Background/Objectives: This study evaluated the association between nutrient intake adequacy during early pregnancy and gestational diabetes mellitus (GDM) risk through a prospective cohort study of Korean pregnant women. Methods: A total of 2227 singleton pregnant women were included in this study. Dietary assessment was conducted once during early pregnancy enrollment using the 24 h dietary recall method. The collected dietary data were analyzed using the CAN-Pro Korean food composition database to calculate nutrient-specific intake levels. Nutrient Adequacy Ratio (NAR) for each nutrient and Mean Adequacy Ratio (MAR), which integrates individual NARs, were calculated based on intake levels. GDM diagnosis was determined using oral glucose tolerance test (OGTT) results conducted between 24 and 28 weeks of gestation. Relative risk (RR) for each individual nutrient was calculated, and logistic regression analysis was performed to estimate odds ratios (OR) for GDM risk according to MAR quartiles. Results: Among 2227 participants, 157 women developed GDM. Compared to the highest MAR quartile, women in the lowest quartile showed significantly increased GDM risk (OR = 1.82, 95% CI: 1.10–2.99), with the second lowest quartile demonstrating similarly elevated risk (OR = 1.75, 95% CI: 1.06–2.88). Among individual nutrients, inadequate vitamin D intake was associated with the highest GDM risk (RR = 3.84), followed by insufficient intakes of vitamin K (RR = 1.89), vitamin B6 (RR = 1.62), niacin (RR = 1.54), and calcium (RR = 1.39). Body mass index-stratified analysis revealed that the association between low nutritional adequacy and GDM risk was particularly pronounced in women with BMI ≥ 25.0 kg/m2, showing up to a four-fold increased risk in the lowest adequacy groups. Conclusions: These findings suggest that low overall dietary adequacy and nutritional imbalance during early pregnancy are associated with increased GDM risk. The results underscore the importance of ensuring adequate and balanced nutrition during early pregnancy for GDM prevention. Full article

Background/Objectives: Shift work and chronotype influence timing and type of food consumed, yet their combined influence is unclear. This study determined differences between temporal patterns of eating (times of first (FEO), last (LEO), and largest eating occasions (LarEO), duration of eating window (DEW), eating frequency) and nutrient intake of night shift workers on and off shift and the additional influence of chronotype. Methods: Participants (46.6 ± 10.2 years, BMI: 33.9 ± 5.6 kg/m2, male/female: 57/72) completed work/sleep/food diaries, and the Composite Scale of Morningness. Dietary profiles were characterized by day type as follows: morning shift (MS), 1st night shift (1stNS), subsequent night shifts (SNS), 1st day off after night shifts (1stDONS), or other days off (DO). Results: Across day types, there were significant differences in FEO (p < 0.001), LEO (p < 0.001), LarEO (p = 0.025), DEW (p < 0.001), eating frequency (p = 0.003), total energy (p = 0.022), and fibre intake (p < 0.001). Compared to MS, all night shifts had later FEO, LEO, and LarEO; 1stNS had longer DEW and higher fibre but no differences in frequency, energy, and macronutrient intake. Greater morningness was associated with earlier FEO, LEO, LarEO, and lower %energy from fat and saturated fat. Effect of chronotype on temporal eating patterns was not different across day types; there was a significant, positive relationship between morningness and %energy from carbohydrate (%EnergyCHO) on MS (p = 0.004) and 1stDONS (p = 0.040). Conclusions: Dietary habits of night shift workers vary by shift schedule and degree of morningness. Further studies will confirm if shift schedule is more influential than chronotype on shift workers’ dietary habits. Full article

Early growth in broilers depends on the rapid development of supply organs that enable nutrient use and support the growth of demand tissues such as muscle and bone. This study evaluated whether increasing dietary fat (and thereby AME) and amino acid concentration in starter diets enhances supply organ development and growth performance in Cobb male broilers. A 2 × 2 factorial design compared two fat levels, corresponding to two AME levels (F− 2750 vs. F+ 3050 kcal/kg), and two standardized ileal digestible lysine levels (AA− 1.0% vs. AA+ 1.2%) in an ideal ratio, to other essential AAs during days 0–11. Higher amino acid concentration consistently improved body weight gain, feed efficiency, and nutrient utilization throughout the trial, whereas the benefits of higher AME were mainly observed during the first 11 days. Diets high in both fat and amino acids reduced early feed intake, suggesting satiety effects. The effects on supply organ development were limited; only the pancreas and small intestine exhibited treatment-related differences in relative weight or allometric growth. In conclusion, increased amino acid concentration in starter diets improved overall broiler performance and nutrient efficiency, whereas dietary fat provided only short-term benefits. These improvements were not consistently associated with morphological changes in supply organs. Full article

