Red deer fat makes up approximately 7–10% of the animal’s weight and is not currently used. Regarding sustainability in the food industry, it is desirable to look for opportunities for its processing and use, not only in the food industry. The aim of this study is the enzymatic modification of red deer fat, leading to modification of its physicochemical properties, and the study of changes in phase transitions of modified fat, its structure, color, and texture. Hydrolysis was performed using sn-1,3-specific lipase at different water concentrations (10–30%) and reaction times (2–6 h). The results showed that there was a significant decrease in melting and crystallization temperatures with an increasing degree of hydrolysis, which was confirmed by differential scanning calorimetry. FTIR spectra revealed a decrease in the intensity of the ester bonds, indicating cleavage of triacylglycerols. Texture analysis of the modified fats confirmed a decrease in hardness of up to 50% and an increase in spreadability. The color parameter values remained within an acceptable range. The results show that enzymatic modification is an effective tool for targeted modification of red deer fat properties, and this expands the possibilities of its application in cosmetic matrices and food applications as functional lipids. Various parameters and observation conditions contribute to the emergence of color. This phenomenon poses a challenge in modern visual communication systems, which are continuously being enhanced through new insights gained from research into specific psychophysical effects. One such effect is the psychophysical phenomenon of simultaneous contrast. Nearly 90 years ago, Kurt Koffka described one of the earliest illusions related to simultaneous contrast. This study examined the perception of gray tone variations in the Koffka ring against different background color combinations (red, blue, green) displayed on a computer screen. The intensity of the effect was measured using lightness difference ΔL00 across light-, medium-, and dark-gray tones. The results were analyzed using descriptive statistics, while statistically significant differences were determined using the Friedman ANOVA and post hoc Wilcox tests. The strongest visual effect was observed the for dark-gray tones of the Koffka ring on blue/green and red/green backgrounds, indicating that perceptual organization and spatial parameters influence the illusion’s magnitude. The findings suggest important implications for digital media design, where understanding these effects can help avoid unintended color tone distortions caused by simultaneous contrast. Full article

Noncommunicable diseases (NCDs) like diabetes and cancer drive demand for therapeutic functional foods. This study developed freeze-dried fermented camel milk (FCM) with Ajwa date pulp (ADP), evaluating its physical and functional properties, probiotic survival, and potential benefits for diabetes and cancer. To achieve this target, six FCM formulations were prepared using ABT-5 starter culture (containing Lactobacillus acidophilus, Bifidobacterium bifidum, and Streptococcus thermophilus) with or without Lacticaseibacillus rhamnosus B-1937 and ADP (12% or 15%). The samples were freeze-dried, and their functional properties, such as water activity, dispersibility, water absorption capacity, water absorption index, water solubility index, insolubility index, and sedimentation, were assessed. Reconstitution properties such as density, flowability, air content, porosity, loose bulk density, packed bulk density, particle density, carrier index, Hausner ratio, porosity, and density were examined. In addition, color and probiotic survivability under simulated gastrointestinal conditions were analyzed. Also, antidiabetic potential was assessed via α-amylase and α-glucosidase inhibition assays, while cytotoxicity was evaluated using the MTT assay on Caco-2 cells. The results show that ADP supplementation significantly improved dispersibility (up to 72.73% in FCM15D+L). These improvements are attributed to changes in particle size distribution and increased carbohydrate and mineral content, which facilitate powder rehydration and reduce clumping. All FCM variants demonstrated low water activity (0.196–0.226), indicating good potential for shelf stability. The reconstitution properties revealed that FCM powders with ADP had higher bulk and packed densities but lower particle density and porosity than controls. Including ADP reduced interstitial air and increased occluded air within the powders, which may minimize oxidation risks and improve packaging efficiency. ADP incorporation resulted in a significant decrease in lightness (L*) and increases in redness (a*) and yellowness (b*), with greater pigment and phenolic content at higher ADP levels. These changes reflect the natural colorants and browning reactions associated with ADP, leading to a more intense and visually distinct product. Probiotic survivability was higher in ADP-fortified samples, with L. acidophilus and B. bifidum showing resilience in intestinal conditions. The FCM15D+L formulation exhibited potent antidiabetic effects, with IC50 values of 111.43 μg mL−1 for α-amylase and 77.21 μg mL−1 for α-glucosidase activities, though lower than control FCM (8.37 and 10.74 μg mL−1, respectively). Cytotoxicity against Caco-2 cells was most potent in non-ADP samples (IC50: 82.22 μg mL−1 for FCM), suggesting ADP and L. rhamnosus may reduce antiproliferative effects due to proteolytic activity. In conclusion, the study demonstrates that ADP-enriched FCM is a promising functional food with enhanced probiotic viability, antidiabetic potential, and desirable physical properties. This work highlights the potential of camel milk and date synergies in combating some NCDs in vitro, suggesting potential for functional food application. Full article

