Background: Ultra-processed foods (UPFs) have emerged as a critical component of diet quality, yet data on the associations between UPF and nutrient intakes remain limited. This study aimed to evaluate nutrient consumption in relation to UPF intake and adherence to international dietary guidelines for non-communicable disease (NCD) prevention. Methods: Data from 469 individuals aged 2–18 years enrolled in the Hellenic National Nutrition and Health Survey (HNNHS) were analyzed. Intakes were assessed using two 24 h recalls, and foods were classified according to the NOVA system. Participants were categorized by UPF energy intake tertiles. Nutrient adequacy was assessed using Nordic Nutrition Recommendations, European Society of Cardiology guidelines for macronutrients, and the Institute of Medicine’s Estimated Average Requirements and Adequate Intake values for micronutrients. Results: Children in the highest UPF tertile had significantly higher intakes of energy, carbohydrates, added sugars, saturated fats, polyunsaturated fats, and cholesterol, but lower intakes of protein compared to those in the lowest tertile. Fiber intake remained inadequate across all tertiles, with no significant differences. Regarding adherence to NCD prevention guidelines, children in the 3rd UPF tertile had a 2.3 times higher prevalence ratio for exceeding added sugar recommendations, while their protein intake prevalence ratio was 0.8 times lower. For micronutrients, the highest UPF tertile showed significantly elevated intakes of vitamins E, B1, folate, calcium, iron, copper, and sodium, but lower potassium intake compared to the lowest tertile. Conclusions: Our results underscore the need for effective public health strategies to improve diet quality in children and adolescents and prevent diet-related NCDs. Full article

Background/Objectives: To promote sustainable and healthy diets, increased consumption of pulses (the edible grains of legumes) is recommended. Adolescence is a period in which perceptions and behaviours develop that can impact lifelong dietary behaviours. Therefore, this study aimed to understand how Australian adolescents perceive healthy, sustainable diets and perceive and consume pulses. Methods: Students (11–17 years old, median = 15 years, n = 33) in Brisbane, Australia, participated in school-based face-to-face focus groups and an online survey. Results: Students’ perceptions of healthy and sustainable dietary behaviours largely focused on the health aspects of food and consideration of food waste. The main factors that adolescents identified as influencing the health and sustainability of their diet were a lack of perceived responsibility for the impact of their meal choices and lack of knowledge of what constitutes a healthy and sustainable diet. Most students were unfamiliar with the term ‘pulses’ and lacked a desire to consume pulses more often. Consumption of pulses was below recommendations in national and international dietary guidelines. The main factors that adolescents identified as influencing pulse consumption related to students’ lack of capability to prepare pulses and the limited opportunities to access pulse-based foods. Conclusions: Perceptions of sustainable diets and pulses were very limited, and a lack of knowledge, skills, and limited availability were identified as barriers to their consumption. Education and cooking classes, in conjunction with increased availability of tasty pulse foods, are recommended to increase students’ pulse consumption as part of a healthy and sustainable diet. Growing interest in food sustainability education aims to increase awareness of food distribution systems, environmental degradation, and the connectivity of sustainable and ethical food practices. However, recent scholarship has questioned whether such pedagogical efforts are meaningfully internalized by students or lead to sustained behavioral change. Prior studies document persistent gaps in students’ understanding of sustainability impacts and the limited effectiveness of existing instructional approaches in promoting transformative engagement. To address these concerns, the Food Ethics, Sustainability and Alternatives (FESA) course was implemented with 21 undergraduate and graduate students at Montclair State University (Montclair, NJ, USA). Course outcomes were evaluated using a mixed-methods design integrating qualitative analysis with quantitative measures informed by the Theory of Planned Behavior, to identify influences on students’ attitudes, and a Transtheoretical Model (TTM) panel survey to address progression from awareness to action, administered pre- and post-semester. Qualitative findings revealed five central themes: increased self-awareness of food system contexts, heightened attention to animal ethics, the importance of structured classroom dialogue, greater recognition of food waste, and increased openness to