Round 1

Reviewer 1 Report

The aim of this paper is to formulate a time-variant mathematical model that describes the growth of lactic acid bacteria in batch fermentation. The problem has been formulated based on the experimental data fromeight LAB strains. I have the following comments on this paper:

1- Abstract and Introduction are good. Please add about the relation between your study and symmetry.

2- It is not clear that you applied real data or simulated.

3- Can we forecast for more than 48 hours?

4- How x_0 in Eq. (1) can be found?

I propose a minor revision.

Reviewer 2 Report

The authors have worked on predictive models a tool to ensure food quality. They have formulated a time-variant mathematical model. This model can describe the growth of lactic acid bacteria (LAB) in batch fermentation. They have provided a third-degree polynomial function that successfully describes the growth dynamics of LAB including its death phase. Their idea seems new and from a technical point of view has been implemented very well which is worth publishing. However, the paper needs proofreading as there are several grammatical problems in the paper.  The abstract is well written, topics have meaning full insight, and useful for the future research as well as relevant. The writing of the paper is very good. After all this. The paper is accepted for publication after minor correction.
