Excess Commuting in Rural Minnesota: Ethnic and Industry Disparities

Research on commuting patterns has mainly focused on urban and metropolitan areas, and such studies are not typically applied to rural and small-town regions, where workers often face longer commutes due to limited job opportunities and inadequate public transportation. By using the Census Transportation Planning Package (CTPP) data, this research fills that gap by analyzing commuting behavior by ethnic group and industry in south-central Minnesota, which is a predominantly rural area of 13 counties in the United States. The results show that both white and minority groups in District 7 experienced an increase in excess commuting from 2006 to 2016, with the minority group in Nobles County showing a significantly higher rise. Analysis by industry reveals that excess commuting in the leisure and hospitality sector (including arts, entertainment, and food services) in Nobles County increased five-fold during this time, indicating a severe spatial mismatch between jobs and affordable housing. In contrast, manufacturing experienced a decline of 50%, possibly indicating better commuting efficiency or a loss of manufacturing jobs. These findings can help city and transportation planners conduct an in-depth analysis of rural-to-urban commuting patterns and develop potential solutions to improve rural transportation infrastructure and accessibility, such as promoting telecommuting and hybrid work options, expanding shuttle routes, and adding more on-demand transit services in rural areas. Background/Objectives: International students pursuing higher education in the United States face unique challenges that increase their risk of food insecurity, including limited financial resources, employment restrictions, and cultural barriers. While food insecurity among domestic students has been widely studied, limited research focuses on the lived experiences of international graduate students. This study explores the challenges, perceptions, and coping strategies related to food insecurity among international graduate students at a large public university in North Texas. Methods: This qualitative, ethnographic study involved 20 semi-structured interviews with international graduate students who were clients of the university’s food pantry. Participants were recruited using purposive convenience sampling. Interviews focused on students’ experiences with food access, financial constraints, campus resources, and cultural food preferences. Data were analyzed using thematic coding in MAXQDA. Two standardized food insecurity measures—the USDA and FAO scales—were also administered and analyzed using SPSS. Results: Findings revealed that 85% of participants experienced limited access to nutritious and culturally appropriate foods, with 70% reporting hunger due to financial constraints. Themes included lack of cooking skills, limited campus food options, difficulty accessing familiar groceries, and limited job opportunities. Students expressed that food insecurity significantly impacted their physical health, mental well-being, and social lives, though many continued to prioritize academics over personal nourishment. Conclusions: Food insecurity among international graduate students is multifaceted, shaped by financial, cultural, and institutional barriers. Addressing this issue requires culturally sensitive interventions, improved access to diverse food options, tailored student support services, and institutional efforts to better understand and meet the needs of international students. This study presents a computational analysis of industry-specific advertising message strategies through the theoretical lens of the FCB (Foote, Cone & Belding) grid framework. Leveraging the AiSAC (AI Analysis System for Ad Creation) system developed by the Korea Broadcast Advertising Corporation (KOBACO), we analyzed 27,000 Korean advertisements across five major industries using advanced machine learning techniques. Through Latent Dirichlet Allocation topic modeling with a coherence score of 0.78, we identified five distinct message strategies: emotional appeal, product features, visual techniques, setting and objects, and entertainment and promotion. Our computational analysis revealed that each industry exhibits a unique “message strategy fingerprint” that significantly discriminates between categories, with discriminant analysis achieving 62.7% classification accuracy. Time-series analysis using recurrent neural networks demonstrated a significant evolution in strategy preferences, with emotional appeal increasing by 44.3% over the study period (2015–2024). By mapping these empirical findings onto the FCB grid, the present study validated that industry positioning within the grid’s quadrants aligns with theoretical expectations: high-involvement/think (IT and Telecom), high-involvement/feel (Public Institutions), low-involvement/think (Food and Household Goods), and low-involvement/feel (Services). This study contributes to media science by demonstrating how computational methods can empirically validate the established theoretical frameworks in advertising, providing