alternative food sources. TTM results indicated significant reductions in contemplation and preparation stages, suggesting greater readiness for change, though no significant gains were observed in action or maintenance scores. Overall, the findings suggest that while food sustainability education can positively shape student attitudes, the conversion of attitudinal shifts into sustained behavioral change remains limited by external constraints, including time pressures, economic factors, culturally embedded dietary practices, structural tensions within contemporary food systems, and perceptions of limited individual efficacy. Background: Adolescence is a formative period for lifelong dietary patterns, yet Korean adolescents show low fruit and vegetable intake, high sugar and sodium consumption, and rising obesity, highlighting the importance of multidimensional assessment that integrates behavioral, cultural, environmental, and competency-related factors. Methods: A total of 1010 adolescents aged 12–18 years completed an online cross-sectional survey assessing food intake, dietary and physical activity behaviors, dietary culture, and Food Literacy (FL) competencies. Standardized scores were used for hierarchical and K-means clustering to identify dietary practice patterns, and between-cluster differences were examined using ANOVA. Correlation and regression analyses were conducted to examine associations between Dietary Guideline Adherence (DGA) and FL. Results: Four clusters were identified—selective intake–low support (20.4%), regular habits–unbalanced intake (33.3%), high adherence (23.2%), and low adherence (23.1%)—with significant differences in DGA total and domain scores (p < 0.001). The high-adherence cluster showed balanced intake, regular routines, and strong household support, whereas the low-adherence cluster showed poor diet quality, irregular behaviors, and lower socioeconomic status. FL differed across clusters (p < 0.001) and correlated with DGA (r = 0.496, p < 0.01). Total FL predicted DGA (β = 0.496, p < 0.001), explaining 25% of its variance (R2 = 0.246). Conclusions: Adolescent diet quality appears to be associated with behavioral, cultural, and competency-related factors. These findings suggest that cluster-specific strategies—such as fat–sugar–sodium reduction, promotion of low-sodium and diverse diets, and maintenance of balanced-dietary patterns—may support tailored school- and community-based nutrition programs and inform further longitudinal and intervention research. Objective: This study aims to investigate the dietary assessment and trends of preschoolers aged 3 to 5 years in Korea from 2012 to 2021 and to provide basic data for early childhood dietary education and policy development. Methods: Data from the Korea National Health and Nutrition Examination Survey (KNHANES) from 2012 to 2021 were analyzed for 2510 children in the 3–5 age group. Dietary intake was assessed using a 24 h recall. Intakes of food groups, dishes, and nutrients were calculated, and trends across years were tested using generalized linear models adjusted for gender, age, household income, energy intake, mother’s age, and mother’s education. Results: Over the tenyear period, intakes of carbohydrates, phosphorus, iron, sodium, potassium, carotene, thiamine, niacin, and vitamin C, as well as the carbohydrate energy ratio, showed significant declines. Meanwhile, protein, fat, retinol, and riboflavin increased, as did the protein and fat energy ratios. Fruit intake decreased by approximately 42 g among food group intakes. Analysis of foods contributing to total food intake revealed that milk, white rice, apples, and eggs consistently accounted for a high proportion of total intake in all survey years. Average calcium intake was approximately 100 mg below the estimated average requirement. Conclusions: The results of this study showed that preschoolers exhibit insufficient intake of certain nutrients, such as calcium, and a decrease in fruit intake. Interventions are needed to establish regular meal patterns, promote plant food intake such as fruit, and improve calcium intake. These results provide valuable evidence for designing dietary education programs and dietary guidelines tailored to early childhood. Full article