An eight-week study was conducted to evaluate the effects of dietary marine protein hydrolysates as fish meal replacements in low-fish-meal diets on the growth performance, feed utilization, and health status of Asian seabass (Lates calcarifer). The high-fish-meal (HFM) diet contained 25% fish meal, while the low-fish-meal (LFM) diet replaced 60% of the fish meal with soybean meal. Three experimental diets were formulated by supplementing the LFM diet with 5% tuna hydrolysate (TH), 2% shrimp hydrolysate (SH), and 5% salmon silage (SS), each replacing an equivalent amount of fish meal. These diets were designated as LFM + TH, LFM + SH, and LFM + SS, respectively. The results showed that the LFM + TH diet significantly improved the percentage of weight gain, average daily growth, specific growth rate, protein efficiency ratio, and feed conversion ratio compared to the LFM diet (p < 0.05), without negatively affecting feed intake or metabolic markers. Histological analysis revealed improved villus length and goblet cell count in the intestine, indicating better nutrient absorption (p < 0.05). However, no significant differences were observed in hematological and immunological parameters, blood plasma metabolic markers, or carcass proximate composition (p > 0.05). Furthermore, the LFM + TH diet exhibited superior survival rates under ammonia stress, highlighting its potential to enhance stress tolerance. These findings suggest that marine protein hydrolysates, particularly 5%TH, can serve as a sustainable and efficient alternative to fish meal protein in diets with up to 60% in soybean meal compensation, promoting better growth and survival in Asian seabass. Background/Objectives: Vitamin D deficiency is highly prevalent worldwide and is associated with multiple comorbidities and pharmacological treatments that may interfere with its metabolism. Evidence on the effect of supplementation across different drug user groups remains limited. Methods: A prospective study was conducted across community pharmacies over twelve months. Baseline socio-demographic, serum 25(OH)D concentration, quality of life (QoL), lifestyle habits, and medication use were collected. Participants received vitamin D supplementation for 12 months. Changes in vitamin D status and QoL were analyzed according to medication use. Logistic regression identified predictors of achieving adequate serum vitamin D levels (>30 ng/mL). Statistical significance was set at p < 0.05. Results: At baseline, 87.2% of 210 participants had insufficient or deficient vitamin D levels. After supplementation, mean serum vitamin D increased significantly from 21.3 ± 8.2 to 32.1 ± 12.6 ng/mL (p < 0.001), and QoL scores improved from 68.6 ± 18.7 to 77.8 ± 18.5 (p < 0.001). Dietary intake of vitamin D–rich foods and outdoor activity also increased. Supplementation improved vitamin D status among users of benzodiazepines, proton pump inhibitors, beta-blockers, statins, levothyroxine, metformin, and angiotensin-converting enzyme inhibitors, but not among corticosteroid, nonsteroidal anti-inflammatory drugs, or vitamin K antagonist. Multivariate analysis confirmed adherence as a strongest predictor of vitamin D adequacy (OR = 15.31, 95% CI = 2.90–80.75), while corticosteroid therapy, diabetes, and hypercholesterolemia were negatively associated. Conclusions: Vitamin D supplementation effectively corrected deficiency and improved QoL, but its efficacy varied according to comorbidities and medication use. Personalized supplementation strategies, emphasizing adherence and considering pharmacological profiles, may optimize outcomes. Further studies should explore mechanistic drug–nutrient interactions and long-term clinical implications. Full article

