Dear Colleagues,
Emulsions are key systems in a wide range of applications, including foods such as creams, dressings, beverages, and dairy products. Due to their multiple applications, the development of innovative emulsion systems, including particle-stabilized (Pickering) emulsions, double emulsions, high-internal-phase emulsions, and emulsions stabilized by gels. All in all, these types of emulsions can be utilized in any technology-driven market and their applications across a broad array of fields remain to be unraveled. The processing methods of the emulsions is a key area affecting their intensive and extensive physical properties, texture alteration, and encapsulation. In this Special Issue, we would like to invite you to submit manuscripts focusing on the latest advances of food emulsions, novel emulsification methods, and potential applications in foods. Both research articles and reviews will be considered.

All manuscripts are thoroughly refereed through a single-blind peer-review process.