Background: Dietary habits established during young adulthood have long-term implications for health, and food choices among university students are strongly shaped by contextual factors. Institutional eating environments represent a relevant setting for promoting healthier dietary behaviors, yet limited evidence integrates students’ engagement with these settings, their food consumption patterns across contexts, and the individual decision-making processes underlying food choice. Methods: This cross-sectional study analyzed survey data from 1519 students enrolled at a large Italian university. Measures included sociodemographic characteristics, self-identified dietary style, engagement with the university canteen, consumption frequency of selected food categories across institutional and non-institutional contexts, and category-specific food-choice motivations. Data were analyzed using descriptive analyses, Borda count rankings, paired comparisons, and multiple linear regression models. Results: Clear contextual differences in food consumption emerged across all food categories, with consistently lower consumption frequencies within the university canteen compared to outside settings (all p < 0.001). The largest contextual gap was observed for fruit consumption (d = 0.94), with similarly pronounced differences for plant-based foods. Taste was the most salient decision-making factor across food categories (overall M ≈ 4.4), while health-related motives were more prominent for healthier foods and gratification for desserts. Across contexts, self-identified dietary style was the most consistent predictor of food consumption, explaining substantial variance for animal-based protein consumption (R2 = 0.293 in the canteen; R2 = 0.353 outside), whereas age and gender showed smaller, food-specific associations. Conclusions: The findings highlight institutional eating settings as distinct food environments in which individual dietary preferences are only partially expressed. Effective strategies to promote healthier eating among university students should move beyond generic approaches and integrate interventions targeting service-related engagement, category-specific choice architecture, and students’ dietary identities. Background: Maternal overweight and obesity, which show a rising trend globally, are associated with adverse pregnancy outcomes and long-term health risks for both mother and child. Awareness and understanding of these risks among women of reproductive age are essential for effective prevention and early intervention. Methods: We conducted a cross-sectional survey among 958 women planning pregnancy, currently pregnant or breastfeeding to assess their knowledge and attitudes regarding overweight and obesity in the perinatal period. The questionnaire covered lifestyle behaviors, breastfeeding practices, and knowledge related to overweight and obesity in pregnancy. Results: Overall knowledge regarding the consequences of maternal overweight and obesity was low, with notable deficits in understanding the associated health risks and frequent misconceptions about dietary recommendations during pregnancy. Awareness gaps were particularly noticeable in domains related to fetal outcomes and recommended energy requirements across pregnancy. Excessive gestational weight gain was reported in over 75% of pregnancies, including among women with normal body mass index. Participation in antenatal classes, current breastfeeding and older age were significantly associated with higher knowledge; however, these factors together explained only 6.2% of variability. Still, several key aspects were not well recognized despite high educational attainment and frequent contact with maternity care services. Conclusions: Our study highlights a clear and urgent need for better, more targeted educational strategies to improve women’s understanding of metabolic health and nutrition before and during pregnancy. The low explained variance indicates that maternal knowledge is influenced by multifactorial and not easily captured determinants, emphasizing the need for comprehensive and individualized educational approaches. Enhancing maternal awareness could support better health outcomes for both mothers and their offspring. Full article

Background and Objectives: The COVID-19 pandemic had a significant impact on physical activity among various populations. Due to a lack of country-representative studies on the prevailing trends in leisure-time physical activity since the COVID-19 pandemic, the aim of this study was to assess the temporal, social, and demographic inequalities in the prevalence of engagement in exercise and sports among working-age citizens of Lithuania from 2021 to 2024. Materials and Methods: This study included four samples of working-age citizens (1600 per year, 6400 in total). Four surveys were conducted, and the distribution of respondents among the groups was compared. Results: In general, the prevalence of engagement in exercise and sports did not change over a four-year period (48.8%, p = 0.256). The prevalence of regular exercise and sports increased, while engagement in irregular exercise and sports decreased (p = 0.014). Binary logistic regression analysis showed that younger age, male sex, being single, having no children under 18 years of age, selecting foods for health strengthening, positive self-assessment of nutrition and health status, use of dietary supplements, attention to purchasing healthy products, and university education attainment were associated with