Background: The consumption of ultra-processed foods (UPFs) has increased globally, particularly in developed countries. UPFs are energy-dense and nutrient-poor, and they often contain additives that can disrupt gut flora and increase intestinal permeability. There is evidence to suggest that processed foods may contribute to the onset of IBD and also impact its progression and response to treatment. This study investigated whether children with IBD consume more UPFs than healthy controls and examined the association between UPF intake and disease activity. Methods: This pilot cross-sectional case–control study recruited children with IBD from the Gastroenterology Outpatient Clinic at the Heim Pál National Pediatric Institute in Budapest, Hungary, between December 2023 and February 2025. Age- and sex-matched healthy controls (HCs) were also enrolled. Dietary intake was assessed using two days of 24 h recalls. UPF intake was categorized using the NOVA system and expressed as a percentage of total daily energy intake. Results: A total of 47 children with IBD were matched with HCs. There was no difference in total energy intake between the two groups. Children with UC had a significantly higher intake of UPFs than HCs (MD: 10.5%, p = 0.02), whereas no difference was observed in children with CD after excluding oral nutritional support. No difference in UPF intake was observed between children with active or inactive disease. However, children receiving biological therapy consumed significantly fewer UPFs than those receiving other treatments (MD: 8%, p = 0.04). Conclusions: Children with IBD consume more UPFs compared to HC. The UPF intake of children with CD was not lower than healthy children despite the recommended Crohn’s Disease Exclusion Diet (CDED). This study evaluated the performance and energy and nutrient utilization of broiler chickens fed corn-soybean meal-based diets supplemented with a naturally fermented enzyme complex containing xylanase and phytase. This was evaluated using 300 one-day-old male Cobb broiler chicks in a randomized complete block design with five dietary treatments replicated 10 times with 6 chicks per replicate. The treatments consisted of a positive control (PC) group containing commercially recommended energy and nutrient levels, a negative control (NC) group with reduced metabolizable energy, calcium, and available phosphorus, and three levels of exogenous enzyme supplementation to the NC diet at 150, 200, 250 mg/kg, respectively. At the end of the trial, ileal digesta and excreta were collected for nutrient and energy digestibility and utilization determination, while tibia bones were collected for bone ash determination. The data was analyzed using Proc GLM of SAS 9.4 v 4. Enzyme supplementation quadratically increased (p < 0.05) average daily gain, average daily feed intake (ADFI), and feed efficiency during days 9–21. There was also a linear increase (p < 0.01) between enzyme level and ADFI during days 0–21. Compared with birds fed the PC diet, chickens fed the NC diet had lower (p < 0.01) utilization of DM, N, Ca, P, and energy, as well as lower (p < 0.01) apparent ileal digestibility of essential and non-essential amino acids (AA). Enzyme supplementation level showed a quadratic relation (p < 0.01) with the utilization of DM, N, Ca, P, and AMEn, as well as with the apparent ileal digestibility of essential and non-essential AA. A quadratic relationship was also observed for apparent ileal digestibility of DM, N, P, and digestible energy, except for Ca, where the relationship was linear (p < 0.001). Bone breaking strength and bone ash quadratically correlated (p < 0.05) with the level of enzyme supplementation. The results from this study indicated that the supplementation of exogenous enzyme to a corn–soybean meal-based diet resulted in benefits to performance, nutrient digestibility and utilization, and bone mineralization of broiler chicks compared to birds on the NC diet. Background/Objectives: Qatar and other Gulf Cooperation Council (GCC) countries are experiencing a growing incidence of diet-related non-communicable diseases (NCDs). The lack of a culturally relevant food exchange list (FEL) for commonly consumed foods in Qatar and the GCC limits the application of cultural preferences in medical nutrition therapy (MNT) for managing diet-related NCDs, thereby reducing patient adherence and metabolic outcomes. Therefore, the primary objective of this study was to develop a culturally tailored FEL for 50 main course dishes widely consumed in the region. Methods: A four-phase approach was followed in this developmental study. First, common Qatari and GCC dishes were identified based on cultural practices and market availability. Second, nutrient composition was compiled from regional food composition tables and validated using dietary analysis software. Pearson correlation was conducted to compare macronutrient values, with significance set at p < 0.05. Third, standard serving sizes were determined using Wheeler et al.’s methodology and converted into household measures using a kitchen scale. Finally, we developed a