Special Issue Information

The analysis of food requires continuous development of methodologies that allow accurate, sensitive, effective, accessible, ecological and low-cost inquiries of food constituents in order to meet the requirements of high quality and safety.

The main analytical techniques include:

  • Biological techniques (immunological techniques, polymerase chain reaction).
  • Electrochemical techniques (biosensors).
  • Sample preparation (automatic thermal desorption, flow injection analysis, headspace, microwave-assisted extraction, solid-phase extraction, supercritical fluid extraction, ultrasound-assisted extraction, etc.).
  • Separation techniques (capillary electrophoresis, gas chromatography, high-performance liquid chromatography, supercritical fluid chromatography).
  • Spectroscopic techniques (atomic spectroscopy, infrared, mass spectrometry, nuclear magnetic resonance).
  • Combined techniques.

This Special Issue will focus on the most recent analytical methods, instrumentation and technologies applied to identify and quantify compounds of interest for food analysis, such as carbohydrates, proteins, lipids, amino acids, chiral compounds, antioxidants, vitamins, additives, pesticides and toxins. The techniques used for physicochemical composition and the quality features of fresh and processed food will also be considered.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