a data-driven approach to understanding message strategy patterns across industries. Improper stakeholder practices are considered a primary driver of food loss. This study aims to investigate the consequences of pre- and post-harvest practices on extending the shelf life of agro-food products, identifying which practices yield the highest marginal returns for quality. Using Fractional Regression Models (FRM) and Ordinary Least Squares (OLS), the research analyzed data from 343 Egyptian grape farmers and intermediaries. Key findings at the farmer level include significant food loss reductions through drip irrigation (13.9%), avoiding maturity-accelerating chemicals (24%), increased farmer-cultivated area (6.1%), early morning harvesting (8.7%), and improved packing (13.7%), but delayed harvesting increased losses (21.6%). For intermediaries, longer distances to market increased losses by 0.15%, while using proper storage, marketing in the formal markets, and using an appropriate transportation mode reduced losses by 65.9%, 13.8%, and 7.9%, respectively. Furthermore, the interaction between these practices significantly reduced the share of losses. The study emphasizes the need for increased public–private partnerships in agro-food logistics and improved knowledge dissemination through agricultural extension services and agri-cooperatives to achieve sustainable food production and consumption. This framework ensures robust, policy-actionable insights into how stakeholders’ behaviors influence postharvest losses (PHL). The findings can inform policymakers and agribusiness managers in designing cost-efficient strategies for reducing PHL and promoting sustainable food systems. Full article

The Morehouse School of Medicine Prevention Research Center (MSM-PRC) conducted a Community Health Needs and Assets Assessment (CHNAA) survey using a Community-Based Participatory Research (CBPR) approach. In this article, we will demonstrate the application of CBPR in informing research agenda and implementation strategies. We will discuss the practical considerations and potential benefits of engaging the community in data collection, interpretation, and utilization to address community health challenges. Emphasizing collaboration, co-learning, and respect, and guided by the CBPR principles, CHNAA ensured that community voices led to the identification and integration of the research priorities. Overseen by the Community Coalition Board (CCB) and its Data Monitoring and Evaluation (DME) Committee, the survey featured closed- and open-ended questions addressing social determinants of health. Out of 1000 targeted participants, 754 provided valid responses, with a 75% response rate. Most respondents were female and represented a racially diverse group. Descriptive statistics and thematic analysis revealed that key health concerns were diabetes, COVID-19, mental health, and high blood pressure. Barriers to care included lack of food access, affordable housing, and limited mental health services. The findings led to five public health initiatives launched between 2023 and 2024 demonstrating the CBPR model’s effectiveness in aligning community needs with actionable solutions. Full article

Vegetable intake among military Service Members (SMs) is well below public health guidelines, with only 12.9% meeting the Dietary Guidelines for Americans (DGAs). Low vegetable consumption negatively impacts diet quality as measured by the Healthy Eating Index (HEI), and poses risks to health and performance. Given the high physical and mental demands of military life, improving diet quality, including through increased vegetable intake, is crucial for optimizing health and readiness. Providing meal kits may help improve vegetable intake by reducing access-related barriers for SMs living or working on a military base. Furthermore, the addition of spices and herbs is a readily modifiable accompanying approach to address taste-related barriers and increase intake that has shown promise in other populations with poor diet quality. Background/Objectives: This study aimed to evaluate whether heat-and-serve meal kits with spices and herbs could increase vegetable intake and liking among active-duty SM by simultaneously targeting barriers to healthy eating and modifiable sensory factors. Methods: Conducted at Naval Support Activity Bethesda, the study randomly distributed heat-and-serve meal kits (n = 400) featuring either spiced (n = 200) or plain versions (n = 200) of four vegetables (broccoli, carrots, cauliflower, and kale). Each kit contained a quick response (QR) code for participants to upload post-consumption photos and rate vegetable liking on a nine-point Likert scale. Food photography (SmartIntake®) was used to estimate vegetable consumption. Paired t-tests were used to determine differences between the intake of plain and spiced vegetables. Results: Intake of the heat-and-serve vegetables was very high for both the spiced and plain preparations (1.73 out of 2 cups, 87%). There was minimal difference (p = 0.87) between the consumption of spiced (1.75 cups) and plain (1.725 cups) vegetables, suggesting that both were well