macronutrient exchange list for the dishes based on the established Wheeler rounding-off criteria. Results: A culturally tailored FEL for 50 frequently consumed Qatari and GCC dishes was successfully developed. Significant correlations were observed between laboratory-derived and software-derived values for carbohydrates (r = 0.7) and protein (r = 0.9), with a weaker correlation for fat (r = 0.5). Macronutrient exchange analysis revealed substantial variation across dishes, with several carbohydrate-based dishes also contributing meaningful protein and fat exchanges. Findings indicated that visual assumptions about nutrient composition may not accurately reflect exchange values, highlighting the need for systematic analysis in diet planning. Conclusions: This study developed a novel culturally relevant FEL for commonly consumed composite dishes in Qatar and the GCC. The exchange list provides a practical tool for dietitians and healthcare professionals to support culturally tailored MNT and public health interventions in the region. It also serves as a valuable resource for researchers in nutritional epidemiology, enabling the analysis of dietary data by converting raw food intake information. Full article

Background/Objectives: Nutrition during the reproductive years shapes women’s immediate health, fertility, pregnancy outcomes, and long-term offspring well-being. This position paper narratively synthesizes and critically appraises evidence on how dietary patterns, macro-/micronutrients, and supplementation influence women’s health, female fertility, and reproductive outcomes, to inform practical recommendations. Methods: We narratively reviewed recent reviews, cohort studies, clinical trials, and public-health guidance on macronutrients, key micronutrients, dietary patterns (with emphasis on the Mediterranean diet), ultra-processed food (UPF) intake, and targeted supplementation relevant to menstrual, metabolic, cardiovascular, skeletal, and reproductive outcomes. Results: Balanced, diverse diets rich in whole and minimally processed foods support hormonal regulation, ovulatory function, healthy gestation, and chronic-disease risk reduction. Priority nutrients include iron, folate, calcium, vitamin D, zinc, vitamin B12, and long-chain omega-3s (DHA), with supplementation considered when dietary intake or bioavailability is inadequate. Evidence consistently links Mediterranean-style eating to improved metabolic health, insulin sensitivity, IVF success, lower gestational diabetes risk, and favorable neonatal outcomes. High UPF consumption is associated with poorer diet quality, inflammation, adverse pregnancy outcomes, and potential reproductive impairment, warranting a reduction in favor of nutrient-dense foods. Diet also influences cardiovascular and bone health through effects on lipids, glycemia, blood pressure, and mineral/vitamin status, with fiber-rich carbohydrates, unsaturated fats (notably olive oil), and adequate calcium–vitamin D emerging as central levers. Conclusions: For women of childbearing age, a Mediterranean-aligned, minimally processed dietary pattern—tailored to individual needs and complemented by prudent use of folate, iron, vitamin D, calcium, B12, and DHA when indicated—offers robust benefits across reproductive, metabolic, cardiovascular, and skeletal domains. Public-health actions should improve access to healthy foods, curb UPF marketing, and embed personalized nutrition counseling in routine care; further longitudinal research from preconception through postpartum is needed. While nutritional interventions are pivotal for management, the evidence for specific nutrients is often complex and inconsistent, creating challenges for clinical guidance. This review critically evaluates current evidence on the interaction among macronutrients, micronutrients, and established dietary approaches and their influence on the development and course of HTN and MA. Strong consensus is present regarding sodium restriction, increased intakes of potassium, and the implementation of dietary patterns like Dietary Approaches to Stop Hypertension (DASH) and the Mediterranean diet to improve blood pressure and renal outcomes. Evidence favors protein moderation (approximately 0.8 g/kg/day), especially from plant sources, and emphasizes carbohydrate quality (e.g., high fiber, low glycemic index) over absolute quantity. The role of micronutrients is more nuanced; maintaining vitamin D sufficiency is protective, but intervention trials for many supplements, including B vitamins and antioxidant vitamins (C and E), have yielded inconsistent results. Several minerals, such as iron and selenium, exhibit a U-shaped risk curve where both deficiency and excess are detrimental, highlighting the risks of unselective supplementation. Ideal nutrition care prioritizes holistic dietary patterns over a focus on single nutrients. Clinical guidance should be founded on sodium reduction and potassium-rich foods, with personalized recommendations for protein and micronutrient supplementation based on an individual’s specific cardiovascular and renal profile. Future research must target nutrients with conflicting evidence to establish clear, evidence-based intake guidelines. Full article