engagement in exercise and sports (regular or irregular) (p < 0.05). Analysis focused specifically on regular exercise and sports revealed associations with a longer time since the onset of the COVID-19 pandemic, younger age, urban residence, selection of foods for health strengthening, positive assessment of nutrition and health status, and university education attainment (p < 0.05), while no significant associations were observed with sex, marital status, presence of children under 18 years of age, use of dietary supplements, or attention to purchasing healthy products (p > 0.05). Conclusions: The overall prevalence of physical activity engagement among working-aged Lithuanian citizens did not change from 2021 to 2024, engagement in regular and irregular exercise and sports has changed. Engagement in regular and irregular exercise and sports is associated with different social profiles. Full article

Background: The scalp represents a distinct ecological niche within the skin, and the structure of its microbiota, together with the factors shaping it, is considered important for the maintenance of scalp health. Methods: This study systematically analyzed the bacterial and fungal community structures on the scalps of 63 healthy Chinese women aged 18–25, and examined their associations with scalp type, sensitivity, and lifestyle factors. Scalp samples were collected, questionnaire surveys were administered, scalp physiological parameters were measured, and high-throughput sequencing of 16S rRNA and ITS genes was performed. Results: The results showed that, in this unique scalp skin niche, the dominant bacterial phylum was Actinobacteria, while the dominant fungal phylum was Ascomycota. The predominant bacterial genera were Cutibacterium and Staphylococcus, and the fungal community was dominated by Malassezia. When scalp types were categorized according to sebum content, dry scalps showed enrichment of Micrococcus, Streptococcus, Delftia, Staphylococcus aureus, and Staphylococcus hominis, whereas oily scalps, on the other hand, are primarily colonized by Cutibacterium and Staphylococcus species. In addition, we observed microbial interactions under different physiological conditions. The relative abundance of Cutibacterium decreased with increasing scalp sensitivity. Higher psychological stress, insufficient sleep, and high-sugar/high-fat dietary patterns tended to coincide with shifts in the relative abundance of Malassezia, implying that these influences may act through fungal rather than bacterial components of the scalp microbiota. Scalp sensitivity showed the strongest association with β-diversity among the variables examined, although the effect size was modest and did not reach conventional significance in the multivariable PERMANOVA. Conclusions: In young women, the scalp constitutes a distinct cutaneous niche whose microbiota is jointly shaped by sebum level, barrier sensitivity, and lifestyle factors, with sensitivity emerging as one of the more influential dimensions of community variation. These findings provide guidance for future in-depth research on the scalp microbiome network and offer a foundational reference for preventing suboptimal and pathological scalp conditions. Background/Objectives: This study aimed to examine the association between Mediterranean diet adherence and adaptive eating behaviors, specifically intuitive eating and mindful eating, among Turkish young adults. Methods: This cross-sectional study included 2293 young adults aged 18–34 years who completed an online survey between December 2023 and March 2024. Data were collected using the Mediterranean Diet Adherence Scale (MEDAS), Intuitive Eating Scale-2 (IES-2), and Mindful Eating Questionnaire (MEQ-30). One-way ANOVA compared eating behavior scores across adherence groups. Hierarchical multiple regression analyses examined the unique contribution of MEDAS scores after controlling for demographic, socioeconomic, health, lifestyle, and nutritional factors. Results: Among the participants, 64.5% demonstrated low, 27.0% moderate, and 8.4% high Mediterranean diet adherence. ANOVA revealed significant differences in both IES-2 and MEQ-30 scores across groups. In hierarchical regression, MEDAS significantly predicted intuitive eating (B = 0.023, p = 0.004, contributing 10.72% to explained variance) and mindful eating (B = 0.776, p = 0.001, contributing 13.61%) after controlling for all covariates. BMI emerged as the strongest predictor for both outcomes, with divergent associations: negative for intuitive eating and positive for mindful eating. Final models explained 5.8% and 6.2% of variance in IES-2 and MEQ-30, respectively. Conclusions: Mediterranean diet adherence demonstrated significant positive associations with both intuitive and mindful eating behaviors, independent of multiple confounders. Although effect sizes were modest, these findings suggest that promoting Mediterranean dietary patterns may complement interventions aimed at fostering adaptive eating behaviors. The divergent BMI associations warrant further investigation. Full article