accepted. Overall, convenient and accessible meal options, alongside sensory-driven strategies, appear to improve some barriers to vegetable consumption in SM populations. Conclusions: Future studies should explore long-term outcomes and adaptability across different military environments, while considering additional factors, including convenience and time constraints, that influence dietary choices in the military. The consequences of climate change directly affect food production and threaten food security. Therefore, efforts are needed to reduce environmental impacts while ensuring access to food. Massive food services play a key role in this context; however, related literature lacks comparative studies between home cooking and restaurants. Through life-cycle assessment, this research compares the environmental impacts generated by stewed chickpeas, a nutritious and flavorful meal prepared at a large food service offered by a public university, and those prepared at home using two recipes. The system boundaries consider the impact of ingredient production, processing, cooking, cooling, and reheating, as well as waste and wastewater generation. The functional unit (FU) weighs 100 g to facilitate comparison. The findings indicate that the recipe from the massive food service has a significant impact on human health, resulting in 3.54·10−7 DALY; meanwhile, the other two scenarios generate approximately 7.2·10−7 DALY. Moreover, regarding biodiversity impact, the recipe from the massive food service reaches 8.57·10−10 species.yr; by contrast, the other scenarios generate around 1.01·10−10 species.yr. Massive food services exhibit a lower environmental impact than home meals in preparing stewed chickpeas. This difference is primarily attributed to the cooling and reheating stages that occur when eating outside the home. Full article

The Interplay Between Summer Meals, Food Insecurity, and Diet Quality Among Low-Income Children in Maryland, USA: A Multiphase Cross-Sectional Study

Background: Food insecurity and poor diet quality disproportionately affect U.S. children from low-income households, with summer school closures exacerbating risks. Federally funded programs like the Summer Food Service Program (SFSP) and SUN Bucks (Summer EBT) aim to address these challenges, yet evidence of their post-pandemic dietary impact remains limited. Objectives: This study examines the relationship between policy innovations, summer meal participation, food insecurity, and diet quality among children from low-income households in Prince George’s County, Maryland. Methods: A cross-sectional design analyzed data from 158 households in Prince George’s County Public Schools across two waves (early fall 2022 and 2023). Validated tools (USDA’s Six-Item Short Form and Dietary Screener Questionnaire) assessed food security and diet quality. Sociodemographic factors, program participation, and dietary deviations from the 2020–2025 Dietary Guidelines were analyzed. Multivariate logistic regression identified determinants of poor diet quality (≥2 guideline deviations), adjusting for ethnicity, age, and housing stability. Results: Only 32.28% of eligible households participated in summer meal programs, with non-participation driven by lack of awareness (53.68%) and transportation barriers (11.58%). Significant dietary gaps included inadequate whole grain intake (0.8 vs. 3.0 servings/day) and excessive added sugars (14% of daily calories). Summer meal participation was associated with reduced odds of poor diet quality (OR = 0.23, p = 0.030), while older age (OR = 52.97, p < 0.001) and very low food security (OR = 8.42, p = 0.036) increased risk. Hispanic ethnicity had lower odds (OR = 0.17, p = 0.019) despite higher baseline food insecurity. Conclusions: Summer meal participation was associated with improved dietary outcomes but faced systemic participation barriers. Findings support policy reforms, such as multilingual outreach and mobile meal distribution, to address identified gaps. Full article

Community gardens are regarded as important green spaces that promote sustainable cities. Some studies have explored the ecosystem services of community gardens in different areas. However, existing studies lack a systematic review of research on community garden ecosystem services, and there is no comparative study of English- and Chinese-language literature. This paper comprehensively reviewed key English- and Chinese-language literature on the ecosystem services of community gardens from the Web of Science and CNKI and analyzed publication years, numbers, research locations, and research topics. The results showed that the number of studies in English and Chinese has increased significantly since 2015, with a consistent upward trend. Research locations are concentrated in urban areas of Europe, America, and eastern China. Both English- and Chinese-language literature focuses on “food supply (quantity)” in the provisioning services, as well as “learning and education” and “social cohesion and integration” in cultural services. The above results are related to the governance frameworks, the management systems, the climatic conditions, and the sustainable development needs of local cities and planning strategies. Given that most of the existing research focuses on the classification and mechanisms of community garden ecosystem services, it is proposed that future research deeply explore the design factors affecting community garden ecosystem services and pay attention to the links between different ecosystem services. The main findings of this review emphasize the correlation between community garden ecosystem services and contextual factors, and point out future research directions. Full article

