This study aimed to assess whether hemp or buckwheat flour, and the replacement of water with cistus infusion, can simultaneously improve the nutritional value and antioxidant potential of wheat–chia bread while maintaining acceptable sensory quality. Control bread (WCh) and variants with hemp flour (WChH) or buckwheat flour (WChB), prepared with either water or cistus infusion (Cis), were baked. The chemical composition, amino acid profile and protein quality (AAS), fatty acid profile, phenolic compounds and antioxidant properties (TPC, FRAP), color (CIELAB), and texture were determined. E-tongue and e-nose analyses, as well as consumer evaluation, were also performed. Hemp flour most significantly increased the protein and dietary fiber content of bread and improved the PUFA content and PUFA/SFA ratio. Buckwheat flour shifted the lipid profile toward MUFA and yielded the highest lysine AAS, although lysine remained the limiting amino acid in all variants. Cistus infusion increased the polyphenol pool and antioxidant activity, with the strongest effect observed in the combined WChH/Cis and WChB/Cis systems. Electronic nose and an electronic tongue analyses confirmed significant differentiation of the flavor and aroma profiles among variants. Consumer evaluation showed a decrease in acceptance following hemp flour addition, which was partially mitigated by cistus infusion, while buckwheat variants maintained good sensory acceptance. This study evaluated the nutritional composition, techno-functional properties, and sensory acceptance of tortilla chips made from alternative flours derived from local ingredients, including maize, beet, flaxseed, bean, and chia. Three blends were assessed: maize with beans, maize with beet, and maize with chia–flaxseed. Significant differences (p < 0.05) were observed in the flours’ moisture, ash, protein, lipid, and mineral content. Flaxseed flour exhibited the highest protein content (40.03 g/100 g), while chia flour was notable for its lipid (32.25 g/100 g) and fiber (38.51 g/100 g) content. Bean and chia flour were rich in iron and zinc. Sensory evaluations, conducted with 300 consumers in Honduras, revealed general acceptance of all blends, with maize chips enriched with chia–flaxseed showing the highest preference (47.2%). Approximately 50% of participants reported consuming tortilla chips weekly, prioritizing taste, freshness, and price. Notably, over 40% expressed willingness to pay a premium for more nutritious, baked options. These results underscore the potential of alternative flours to enhance local diets and foster healthier eating habits. Moreover, the positive consumer response highlights a significant market opportunity for small and medium-sized enterprises (SMEs), promoting awareness of nutrition and public health in Honduras. Corn, Zea mays, is an ancestral food, culturally included in different forms in the Guatemalan diet. The most common form is in tortillas and tamales, which makes them suitable for incorporating other ingredients that increase their nutrient content. A sensory study was conducted with the aim of determining whether the appearance and texture of the tortilla and tamale remain acceptable when adding germinated chia seed flour (Salvia hispanica L). Germination was carried out for one day at 20 °C; it was prepared as flour and mixed with nixtamalized corn flour in a ratio of 10:90 and enough water to mold the tortillas; for the tamale, the same proportion of corn flour and germinated chia flour was used, and water and 8.6 percent oil were added. The tortillas and tamales were prepared and cooked in a traditional way by experts. For the acceptability test, 52 consumers were recruited, who signed the informed consent and subsequently evaluated the appearance and texture using a five-point hedonic scale (1 = I like it very much, 5 = I dislike it very much). The results indicate that the average acceptability of the appearance of the tortilla is 1.2 and the texture is 1.8. The average acceptability of the appearance of the tamale is 1.9 and the texture is 1.19. When comparing the acceptability of the appearance and texture of both preparations, a significant difference was found (p < 0.05), with the appearance and texture of the tamale being more acceptable. Bioinformatics has emerged as a valuable tool for screening drugs and understanding their effects. This systematic review aimed to evaluate whether in silico studies using anti-obesity peptides targeting therapeutic pathways for