Background and Objectives: Hypertension in young adulthood is increasingly recognized as a precursor to future cardiovascular disease. Early identification of modifiable risk factors, such as dietary habits, lifestyle behaviors, and psychological indicators, is critical for prevention. This study aimed to examine the elevated clinic blood pressure and associated factors in 19-year-old individuals in Serbia. Materials and Methods: A cross-sectional study was conducted using data from the 2019 Fourth National Health Survey. A total of 212 participants underwent blood pressure measurement, anthropometric assessment, and completed standardized questionnaires on diet, physical activity, depressive symptoms, and sociodemographic characteristics. Blood pressure was classified according to ESC/ESH guidelines. Associations with elevated blood pressure were assessed using chi-square tests and multivariate logistic regression. Results: Most participants had optimal or normal blood pressure, while 18.9% had elevated blood pressure, including high-normal and Grade I–II hypertension. Elevated blood pressure was more prevalent among males and was associated with depressive symptoms. Nutrition status was significantly associated with elevated blood pressure, and some dietary habits like consumption of pure fruit or vegetable juices and the intake of processed meat products. Other socioeconomic factors, eating habits and physical activity were not significantly correlated. In multivariate logistic regression, elevated arterial blood pressure was significantly associated with consuming pure fruit or vegetable juices less than once per week (OR = 3.239; 95% CI: 1.413–7.427) and with consuming processed meat products several times per week in comparison to the daily consumption (OR = 0.325; 95% CI: 0.130–0.812), while no other variables remained statistically significant. Conclusions: Clinically elevated arterial blood pressure is present in a substantial proportion of 19-year-olds. Early lifestyle interventions targeting nutrition and psychological health may prevent progression to hypertension and reduce long-term cardiovascular risk. Full article

Aims: Low-carbohydrate diets (LCDs) are associated with metabolic benefits, but their long-term effects remain uncertain, particularly in Asian populations with traditionally high carbohydrate intake. This study examined LCD patterns and their association with metabolic syndrome (MetS) in Korean adults using nationally representative data from the 2022–2023 Korea National Health and Nutrition Examination Survey (KNHANES). Methods: Among 9617 adults aged ≥20 years with complete dietary and health data, LCD score was calculated from the percentage of energy derived from carbohydrates (reverse-scored), fats, and proteins, and participants were categorized into high-carbohydrate, moderate-carbohydrate, and low-carbohydrate groups. MetS was defined using an Adult Treatment Panel III and Korean criteria. Survey-weighted logistic regression was applied to assess associations between LCD score and MetS across sequentially adjusted models. Results: MetS prevalence differed significantly across LCD decile groups (LCD1: 9.6%, LCD2: 5.8%, LCD3: 9.7%; p < 0.001). In a minimally adjusted model, LCD decile 3 was associated with higher odds of MetS (OR, 1.14; 95% CI: 1.02–1.27). However, this association was attenuated and became non-significant after further adjustment for key metabolic risk factors. Obesity, blood pressure, fasting glucose, triglycerides, and high-density lipoprotein cholesterol were all strongly associated with MetS (all p < 0.001), and income-related disparities were evident, with lower-income groups showing higher carbohydrate and lower fat and protein intakes. Conclusions: These findings suggest that LCD patterns are not independently associated with MetS once underlying metabolic factors are considered. Public health strategies in Korea would be emphasized by improving nutrient quality, promoting balanced macronutrient intake, and reducing socioeconomic inequalities in diet to mitigate metabolic risk among adults. In Saudi Arabia, cucurbit crops such as zucchini (Cucurbita pepo) and snake gourd (Trichosanthes cucumerina) are major vegetables and key dietary components, yet their associated viral threats remain poorly understood. We surveyed symptomatic cucurbit samples from greenhouses and open fields in the Al-Ahsa and Qatif regions. The detection methods employed included PCR, RCA, and Illumina NGS. Based on nucleotide sequence comparisons and maximum-likelihood phylogenetic analysis, we identified three viruses, i.e., TYLCV, WmCSV, and ToLCPalV, present as both single and mixed infections. Sequence analyses revealed a