Special Issue Information

Dear Colleagues,

Antioxidants play a vital role in living systems, foods, and consumer products. The addition of antioxidants to foods and consumer products can prevent or delay lipid oxidation and the subsequent quality deterioration of products containing unsaturated lipids. They also play an important role in preventing the occurrence of chronic diseases such as cancer by preventing the damaging effects of free radicals and reducing oxidative stress in the human body. The marine environment has huge potential for the discovery and production of antioxidants. Marine organisms produce and accumulate several compounds that help them to survive in the harsh marine environment. Marine organisms produce compounds such as polyphenols, carotenoid pigments, polysaccharides, and peptides with antioxidant properties. The extraction, isolation, characterization, and application of marine-origin antioxidants is an interesting research topic in recent years. In particular, extraction with the help of new emerging technologies followed by a state-of-the-art characterization of the antioxidants is gaining increasing attention. This Special Issue welcomes new studies regarding the extraction, characterization, and application of marine antioxidants. The Special Issue also welcomes review papers on recent developments in marine antioxidants.

Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Marine Drugs is an international peer-reviewed open access monthly journal published by MDPI.