obesity, when subsequently evaluated in vitro and in vivo, demonstrated effects consistent with those predicted in the computational analysis. The review was framed by the question: “What peptides or proteins have been used to treat obesity in in silico studies?” and structured according to the acronym PECo. The systematic review protocol was developed and registered in PROSPERO (CRD42022355540) in accordance with the PRISMA-P, and all stages of the review adhered to these guidelines. Studies were sourced from the following databases: PubMed, ScienceDirect, Scopus, Web of Science, Virtual Heath Library, and EMBASE. The search strategies resulted in 1015 articles, of which, based on the exclusion and inclusion criteria, 7 were included in this systematic review. The anti-obesity peptides identified originated from various sources including bovine alpha-lactalbumin from cocoa seed (Theobroma cacao L.), chia seed (Salvia hispanica L.), rice bran (Oryza sativa), sesame (Sesamum indicum L.), sea buckthorn seed flour (Hippophae rhamnoides), and adzuki beans (Vigna angularis). All articles underwent in vitro and in vivo reassessment and used molecular docking methodology in their in silico studies. Among the studies included in the review, 46.15% were classified as having an “uncertain risk of bias” in six of the thirteen criteria evaluated. The primary target investigated was pancreatic lipase (n = 5), with all peptides targeting this enzyme demonstrating inhibition, a finding supported both in vitro and in vivo. Additionally, other peptides were identified as PPARγ and PPARα agonists (n = 2). Notably, all peptides exhibited different mechanisms of action in lipid metabolism and adipogenesis. The findings of this systematic review underscore the effectiveness of computational simulation as a screening tool, providing crucial insights and guiding in vitro and in vivo investigations for the discovery of novel anti-obesity peptides. Obesity is a global health problem and is increasing in prevalence in most countries. Although obesity affects all age groups, children are the most vulnerable sector. Functional foods are novel formulated foods containing substances (i.e., nutrients, phytochemicals, probiotics, etc.) that have potential health-enhancing or disease-preventing value. The research objective was to study the possible beneficial effects of providing a functional food made with amaranth flour, chia seed, and curcumin extract on the metabolism and behavior of a rat model of childhood obesity. Male Wistar rat pups from two litters of different sizes, a normal litter (NL) (10 pups) and a small litter (SL) (4 pups), were used. After weaning, the rats were fed a hypercaloric diet (HD) or an HD supplemented with the functional food mixture. Body weight and energy intake were measured for seven weeks, and locomotor activity, learning, and memory tests were also performed. At the end of the experiment, glucose and lipid metabolism parameters were determined. The results showed that in this model of obesity produced by early overfeeding and the consumption of a hypercaloric diet, anxiety-like behaviors and metabolic alterations occurred in the rat offspring; however, the provision of the functional food failed to reduce or prevent these alterations, and an exacerbation was even observed in some metabolic indicators. Interestingly, in the NL rats, the provision of the functional food produced some of the expected improvements in health, such as significant decreases in body weight gain and liver cholesterol and non-significant decreases in adipose tissue and leptin and insulin serum levels. Today, consumption of diets rich in saturated fat and fructose, associated with a variety of metabolic deregulations, has increased. The aim of this study was to evaluate the effect of dietary supplementation with a residue of defatted chia seed on a diet with low nutritional quality. To do this, C57BL/6 male mice were fed with the Control (C), Low-Nutritional-Quality (LNQ), or supplemented-with-chia-defatted-flour (LNQ+C) diets. After 12 weeks, the glucose and lactate levels were determined in the serum, liver, and kidney, along with reactive oxygen species (ROS) levels, antioxidant enzyme activity, reduced glutathione (GSH), and protein oxidation (AOPP). The LNQ diet increased the glucose and lactate levels (+25% and +50% approx. in the liver, with respect to the control group) and generated oxidative stress by modifying the levels of ROS and the activity of antioxidant enzymes, causing oxidative damage to proteins (+12% in the liver, with respect to the control). Chia supplementation helped to restore the glucose to control levels and modulate the endogenous antioxidant system, resulting in a decrease in protein oxidation products with no differences compared to the control group. In conclusion, supplementation with chia showed beneficial effects on the general health of mice, even when fed a low-nutritional-quality diet. Full article