novel strain, TYLCV-Hasa, representing a distinct lineage of TYLCV. Analysis revealed that recombination occurred solely in the DNA-A components of the identified viruses, while DNA-B segments showed no evidence of recombination. Notably, no DNA satellites were detected, suggesting cucurbits may act as independent reservoirs of begomovirus diversity. These results provide a comprehensive genomic insight into cucurbit-infecting begomoviruses in Eastern Saudi Arabia. The discovery of TYLCV-Hasa and evidence of recombination raise concerns about the emergence of novel viral variants that could pose risks to cucurbit cultivation. The results establish a foundation for advanced molecular surveillance and breeding strategies, contributing to improved food security and supporting Saudi Arabia’s Vision 2030 goals for sustainable agriculture. Dietary Patterns and Depressive Symptom Severity in the Hungarian Adult Population: Evidence from a Nationally Representative Survey

Background: Depression represents a major public health burden in Hungary, where prevalence remains higher than the global average. Although diet is an increasingly studied factor associated with mental health, evidence from Central and Eastern Europe is scarce. Methods: This cross-sectional study analyzed data from the Hungarian wave of the European Health Interview Survey (EHIS) 2019, a nationally representative sample of 5603 adults aged ≥15 years. Depressive symptom severity was assessed using the Patient Health Questionnaire-8 (PHQ-8) and categorized as none (0–4), mild (5–9), and moderate-to-severe (≥10). Self-reported frequency of consumption of fruits, vegetables, fruit juice, dairy products, fish, processed meat, sweetened beverages, coffee, and sweeteners was examined. Multivariable ordinal logistic regression models, adjusted for gender, age, education, income, physical activity, smoking, and alcohol consumption, were used to estimate associations with depressive symptom severity. Results: Overall, 77.9% of participants had no depression, 17.0% mild, and 5.1% moderate-to-severe symptoms. After full adjustment, lower consumption of fruits and vegetables, less frequent fruit juice intake, and lower processed meat consumption were associated with higher odds of more severe depressive symptoms. Moderate coffee intake (1–2 cups/day) was associated with lower odds than heavier consumption. Conclusions: In the Hungarian adult population, poorer dietary patterns, particularly low intake of fruits, vegetables, and paradoxically lower processed meat consumption, are significantly associated with greater depressive symptom severity, independent of major sociodemographic and lifestyle factors. These findings underscore the potential role of diet quality in mental health and support public health efforts to promote nutrient-rich dietary patterns in Hungary. Full article

Background: Gestational diabetes mellitus (GDM) is one of the most common metabolic complications of pregnancy, and its prevalence continues to rise worldwide. Dietary management is the cornerstone of therapy, yet adherence may impose a substantial everyday burden. This study aimed to assess perceived burden and practical challenges related to following a diabetic diet in women with GDM. Methods: A cross-sectional anonymous online questionnaire study was conducted among 109 women with a current or past diagnosis of GDM within the previous five years. The survey addressed self-reported difficulties in maintaining normal blood glucose levels, adherence to a diabetic diet, perceived increases in grocery expenses, time required for meal preparation, dietary preferences, and family attitudes toward the diet. Associations between categorical variables were analyzed using contingency tables and the contingency coefficient. Results: Women with insulin-treated GDM (GDM2) reported more difficulties maintaining normal blood glucose levels than women treated with diet and physical activity alone (GDM1) (p = 0.014). Educational level was associated with perceived financial burden (p = 0.013) and meal preparation time (p = 0.003). These patterns likely reflect both differences in economic resources and the extent of dietary changes undertaken, rather than uniform differences in nutritional awareness. Pregnancy status was associated with dietary preferences, as non-pregnant respondents more often reported liking diabetic-diet meals than pregnant respondents (p = 0.037). Overall, 53.2% of respondents reported that a diabetic diet made daily functioning more difficult, mainly due to increased time and financial demands. Conclusions: Dietary management of GDM is associated with a meaningful perceived burden, especially among women requiring insulin therapy and those facing financial and time constraints. Understanding these subjective challenges may support more individualized dietary counseling and patient-centered care. Full article
