Dear Colleagues,
The COVID-19 pandemic exposed and exacerbated systemic vulnerabilities in global food systems, food safety protocols, and public health infrastructure. In addition to its direct health impacts, the pandemic disrupted supply chains, altered food consumption behaviors, and intensified food insecurity on a global scale. These challenges continue to influence the intersection of food safety and human health in the post-pandemic context.
We are pleased to invite contributions to this Special Issue, which will showcase high-quality interdisciplinary research addressing emerging risks, challenges, and strategic responses related to food safety, nutrition, and human health in the aftermath of the COVID-19 crisis. We welcome original research articles, as well as review articles (including narrative, scoping, and systematic reviews), from across a wide range of disciplines, including public health, nutrition, food science, epidemiology, sociology, and policy studies.
Topics of interest for this Special Issue include, but are not limited to, the following:
- Post-pandemic challenges related to health impacts or outcomes of food safety and hygiene practices;
- The surveillance and management of foodborne illnesses during and after COVID-19;
- The impact of the pandemic on dietary patterns, nutrition, and metabolic health;
- Food insecurity and its physical and mental health consequences;
- Innovations in food monitoring, digital traceability, and supply chain resilience;
- Policy interventions to strengthen food safety within public health systems;
- Health inequalities related to disrupted access to safe and nutritious food;
- Risk communication strategies’ impact on healthcare or health outcomes during food-related health crises.

Manuscript Submission Information

All manuscripts are thoroughly refereed through a single-blind peer-review process. Healthcare is an international peer-reviewed open access semimonthly journal published by MDPI.