Ethnobotanical knowledge and biodiversity are critical components of sustainable natural resource management, especially in regions undergoing rapid environmental and socio-economic change. In Northeast Thailand, traditional plant knowledge is deeply intertwined with local cultural identity but faces increasing threats from urbanization, agricultural expansion, and generational shifts. This study presents a floristic and ethnobotanical survey of the Khanthararat Public Benefit Forest, a community-managed remnant forest in Maha Sarakham Province, documenting 110 plant species from 42 families. The Fabaceae family was the most diverse, consistent with other tropical ecosystems. Predominantly native species (85.45%) indicate minimal disturbance, while introduced (11.82%) and endemic species (2.73%) reflect ecological complexity. Ethnobotanical data revealed 34 wild edible species, 33 medicinal plants, and 19 ornamental species used by the local community, highlighting the forest’s vital role in supporting livelihoods and cultural practices. High Use Values (UVs) for species such as Spondias pinnata and Coccinia grandis underline their dual importance in food and medicine. Informant Consensus Factor (Fic) values demonstrate strong agreement on plant use for reproductive and musculoskeletal health, reflecting well-established traditional knowledge. The findings underscore the forest’s dual significance as an ecological hotspot and a repository of cultural heritage, providing essential ecosystem services including biodiversity conservation, climate regulation, and cultural provisioning. By integrating traditional knowledge with biodiversity assessment, this study offers valuable insights for community-based conservation strategies that sustain both ecological integrity and cultural resilience in Northeast Thailand. Agriculture and silviculture offer interesting opportunities for food, energy, and construction sectors, but to transform such raw materials into valuable products, multiple engineering works must be carried out within R&D, innovation projects, and programs. The classical official decision to promote or supervise such projects involves many agents and criteria but rarely considers engineering quality, reusability, or other valuable and measurable attributes considered in ISO 25.000 or in value engineering guidelines. Missing them would increase technological, business, and programmatic risks, potentially wasting public money or credibility. Large projects are not free from these risks, and it is not a kind of madness to derive R&D and innovation funds to enable access to such valuable knowledge comprehensively, with models. In this context, communications and services, construction, and renewables play a crucial role in smart rural environments. Model-Based Systems Engineering (MBSE) and generative Artificial Intelligence (AI), combined with Natural Language Processing (NLP), are expected to help Knowledge Management (KM) in engineering and governance to supervise value engineering and their relationship with other metrics. Starting with a motivational and multidisciplinary framework for a smart rural transformation for System of Systems (SoS), the authors conduct specific bibliographic research on MBSE-NLP-AI use for automatizing systems engineering supervision at program governance levels. The integration of artificial intelligence (AI) technologies is reshaping diverse domains of human activity, including natural resource management, urban and rural planning, agri-food systems, industry, energy, education, and healthcare. However, the impact of AI on the sustainability of local ecosystems remains insufficiently systematized. This highlights the need for a comprehensive review that considers spatial, sectoral, and socio-economic characteristics of regions, as well as interdisciplinary approaches to sustainable development. This study presents a scoping review of 198 peer-reviewed publications published between 2010 and March 2025, focusing on applied cases of AI deployment in local contexts. Special attention is given to the role of AI in monitoring water, forest, and agricultural ecosystems, facilitating the digital transformation of businesses and territories, assessing ecosystem services, managing energy systems, and supporting educational and social sustainability. The review includes case studies from Africa, Asia, Europe, and Latin America, covering a wide range of technologies—from machine learning and digital twins to IoT and large language models. Findings indicate that AI holds significant potential for enhancing the