Light intensity and spectral quality play crucial roles in microalgal growth and biochemical biosynthesis. This study investigates the effects of different light intensities (3000, 8000 and 15,000 lux) and colors (red, white, yellow and green) on the growth and metabolites of Nephroselmis sp. Moderate intensity (8000 lux) of white light is sufficient to produce this microalga. The colors of light strongly affect the parameters of the growth of Nephroselmis under each light intensity (p < 0.05). The yellow and green light supported the highest growth rates for the three intensities. Blue and green light at 15,000 Lux stimulates high levels of chl-a corresponding to antenna size 2.80 and 2.46. Nephroselmis illuminated with red light synthesizes carotenoids reaching 13 µg mL−1 at 15,000 lux. This latter for each color stops the proliferation of Nephroselmis, and cells shift their metabolism towards the accumulation of protein. Nephroselmis accumulates more protein, followed by carbohydrates, lipids and polyphenols. Nephroselmis exhibited the highest protein (64% D.W) content when cultured under white light, and the green at 15,000 lux enhanced their production. Nephroselmis is rich in carbohydrates, which accounted for more than 20% D.W under all combinations of light intensities and colors. The accumulation of polyphenols and carotenoids under high-intensity red and white light may reflect an oxidative stress response, suggesting their role as protective antioxidants. The capacity of Nephroselmis sp. to thrive and synthesize valuable metabolites under variable light regimes underscores its potential as a robust candidate for the production of various molecules. Color, aroma, and overall sensory quality in red wines are largely influenced by oxygen availability during fermentation. This study evaluated the effects of micro-oxygenation under hyperbaric conditions on the physicochemical, chromatic, volatile, and sensory properties of Vitis vinifera L. cv. Monastrell grape must. Grape clusters were manually harvested and fermented under controlled conditions, applying micro-oxygenation treatments at two fermentation stages (day 3 and day 13) within a hyperbaric chamber. Physicochemical analyses, CIELab color measurements, visible reflectance spectra, GC-FID volatile profiling, and descriptive sensory analysis were performed. Micro-oxygenated samples (M1_MOX and M2_MOX) showed significant increases in lightness (L*), redness (a*), chroma (C*), and reflectance in the 520–620 nm range, indicating enhanced extraction and stabilization of phenolic pigments. Volatile analysis revealed that these samples also contained higher concentrations of key esters and terpenes associated with fruity and floral notes. Sensory evaluation confirmed these findings, with MOX-treated wines displaying greater aromatic intensity, flavor persistence, and varietal character. Control samples (M1_CON and M2_CON) exhibited lower color saturation and volatile compound content, along with diminished sensory quality. These results suggest that hyperbaric micro-oxygenation is an effective strategy for improving color intensity and aromatic complexity during red wine fermentation under controlled, non-thermal conditions. This study evaluated the impact of transporting Nile tilapia at stocking densities of 250 kg/m3 and 500 kg/m3 for 1 h, with post-transport resting periods of 0, 2, 4, and 6 h, on biochemical parameters and fillet quality. A 2 × 4 factorial design was employed for the experiment, with 15 repetitions per treatment. The density of 500 kg/m3 resulted in a longer time to rigor mortis after 4 h of rest, while shorter rigor times were observed at 0 and 2 h. Fillets taken from fish transported at 250 kg/m3 for 4 h exhibited greater intensities of red and yellow color. The highest weight loss during cooking occurred in fish transported at 500 kg/m3 without rest. High-density stocking increased the pH of the fillets, reduced color intensity, and increased weight loss and drip loss. Resting periods of 4 and 6 h resulted in firmer fillets with improved water retention. Fish rested for 6 h at 250 kg/m3 recovered glycogen and glucose levels, indicating restored homeostasis. In contrast, fish subjected to high-density transport showed impaired metabolic recovery and compromised fillet quality. These results support the use of resting periods to improve fish welfare and product quality in aquaculture systems. Full article

