Food Toxicology and Food Safety
Special Issue Information
Dear Colleagues,
Food safety is a growing concern due to the potential toxicity of certain food ingredients, contaminants, and toxins formed during processing. While harmful substances may be present at low levels, chronic exposure or bioaccumulation can still pose significant health risks and investigating how these toxicants affect human health, expecially by influencing gene expression and epigenetic regulation, can help us understand their impact on metabolism and physiological functions. Such research offers insights into food poisoning mechanisms and can inform effective prevention and treatment strategies. Consequently, this Special Issue aims to explore the causes and mechanisms by which foodborne toxicants induce toxicity in organisms, particularly through gene expression and epigenetic changes and to characterize exposure scenarios. Advances in toxicogenomics and toxicoepigenetics and thorough exposure assessments may improve our ability to predict the risks posed by foodborne toxins and promise to enhance food safety control measures.

All manuscripts are thoroughly refereed through a single-blind peer-review process.