The study investigated the effect of incorporating whole chia seeds (WCS) and defatted chia seed flour (DCF) into whole maize meal for ugali preparation. Both were incorporated at substitution levels of 3%, 6%, and 9% separately, and the resulting treatments subjected to laboratory analysis. In addition, ugali samples were prepared from all the resulting flour formulations and subjected to consumer acceptability assessment. Incorporation of both DCF and WCS resulted in increased water absorption capacity (ranging from 0.78 to 0.98 g/mL), swelling index (ranging from 0.15 to 3.25 mL/g), and swelling capacity (ranging from 2.46 to 5.74 g/g). WCS decreased the bulk density and oil absorption capacity. DCF, however, resulted in an increase in bulk density and oil absorption capacity. Both DCF and WCS lowered the lightness (L*) of the products. Proximate composition ranged from 4.78 to 7.46% for crude fat, 7.22% to 9.16% for crude protein, and 1.74 to 4.27% for crude fiber. The obtained results show the potential of chia seeds as a good fortificant of maize flour since it resulted in nutritionally superior products (crude ash, crude protein, crude fat, and energy value) when compared to control. The freshly prepared ugali samples were generally acceptable to the panelists up to 9% WCS and 6% DCF substitution levels. Full article

Eating practices are changing due to awareness about meat consumption associated with social, ethical, environmental, and nutritional issues. Plant-based meat analogs are alternatives to conventional meat products that attempt to mimic all the inherent characteristics of meat fully. Therefore, the search for raw materials that provide these characteristics is increasing. Chia seeds have excellent potential as a functional ingredient in these products since they are a source of proteins, lipids, and fibers. Allied with this, the full use of chia through the seed and its fractions highlights the numerous beneficial characteristics of the formulation regarding nutritional characteristics and techno-functionality. Therefore, this review aims to highlight the potential of chia seed and its fractions for applications in meat-like products. Chia seeds are protein sources. Chia oil is rich in polyunsaturated fatty acids, and its application in emulsions ensures the oil’s nutritional quality and maintains its technological characteristics. Defatted chia flour has a high protein content and can be used to extract chia mucilage. Due to its high emulsification capacity, chia mucilage is an effective ingredient for meat products and, consequently, meat-like products. Therefore, this literature review demonstrates the strategic potential of using chia seeds and their fractions to develop meat analogs. Full article

Consumption of fried foods is associated with a higher risk of cardiovascular and other diseases; therefore, consumers are looking to reduce fat intake. We evaluated the effect of high-protein breaders and fiber on oil absorption and quality attributes in chicken nuggets, using flour blends (wheat, chickpea, coconut, oil-quinoa-chia), soy protein concentrate, and brewers’ spent grain. We evaluated the chemical composition, water and oil retention capacity (ORC), viscosity profile, and flour particle size distribution, along with the developed breaders (Formulation 1 and 2) and a commercial breader (CB), in addition to texture, color, fat, and moisture contents of the fried chicken nuggets prepared with the developed breaders and the CB. The total dietary fiber content (TDF) of the nuggets breaded with only Formulation-1 and CB was determined. Nuggets breaded with Formulation-1 showed lower (p ≤ 0.05) ORC, better moisture retention (67.6%), and more TDF (4.5% vs. 2.3%, p ≤ 0.05) compared to CB-breaded nuggets. Nuggets with Formulation-1 showed the expected texture and color characteristics for fried products. Formulation-1 has the potential to be used as a breader due to its moisture, reduced ORC, and the texture and color it imparts to the fried nuggets, providing higher amounts