We developed an optoelectronic sensor capable of quantifying in-plane rotational and linear displacements between two parallel surfaces. The sensor utilizes a photo detector to capture the intensity of red (R), green (G), blue (B), and clear (C, broad visible spectrum) light reflected from a color gradient wheel on the opposing surface. Variations in reflected R, G, B and C light intensities, caused by displacements, were used to predict linear and rotational motion via a polynomial regression algorithm. To train and validate this model, we employed a custom-built positioning stage that produced controlled displacement and rotation while recording corresponding changes in light intensity. The reliability of the predicted linear and rotational displacement results was evaluated using two different color gradient wheels: a wheel with changing color hue, and another wheel with changing color hue and saturation. Benchtop experiments demonstrated high predictive accuracy, with coefficients of determination (R2) exceeding 0.94 for the hue-only wheel and 0.92 for the hue-and-saturation wheel. These results highlight the sensor’s potential for detecting shear displacement and rotation in footwear and wearable medical devices, such as orthotics and prostheses, enabling the detection of slippage, overfitting, or underfitting. This capability is particularly relevant to clinical conditions, including diabetic neuropathy, flat feet, and limb amputations. Full article

This study investigated the effect of cattle age on the color stability of Psoas major steaks under different packaging conditions, including polyvinyl chloride (PVC) film packaging, high-oxygen-modified atmosphere packaging (HiOx-MAP), and carbon monoxide-modified atmosphere packaging (CO-MAP), over a 14-day storage period. Steaks from old cows had a greater myoglobin content than those from young animals (p < 0.05), resulting in a darker beef color. Regardless of animal age, steaks in PVC and HiOx-MAP exhibited poor color stability during storage, as evidenced by the low color intensity and high surface metmyoglobin (MetMb; p < 0.05). These samples also exhibited a reduced MetMb reducing activity (MRA) and oxygen consumption rate (OCR) and higher 2-thiobarbituric acid reactive substance (TBARS) levels, with these effects being evident in steaks from mature cows. In contrast, steaks stored in CO-MAP had greater redness, MRA, and OCR, along with lower surface MetMb and TBARS levels (p < 0.05), contributing to the limited discoloration of steaks from both age groups. These findings suggest that while both harvest age and packaging affect the shelf stability of bovine steaks, packaging plays a more significant role. CO-MAP proved to be more effective than aerobic packaging and may mitigate age-related differences in color stability. Full article

Real-time monitoring of cotton moisture status and determination of appropriate irrigation thresholds are essential for achieving precision irrigation. Currently employed diagnostic methods based on physiological indicators, remote sensing, or soil moisture measurements typically present limitations including cumbersome procedures, high labor intensity, requirements for specialized technical expertise, and delayed results. To address these challenges, this study investigated the relationship between plant water content and leaf RGB color values (red, green, and blue color values measured using LScolor technology) during the bud, flowering, and boll development stages, with the objective of establishing a predictive model for rapid, real-time moisture status monitoring. Given that leaf position and color values (R, G, and B) of different functional leaves may influence the relationship between leaf color and plant water content, and this relationship varies across different temporal periods, a two-year experiment was conducted. In 2023, leaf color data from the top five functional leaves were measured at five time points daily throughout the irrigation cycle. In 2024, the following four irrigation treatments were established: one conventional irrigation control treatment (CK) and three irrigation treatments at 72% (T1), 70% (T2), and 68% (T3) plant water content thresholds. Results demonstrated that the following: (1) plant water content initially declined during the day and subsequently showed slight recovery, indicating cotton’s particular susceptibility to water stress between 2:30 p.m. and 7:00 p.m.; (2) plant water content continuously decreased across five measurement periods following irrigation during the bud, flowering, and boll development stages, with R and G color values of the five functional leaves showing declining trends between 2:30 p.m. and 7:00 p.m., while B color values exhibited no consistent pattern; (3) correlation analysis revealed significant positive correlations between plant water content and R and G color values of the five functional leaves during the 2:30 p.m. to 5:00 p.m. period, with highly significant correlations observed for the third and fourth leaves from the apex; (4) univariate and bivariate linear regression models were successfully established between cotton water content and R and G color values of the third and fourth leaves from the top; and (5) under 72% plant water content conditions, cotton achieved the highest yield and Irrigation Water Use Efficiency, indicating that 72% represents the optimal irrigation threshold. In conclusion, integrating leaf color–plant water content relationships with the 72% irrigation threshold enables rapid, non-destructive, large-scale diagnosis of cotton moisture status, providing a robust foundation for implementing effective precision irrigation strategies. The aim of this study was to investigate the preferences of young adults in the Polish apple market in response to the declining consumption of these fruits. To address the research questions, a study was conducted among young adults using a custom-designed online questionnaire. The research sample consisted of 729 participants. The data were analyzed using ANOVA, and due to the nature of the data, Wilcoxon tests were also employed to examine differences. The most frequently purchased fruits among young adults were bananas and apples; however, strawberries and raspberries were the most favored. The most preferred apple cultivars were bicolored (e.g., Jonagored) and red (e.g., Gala Royal), while yellow cultivars (e.g., Golden Delicious) were perceived as the least attractive. Young consumers favored apples that were juicy, firm, and moderately sweet. This study demonstrated that the skin color of an apple was associated with expectations regarding its firmness and sweetness. Apples with intense coloration (dark red and green) received the highest valuations, particularly when organically grown. In contrast, apples from conventional production systems were valued below their market price by young consumers, indicating the need for strategies aimed at enhancing their perceived value. Elastographic Histogram Analysis as a Non-Invasive Tool for Detecting Early Intestinal Remodeling in Experimental IBD