efficiency and adaptability of local systems. Nevertheless, its implementation is accompanied by notable risks, including socio-economic disparities, technological inequality, and institutional limitations. The review concludes by outlining research priorities for the sustainable integration of AI into local ecosystems, emphasizing the importance of cross-sectoral collaboration and scientific support for regional digital transformations. Counterfeit products cause financial losses for both the manufacturer and the enduser; e.g., fake foods and medicines pose significant risks to the public’s health. Moreover, it is challenging to ensure trust in a product’s supply chain, preventing counterfeit goods from being distributed throughout the network. However, fake product detection methods are expensive and need to be more scalable, whereas a unified traceability system for packaged products is not available. Therefore, this research proposes a product traceability system, named Trusted Traceability Service (TTS), using Blockchain and Self-Sovereign Identity (SSI). The TTS can be incorporated across diverse industries because of its generic and manageable four-layer product packaging strategy. Blockchain-enabled SSI empowers distributed nodes, to verify them without a centralized client–server authorization architecture. Moreover, due to its distributed nature, the proposed TTS framework is scalable and robust, with the use of web3.0 distributed application development. The adoption of Fantom, a public blockchain infrastructure, allows the proposed system to handle thousands of successful transactions more cost-effectively than the Ethereum network. The deployment of the proposed framework in both public and private blockchain networks demonstrated its superiority in execution time and number of successful transactions. Full article

Background/Objectives: Adopting sustainable dietary patterns is essential for addressing environmental sustainability and improving public health outcomes. However, food service providers and consumers often face challenges in making informed choices due to a lack of information on the environmental, nutritional, and cost implications of different meal options. The aim of this paper was to provide an integrated assessment of the nutritional quality, environmental impact and cost of vegan, vegetarian, and meat-based versions of four popular meals (lasagne, chilli, teriyaki, and curry) offered in the lunch service of a university food service establishment in London, UK. Methods: In this study, real recipes from the food service provider were analysed. The nutritional quality of meals was evaluated using the Nutrient Rich Food Index (NRF 9.3 and 17.3), the environmental impact was assessed using life cycle assessment (LCA), and the cost was calculated using recipe costing. Results were normalised using the min–max method, and recipes were ranked relative to each other based on their final nutritional quality, environmental impact and cost scores using a normalised integrated scoring method to identify which recipe version of meals was the most optimal when considering environmental sustainability, nutrition, and cost simultaneously. Results: The integrated assessment revealed that vegan recipe versions of meals made with whole foods consistently outperformed their meat-based counterparts across all three criteria—environmental impact, nutritional quality, and cost—ranking highest in environmental sustainability and nutrition while also being more cost-effective, regardless of cuisine or dish type. Conclusions: These findings suggest that shifting towards plant-based recipes made with whole-foods (e.g., vegetables, legumes, etc.) can improve micronutrient intake, reduce environmental impact, and lower costs, thus supporting sustainable dietary transitions and public health. Environmental health literacy (EHL) is essential for individuals to protect themselves from environmental health risks. Indigenous populations are particularly vulnerable to these risks, given the historical threats they have suffered from the advance of agricultural frontiers and impacts of deforestation, mining, and extreme weather events. This study investigates the dimensions of EHL among indigenous communities in Brazil, considering the scarcity of research in this field. Using a scale adapted to measure EHL in topics such as air, water, and food, it was possible to access the EHL levels of a sample of different Brazilian indigenous ethnic groups. Statistical analysis included descriptive methods and the Wilcoxon and Kruskal–Wallis tests. The results revealed significant variations in EHL levels, influenced by factors such as gender, place of residence, age, education, access to health services, and potable water. In addition, the presence of traditional actors, such as midwives, was identified as an important factor in the transmission of health knowledge. The research highlights the need for public policies that respect the cultural specificities of indigenous communities and promote self-care and environmental preservation, contributing to the development of culturally sensitive public health strategies.
