Dear Colleagues,
The growing global demand for safer, healthier, and more sustainable food has sparked a remarkable transformation in food preservation technologies. At the heart of this change are edible films and coatings—innovative, environmentally friendly alternatives to conventional plastic packaging. These materials not only help extend the shelf life of perishable foods by regulating moisture, gas exchange, and microbial activity, but also act as carriers of bioactive compounds, adding nutritional and functional benefits to food products.
This Special Issue, titled “Edible Films and Coatings in the Age of Artificial Intelligence: From Materials to Applications”, seeks to reflect the breadth of advances in this dynamic and rapidly evolving field. Our goal is to connect fundamental materials research with practical, real-world applications. We welcome contributions on new biopolymers, characterization methods, and encapsulation techniques, but we are especially interested in studies that integrate emerging technologies. In particular, we encourage submissions exploring the use of microfluidics for developing precision-engineered emulsions and delivery systems, computer vision for non-destructive quality assessment, and artificial intelligence (AI) or machine learning for optimizing formulations, predicting shelf life, and analyzing complex sensory data.
We warmly invite researchers to contribute original articles and comprehensive reviews to this Special Issue. Together, let us build a forward-looking collection that not only highlights recent scientific progress but also helps define the future of food technology.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Coatings is an international peer-reviewed open access monthly journal published by MDPI.