The mechanisms of nutritional niche differentiation among sympatric Schizothoracinae fishes play an important role in their adaptive evolution and should be considered in conservation strategies. To date, there have been no reports about the role of different feeding strategies in nutritional niche differentiation among five Schizothoracinae species (Ptychobarbus leptosomus, PL; Gymnodiptychus pachycheilus, GP; Schizothorax kozlovi, SK; Schizopygopsis malacanthus, SM; and S. wangchiachii, SW). This study explored the role of feeding strategy differences in nutritional niche differentiation among sympatric Schizothoracinae fishes. We analyzed feeding/digestive organ morphology, diet composition, intestinal digestive enzyme activity, and microbial diversity in five species from the middle Yalong River. The results revealed dietary divergence: PL consumed small fish, invertebrates, and algae; GP/SK fed on invertebrates and algae; and SM/SW primarily ate algae. Additionally, α-amylase activity was lower in PL/GP/SK than in SM/SW (p < 0.05), while lipase activity was lower in SM/SW than in PL/GP/SK (p < 0.05), and PL exhibited the highest trypsin activity (p < 0.05). The intestinal microbial composition/diversity also varied: the PL group differed significantly from the GP + SK and SM + SW groups (p < 0.05), with Cetobacterium being dominant in the PL group and Clostridium being dominant in the other groups; the α diversity was highest in the SM + SW group and lowest in the PL group. PICRUSt2 predictions revealed significant differences in nutrient metabolism pathways between the PL group and the other groups (p < 0.05). Overall, the morphological differences in feeding/digestive organs and recent food intake may drive the dietary divergence, inducing adaptive changes in digestive enzymes and microbial diversity and ultimately promoting nutritional niche differentiation among sympatric Schizothoracinae species. Cereal-based complementary foods are widely consumed by children, yet limited data exist on their elemental composition and potential health risks. This study quantified As, Cd, Co, Cr, Cu, Fe, K, Mn, Mg, Mo, Ni, P, Pb, Se, Si, V, and Zn in eight commercial cereal-based products collected in Campo Grande, Brazil, using inductively coupled plasma optical emission spectrometry (ICP OES). Arsenic, cadmium, cobalt, and chromium were consistently below the detection limit. Phosphorus and potassium were the predominant elements across brands, followed by Fe, Mg, and Zn, with significant inter-brand variability (Kruskal–Wallis, p < 0.05). Lead was detected in Brands 1–5 (0.11–0.41 mg/kg), but it was below the limit of detection (LOD = 0.003 mg/L) in the other samples. Estimated daily intake (ID) values at 30 g/day and 90 g/day showed that Fe, Zn, Mn, and Se frequently met or exceeded dietary reference intakes for children aged 1–3 years, while Cu, Ni, and P remained below tolerable levels. Comparison with tolerable upper intake levels and ATSDR minimal risk levels indicated that higher consumption (90 g/day) could result in excess intake of Mn, Zn, and Se, with Pb contributing to cumulative hazard indices above the safety threshold (HI > 1). These findings emphasize the dual role of cereal-based foods as important nutrient sources and potential contributors to excessive trace element exposure in young children. Full article

Background: Migraine is a common, disabling neurological disorder with substantial genetic and environmental contributions. Dietary exposures are widely discussed by patients and clinicians as potential triggers or modifiers of attack frequency and severity. We synthesized contemporary evidence on dietary patterns, specific nutrients, and elimination strategies relevant to migraine prevention and management. Methods: We performed a narrative review of PubMed and Google Scholar (inception–August 2025) using combinations of “migraine”, “diet”, “nutrition”, “ketogenic”, “Mediterranean”, “omega-3”, and “gluten”. We prioritized randomized/controlled studies, recent systematic reviews/meta-analyses, and representative observational studies; evidence quality and applicability