of nutrients and possible health benefits. Adequate intake of mineral nutrients and amino acids is essential for nutrition in the Western diet, where deficiencies of minerals such as Zn, Fe, and good quality proteins are highly prevalent in vulnerable populations in Latin America and the Caribbean (LAC). The aim of the present study was to evaluate the mineral and amino acid content of Kurugua (KWF) wholemeal flour and a derived product (9% K w/v, 0.8% chia oil (w/v), and 1% sweetener v/v). Proteins were analyzed by Microkjeldhal, minerals Na, K, P, Ca, Mg, Zn, Cu, Mn, and Fe by AOAC, and amino acid profile by HPLC-DAD methods. KWF presented a high content of Mg and Zn (207.63 ± 5.27 and 15.76 ± 0.04 mg/100 g, respectively). A KWF-based drink provides 5.05 mg Zn/100 g, equivalent to 46% of the recommended daily intake (RDI) in a 200 mL serving of the beverage. Amino acids (glutamic acid + glutamine) and (aspartic acid + asparagine) were the most abundant in KWF (112.2 and 245 mg of aa/g protein, respectively), with 18.0% of total protein. A serving of KWF-based drink contains about 3.02 g of protein and the essential amino acids Hys, Val, Met, Phe, Ile, Leu, and Lys (31.6, 213, 198, 89.3, 186, 3.7, and 194.3 mg AA/200 mL, respectively). The ready-to-drink Kurugua drink takes full advantage of the wholemeal flour of an indigenous fruit such as Kurugua, providing a source of zinc and an adequate amount of essential amino acids and expanding the supply of healthy products within the framework of food safety. The consumption of food supplements in Latin America represents 7% of the world’s consumption, as reported by the Latin American Alliance of Responsible Nutrition (ALANUR) in 2021. Developing high-quality Andean-grain supplements could be interesting for enhancing the country’s food security. A supplement has been developed that contains high-quality protein and carbohydrates sourced from a blend of precooked quinoa and amaranth flours. Additionally, it includes omega-3 and omega-6 fatty acids derived from microencapsulated sacha inchi and chia oils, along with vitamins and minerals. The process for obtaining the precooked flours involved cooking at 75 °C for 12 min, followed by drying in a tray dryer at 70 °C for 8–9 h, grinding in a disk mill, and sieving to achieve a particle size of 150 µm. Pasta tests were conducted using RVA and DSC to check their gelatinization. The supplement’s composition adheres to the mandatory nutrient requirements specified by the Ecuadorian standard NTE INEN1334-2, 2011. Moreover, the supplement satisfies the sensory criteria related to taste and consistency. To evaluate the impact of the processing on the nutrients’ attributes, assessing their bioaccessibility becomes significant. To accomplish this, the static in vitro digestion method was employed, both before and after the digestion process. The digestion protocol involves the following steps: an oral phase with amylase, a gastric phase with pepsin, and an intestinal phase with pancreatin. The resulting digest was subsequently centrifuged and filtered. The apparatus utilized consisted of a reactor equipped with precise controls for temperature, pH, and agitation. The in vitro digestibility percent for the supplement shake was determined to be 96.7% (IVD). Essential amino acids were quantified through HPLC analysis with a fluorescence detector. As a result, lysine and histidine exhibited the highest bioaccessibility values of 97% and 79%, respectively, while methionine had the lowest value of 32%. The current study analysed consumer preferences for bread, an important food in the diets of Central European countries. The study included a conjoint experiment on a representative sample of 547 adult consumers in Slovenia. The following bread attributes: functional ingredients (chia seeds, linseed, quinoa, and Tartary buckwheat); nutritional claims (low salt, high fibre, and high protein); and other claims (organic, free from additives, flour from Slovenia, and wholegrain) were studied. The results showed the strongest relative importance for functional ingredients (a mean relative importance of 83.9%). In addition, a deeper insight into consumer preference was investigated by a recently developed modular instrument for food-related lifestyles. Latent class cluster analysis (LCA) enabled the identification of four consumer segments (uninvolved, conservative, health-conscious, and moderate) with different preferences toward selected functional ingredients, nutrition, and other claims. The results provide insights that allow for a better understanding of consumer preferences for functional ingredients and claims, and new perspectives for bread marketing to different consumer segments based on food-related lifestyles. Identifying the drivers that affect bread purchasing and consumption can support reformulation activities and product promotion in the direction of reinforcing healthier food choices. Full article

