Drying chili peppers is a crucial technique for their preservation, as it extends shelf life while minimizing the degradation of high-value bioactive compounds. This study evaluated the impact of modulated solar irradiation on the drying kinetics and quality retention of “Chile de Agua” (Capsicum annuum L.) peppers across three maturity stages (unripe, ripe, and overripe). Two cylindrical solar dryers were employed: a conventional solar dryer (CSD) and a novel Solar Dryer with Dynamic Irradiance Control (SDIC) utilizing Polymer Dispersed Liquid Crystal (PDLC) technology. Drying behavior was analyzed through moisture ratio and drying rate, while quality attributes were assessed via color parameters, capsaicinoid content, and flavonoid profiling using UPLC-PDA-ESI-MS. Results demonstrated that the maturity stage significantly influences drying kinetics; unripe fruits exhibited the fastest dehydration rate, reducing drying time by approximately 14% compared to overripe fruits. Regarding quality, the CSD better preserved color (ΔE of 15.29 for ripe chilies). At the same time, the SDIC system significantly favored the retention of bioactive compounds, maintaining higher concentrations of total capsaicinoids (up to 1700 µg/g DW) and flavonoids such as luteolin (15.9 mg/100 g DW) and quercitrin (11.5 mg/100 g DW), especially in ripe fruits. The findings suggest that optimal processing requires selecting the drying method based on the targeted final use: CSD for color preservation in unripe chilies, or SDIC for maximizing bioactive retention in ripe fruits. Urolithiasis (UL) is the presence of stones in the kidneys or urinary tract; its prevalence has increased worldwide. Thus, strategies have been sought to reduce it and one of them is the use of medicinal plants due to their accessibility, low cost, and cultural traditions. Studies on traditional medicinal plants in UL mainly documented results of litholytic and urinary parameters. Although, stone formation is related to oxidative stress and inflammation, and only a few studies are focused on these types of biomarkers. Thus, the aim of the present review was to summarize studies showing the antioxidant and anti-inflammatory effects of traditional medicinal plants used in UL management. We performed a scoping review; the database sources used were MEDLINE/PubMed, Google Scholar, SpringerLink, Scielo and Redalyc. From a total of 184 studies screened, six were included from China (2), India (3), and Corea (1). These studies have shown the antioxidant and anti-inflammatory effects of traditional medicinal plants, including Glechoma longituba (G. longituba), Bergenia ligulate (B. ligulate), Lygodium japonicum (L. japonicum), Citrus limon (C. limon), Xanthium strumarium (X. strumarium) and Tribulus terrestris (T. terrestris). They have also described their molecular mechanism of antioxidant and anti-inflammatory effects through the activation of antioxidant genes induced by Nrf2 or by suppressing the inflammatory gene expression by the inhibition of NFκ-B. These effects could be modulated by their bioactive compounds, such as polyphenols, flavonoids, tannins, saponins, and terpenes, present in these plants. This review summarizes the antioxidant and anti-inflammatory effects of traditional medicinal plants and highlights their molecular mechanisms of action and main bioactive compounds. This evidence may be used in biotechnology and synthetic biology areas for the development of new products from plant-derived compounds to reduce the high recurrence rates of UL. Full article

(1) Background: Plastic contamination is on the rise, despite ongoing research focused on alternatives such as bioplastics. However, most bioplastics require specific conditions to biodegrade. A promising alternative involves using microorganisms isolated from landfill soils that have demonstrated the ability to degrade plastic materials. (2) Methods: Soil samples were collected, and bacteria were isolated, characterized, and molecularly identified. Their degradative capacity was evaluated using the zone of clearing method, while their qualitative and structural degradative activity was assessed in a liquid medium on poly(butylene succinate) (PBS) films prepared by the cast method. (3) Results: Three strains—Bacillus cereus CHU4R, Acinetobacter baumannii YUCAN, and Pseudomonas otitidis YUC44—were selected. These strains exhibited the ability to cause severe damage to the microscopic surface of the films, attack the ester bonds within the PBS structure, and degrade lower-weight PBS molecules during the process. (4) Conclusions: this study represents the first report of strains isolated in Yucatán with plastic degradation activity. The microorganisms demonstrated the capacity to degrade PBS films by causing surface and structural damage at the molecular level. These findings suggest that the strains could be applied as an alternative in plastic biodegradation. Full article

