Special Issue Information

Dear Colleague,

Marine organisms account for more than half of the total global biodiversity. Marine bioactive products extracted or prepared from these species are important sources of novel biologically active compounds. In recent decades, various marine products (seafood, protein, peptide, fish oil, etc.) have been reported to exhibit high potential nutritional and medicinal values, such as antioxidant, antibacterial, anticancer, and antidiabetic effects, among others, and have therefore also received increasing attention. However, the quality, safety, and efficacy of these bioproducts may be affected by the raw materials, the process procedures, the packaging mode, and the storage/transportation environment. Today, quality improvement of these bioproducts has received worldwide attention in research and industry. Firstly, effective analyzing methods should be developed to determine the quality of marine products. Secondly, the distribution, generation, migration, and risk assessment of hazardous substances and the forming mechanisms of color, texture, sensory, and activity should be clarified. Lastly, innovative approaches and packaging technologies are urgent for the quality control of marine products.

In this Special Issue, we provide a platform for scientists to present their latest progress in the form of original research papers and reviews, covering the fields of biological activities, underlying molecular mechanisms, quality, safety, and efficacy of marine products, as well as their potential applications as functional food or drug candidates.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
