in applying NIR for both comprehensive food analysis and dynamic process control. NIR technology offers significant advantages compared to traditional analytical methods including real-time and in situ measurements, making it appropriate for monitoring complex food matrices and ensuring quality and safety across the supply chain.

We invite innovative submissions focusing on the latest developments in and applications of NIR sensing, in combination with chemometric tools and machine learning, to enhance model robustness and predictive accuracy.

Topics of interest include, but are not limited to, on-line and at-line monitoring of fermentation, drying, and mixing processes; detection and quantification of quality parameters (e.g., moisture, protein, fat, sugar, volatile compounds); rapid screening for contaminants and adulterants; and the development of miniaturized, portable NIR devices for field and consumer applications. This Special Issue will highlight innovative research that translates fundamental NIR sensing principles into practical, scalable solutions for modern food production and quality assurance.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Sensors is an international peer-reviewed open access semimonthly journal published by MDPI.

Please visit the Instructions for Authors page before submitting a manuscript. The Article Processing Charge (APC) for publication in this open access journal is 2600 CHF (Swiss Francs). Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