were appraised descriptively. Results: Higher adherence to a Mediterranean-style diet is associated with lower migraine frequency and disability in observational cohorts. Very low-calorie ketogenic diets significantly reduced monthly migraine attack frequency compared with isocaloric non-ketogenic comparators in an adult randomized controlled trial of participants with overweight or obesity (≥50% responder rate: 74% vs. 6%). Additional supportive evidence from uncontrolled studies, including those involving medium-chain triglyceride supplementation, further corroborates these findings. Omega-3 fatty acids (EPA/DHA) show prophylactic benefit in randomized trials and network meta-analyses, with favorable tolerability. Gluten-free diets may improve headaches in celiac disease and may help selected non-celiac patients. Alcohol (especially red wine) and high, irregular caffeine intake are frequently reported triggers, while evidence for specific foods/additives remains inconsistent. Weight loss and regular physical activity may further reduce burden in people with obesity. Conclusions: Current evidence supports recommending Mediterranean-style eating, consideration of omega-3 supplementation, and selective trials of ketogenic or elimination approaches in appropriate patients, alongside weight management and lifestyle optimization. High-quality, longer-duration RCTs using standardized dietary protocols and adherence biomarkers are needed to define dose–response relationships and enable personalized nutrition in migraine. This study focused on investigating the effects of dietary counseling on antioxidant intakes and how diet can influence reactive oxygen species (ROS) levels and consequently oxidative stress (OS) during pregnancy. At the end of the first trimester of pregnancy (12–13 week of pregnancy), 80 women were randomized into a control group and to an intervention group to receive individual dietary counseling. In the intervention group (n = 60), the dietary counseling about the Mediterranean diet (MD) was carried out during six online meetings every 15 days and focused on antioxidant nutrients and their intake. They were encouraged to follow the antioxidant-rich diet for 12 weeks, including increased consumption of antioxidant-rich foods such as ≥5 servings/day of vegetables, ≥2 servings/day of fruit, ≥8.5 servings/day of wholegrains and 3–4 servings/week of lean meat. In the control group (n = 20) dietary counseling included generic, standard of care guidance about nutrition in pregnancy and was only discussed during a single session. OS biomarkers, particularly (ROS) and Total Antioxidant Capacity (TAC) levels, were analyzed before and after the study duration in women’s serum. The results of the study showed lower ROS and higher TAC levels after intervention compared to the levels before intervention, as well as compared to the levels of the control group. In conclusion, dietary counseling improved the intake of antioxidant nutrients from food during pregnancy, as depicted by oxidative stress biomarkers’ levels, and may influence the observed impacts of these dietary patterns on pregnancy outcomes. Elderly populations often face significant challenges when it comes to dietary intake tracking, often exacerbated by health complications. Unfortunately, conventional diet assessment techniques such as food frequency questionnaires, food diaries, and 24 h recall are subject to substantial bias. Recent advancements in machine learning and computer vision show promise of automated nutrition tracking methods of food, but require a large, high-quality dataset in order to accurately identify the nutrients from the food on the plate. However, manual creation of large-scale datasets with such diversity is time-consuming and hard to scale. On the other hand, synthesized 3D food models enable view augmentation to generate countless photorealistic 2D renderings from any viewpoint, reducing imbalance across camera angles. In this paper, we present a process to collect a large image dataset of food scenes that span diverse viewpoints and highlight its usage in dietary intake estimation. We first collect quality 3D objects of food items (NV-3D) that are used to generate photorealistic synthetic 2D food images (NV-Synth) and then manually collect a validation 2D food image dataset (NV-Real). We benchmark various intake estimation approaches on these datasets and present NutritionVerse3D2D, a collection of datasets that contain 3D objects and 2D images, along with models that estimate intake from the 2D food images. We release all the datasets along with the developed models to accelerate machine learning research on dietary sensing. Full article