Background/Objectives: Inflammatory bowel disease (IBD), encompassing Crohn’s disease and ulcerative colitis, is characterized by cycles of inflammation and tissue remodeling that can culminate in fibrosis. Differentiating between early inflammatory and fibrotic bowel wall changes remains a diagnostic challenge due to overlapping imaging features. This study aimed to assess the potential of elastography, specifically pixel histogram analysis, as a non-invasive method to identify acute inflammatory changes in a rat model of 2,4,6-trinitrobenzenesulfonic (TNBS)-induced colitis. Methods: Female CRL:Wi rats were randomized into control and experimental groups, with the latter receiving intracolonic TNBS to induce acute colitis. On day 7 post-induction, all animals underwent ultrasonographic and strain elastographic assessment of the distal colon using a standardized protocol. Histogram-based analysis of red, green, and blue pixel distributions was performed on elastographic video frames. Results were compared with histologic grading of inflammation and fibrosis using hematoxylin-eosin and Masson’s trichrome staining. Results: Rats with TNBS-induced colitis exhibited significant weight loss, increased bowel wall thickness (31.5% vs. controls, p < 0.01), and elevated elastographic pixel intensity across all color channels (p < 0.05). Histologically, experimental animals showed severe inflammation and early submucosal fibrosis. A strong positive correlation was found between elastographic histogram values and histologic fibrosis scores (r = 0.86, p < 0.01), confirming the technique’s diagnostic relevance. Conclusions: Elastographic pixel histogram analysis is a reproducible, non-invasive approach capable of distinguishing acute inflammatory changes and early fibrotic remodeling in experimental colitis. These findings support its potential application as a diagnostic adjunct in the early assessment and monitoring of IBD-related bowel wall changes. Full article

The increasing prevalence of microplastic (MP) pollution and the labor-intensive nature of existing identification methods necessitate improved large-scale detection approaches. Nile Red (NR) fluorescence, which varies with polarity, offers a potential classification method, but standardization of carrier solvents and fluorescence differentiation techniques remains lacking. This study evaluated eight NR-carrier solvents (n-hexane, chloroform, acetone, methanol, ethanol, acetone/hexane, acetone/ethanol, and acetone/water) across ten common MP polymers (HDPE, LDPE, PP, EPS, PS, PC, ABS, PVC, PET, and PA). Fluorescence intensity, Stokes shift, and solvent-induced polymer degradation were analyzed. The study also assessed HSV (Hue/Saturation/Value) color spaces for Stokes shift representation and MP differentiation. Fenton oxidation effectively quenched fluorescence in natural organic matter (e.g., eggshells, fingernails, wood, cotton) while preserving NR-stained MPs. Acetone/water [25% (v/v)] emerged as the optimal solvent, balancing fluorescence performance and minimal degradation. Full article