Globally, 1 in 2 people want to consume more plant-based foods, so developing nutritionally balanced foods for this area is a response to a growing need of the population. The objective was to develop snack alternatives with amaranth, quinoa and chia seeds, supplemented with protein. For this purpose, three mixtures were prepared, the first of rice flour with lentil flour (M1), another of rice flour with pea flour (M2) and another of wheat flour with chickpea flour (M3). The same amount of amaranth, quinoa and chia seeds were added to all three. The same proportion of the rest of the ingredients was used, varying only the seasonings. The cooking time was 10 min at 180 °C in all cases. The preparations were carried out in triplicate and analyses in duplicate. Once prepared, protein, total fat, ash, moisture and fiber were determined using official analytical techniques, carbohydrates using difference, energy value using calculations and fatty acid profile using gas chromatography. For statistical analysis, the Tukey test was applied. The highest protein value was 15.84 ± 0.34 g% (M1). The highest lipid value was 21.44 ± 0.13 g% (M3), providing omega 9, 3 and 6 fatty acids and, to a much lesser extent, saturated fatty acid. All options have a good contribution of dietary fiber: 7.39 ± 0.14 g% (M1); 7.71 ± 0.09 g% (M2) and 7.55 ± 0.23 g% (M3). The acceptability was above 94% in all cases. It was possible to formulate healthy snacks suitable for vegetarians. Full article

By-products from the industrialization of oilseeds, particularly chia, can be sustainably used for the development of new functional products. In this work, wheat breads supplemented with up to 10 mg of chia expeller hydrolysate/g of flour were prepared, obtaining fortified breads with acceptability for consumption, according to a preliminary consumer research study based on an affective test employing a five-point hedonic scale of global acceptance. In this context, protein hydrolysates of the chia expeller were produced using Alcalase, reaching a degree of hydrolysis of 54.3 ± 1.6% with an antioxidant activity of 55.8 ± 0.4% after 6 h incubation at 25 °C in the presence of the enzyme. These peptides showed appropriate techno-functional properties and chemical compositions suitable for the further development of bakery products. Taken together, our approach and the development of a fortified bread with plant-based bioactive peptides provide a novel and eco-friendly alternative for the recovery of nutrients from agro-industrial waste. More importantly, these enriched breads could exert beneficial effects on human health by exploiting the antioxidant properties of functional peptides derived from the chia expeller. Full article

This study aims to determine the effects of various alkaline pHs on the nutritional and functional properties of protein isolated from defatted chia flour (DCF). The DCF isolated using alkali extraction method at pH 8.5, 10.0, and 12.0 were coded as CPI-8.5, CPI-10.0, and CPI-12.0, respectively. The highest extraction yield and protein recovery yield was demonstrated by CPI-12.0 (19.10 and 59.63%, respectively), with a total protein content of 74.53%, and glutelin showed the highest portion (79.95%). The CPI-12.0 also demonstrated the most elevated essential (36.87%), hydrophobic (33.81%), and aromatic (15.54%) amino acid content among other samples. The DCF exhibited the highest water (23.90 gg−1) and oil (8.23 gg−1) absorption capacity, whereas the CPI-8.5 showed the highest protein solubility (72.31%) at pH 11. DCF demonstrated the highest emulsifying capacity at pH 11 (82.13%), but the highest stability was shown at pH 5 (82.05%). Furthermore, CPI-12.0 at pH 11 shows the highest foaming capacity (83.16%) and stability (83.10%). Despite that, the CPI-10.0 manifested the highest antioxidant capacity (DPPH: 42.48%; ABTS: 66.23%; FRAP: 0.19), as well as ACE-I (35.67%). Overall, the extraction pH had significant effects in producing chia protein isolates (CPI) with improved nutritional and functional qualities. Full article