In the context of the information age, the need for data security and confidentiality is becoming increasingly urgent. In this study, polyvinyl alcohol (PVA) and polyethylene glycol (PEG) were used as the matrix, and a PVA/PEG/rare earth composite hydrogel material with controllable photoluminescence color was successfully developed by incorporating rare earth ion doping. Through scanning electron microscopy (SEM), X-ray photoelectronic spectroscopy (XPS), X-ray diffraction (XRD), and fluorescence spectroscopy, it was confirmed that the introduction of lanthanide metal light-emitting units makes the material’s photoluminescence color adjustable from red to green, significantly improves the mechanical properties, and the compressive strength is increased from 17.6 MPa to 23 MPa, representing a 30.7% improvement. In addition, the material exhibits excellent alkaline pH response characteristics; as the concentration of NaOH solution increases, the luminous intensity gradually decays to complete quenching. Based on the adjustable light color and dynamic response characteristics, the material can realize information concealment and encryption through programmable light color changes, providing a new functional material solution for intelligent anti-counterfeiting and optical encryption. Synthesis of Silver Nanocluster-Loaded FAU Zeolites and the Application in Light Emitting Diode

Silver nanoclusters that are confined inside zeolites can give off intensive tunable emission across the visible region under UV excitation. In this research, a series of silver nanoclusters loaded with R-FAU/Ag (R = Li, Na, K) zeolites were synthesized and then applied as phosphors for LEDs. The XRD and SEM measurements showed the R-FAU/Ag (R = Li, Na, K) zeolites have high crystallinity and a size distribution of 0.7–1.25 μm. Under excitations of 310–330 nm ultraviolet radiation, Li-FAU/Ag, Na-FAU/Ag, and K-FAU/Ag exhibit monotonically declining emission intensities and red-shifted emissions with peak wavelengths of 520, 527, and 535 nm, respectively. By using silicone-based epoxy resin as the packaging material, a series of LEDs were fabricated by mixing R-FAU/Ag (R = Li, Na, K) phosphors. It is indicated that the Li-FAU/Ag-LED shows the strongest intensity of 94.9 mcd, much higher than that of the LEDs made from Na-FAU/Ag (63.7 mcd) and K-FAU/Ag (74.2 mcd) phosphors. Additionally, the chromaticity coordinate of the Li-FAU/Ag-LED is located at (0.2651, 0.4073) and has a high color temperature of 7873 K. Thermal test data showed that upon heating to 440 K, the intensities of R-FAU/Ag (R = Li, Na, K) LEDs decreased to 81%, 79%, and 75% of their initial intensities measured at 280 K, respectively. This research proposes a method for regulating the luminescent properties of silver nanoclusters in FAU zeolite by modifying the extra-framework cations and demonstrates excellent performance in LED products. Cryptochrome is an important class of blue-light receptors involved in various physiological activities such as photomorphogenesis and abiotic stress regulation in plants. In order to investigate the molecular mechanism of blue-light-induced color change in Chimonobambusa sichuanensis, we screened and cloned the gene encoding the blue-light receptor Cryptochrome. In order to investigate the molecular mechanism of blue-light-induced color change in Chimonobambusa sichuanensis, we screened and cloned the gene encoding the blue-light receptor Cryptochrome in Ch.sichuanensis, and analyzed the expression characteristics of the Cryptochrome gene in Ch.sichuanensis under different light intensities, light quality, and temperatures by qRT-PCR. Through homologous cloning, a total of four CsCRY genes were obtained in the Ch.sichuanensis genome, namely, CsCRY1a, CsCRY1b, CsCRY2, and CsCRY3. Structural domain analyses of the encoded proteins of the four genes revealed that all CsCRYs proteins had the typical photoreceptor structural domain, PRK (protein kinase C-related kinase). Phylogenetic tree analyses revealed that the four genes CsCRY1a, CsCRY1b, CsCRY2, and CsCRY3 could be categorized into three subfamilies, with CsCRY1a and CsCRY1b clustered in subfamily I, CsCRY2 classified in subfamily II, and CsCRY3 belonging to subfamily III. All CsCRYs proteins lacked signal peptides and the instability index was higher than 40, among which the isoelectric points of CsCRY1a, CsCRY1b, and CsCRY2 were around five. qRT-PCR analysis revealed that the expression of all four CsCRYs genes was up-regulated at 75 µmol·m−2·s−1 blue-light illumination for 4 h. In addition, under treatments of different light quality, the expression of CsCRY2 genes was significantly higher under blue light than under red light and a mixture of red light and blue light with a light intensity of 1:1; the expression of CsCRY1a and CsCSY1b was significantly higher in the mixed light of red and blue light than in the single light treatment, while under different temperature gradients, CsCRYs genes were highly expressed under low-temperature stress at −5 °C and 0 °C. This study provides a basis for further research on blue-light-induced color change in Ch.sichuanensis and expands the scope of Cryptochrome gene research. Full article