Avocado landraces have gained great interest due to their importance in maintaining biodiversity and the presence of bioactive compounds in their fruit, depending on fruit tissues or ripening stages. This study aimed to evaluate the morpho-physicochemical and nutritional components of the peel, pulp, and seed tissues from Lagunero (LA) and Criollo (CA) avocado landraces at different ripening stages. Additionally, phenolic profiles were analyzed by using UPLC-DAD/ESI-MS, and a principal component analysis (PCA) was constructed to determine variations among the determined contents from avocado landraces, fruit tissues, and ripening stages. The CA showed a 30% higher fruit weight and higher percentages of seed (0.52%) and peel (3.62%) weight yields as compared to the LA. Ripening significantly affected the physical characteristics of LA and CA, and a substantial decrease in hardness (83%) after 4 days of storage. In LA, ripening resulted in an increase in fat content in both the peel and pulp. In contrast, CA showed an increase in protein content in the peel and pulp but a decrease in seeds; fat content increased significantly in the pulp of CA and carbohydrates remained the predominant component in all tissues, though they decreased slightly in CA peels during ripening. The ripe LA peel presented approximately 50% more total phenolic compounds than other tissues. The unripe CA peel showed a higher antioxidant capacity according to DPPH (3831.97 µMol Eq Trolox/g dw) and ABTS+ (3674.70 µMol Eq Trolox/g dw) assays. The main phenolic compounds identified in the avocado peel were chlorogenic acid, catechin, quercetin-3-O-hexoside, quercetin-3-O-pentoside, coumaric acid, caffeic acid, neochlorogenic acid, ferulic acid, kaempferol-3-O rhamnoside, and quercetin-3-O-rhamnoside. The PCA analysis revealed a strong correlation between chlorogenic acid and caffeic acid with TPC, while catechin was more closely related to antioxidant activity. These findings suggest that peel and seed tissues of avocado landraces, often considered byproducts, are valuable sources of bioactive compounds with high antioxidant potential. Full article

As one of the main chili varieties in Mexico, Yahualica chili requires year-round availability. This study examines the feasibility of five drying methods (open-air, solar, microwave, freeze-drying and shade drying) used to preserve this culturally and economically valuable product. The results show the drying duration and rate for solar drying with varying air temperatures (40, 50, 60, and 70 °C) and airflows (150, 200, 250, and 300 m3/h) and microwave drying with varying power levels (90, 160, 360, and 600 W). Convection drying efficiency increased with temperature and airflow, according to the findings. Microwave drying significantly reduced drying time, and higher powers further accelerated moisture removal. Open sun and shade drying was the slowest, and open sun drying was also susceptible to factors compromising quality. Total Phenolic Content (TPC), Total Capsaicinoids Content (TCC), and antioxidant activity had a positive effect, since the drying methodologies favored the release of these compounds. Full article

This study addresses the need for effective protein extraction and characterization to unlock the potential of underutilized plant resources like Brosimum alicastrum Swartz nuts, aiming to enhance their value as functional ingredients in food applications. Extraction methods, including pH modulation, ultrasound-assisted extraction, and enzymatic hydrolysis, are employed to enhance technofunctional and bioactive properties. The protein extracts are evaluated for solubility, emulsifying capacity, foaming properties, and water/oil-holding capacities to assess their technofunctional potential. Additionally, the bioactive properties, such as antioxidant and anti-inflammatory activities, are analyzed to explore potential health benefits. The results demonstrate that integrated extraction techniques significantly improve the yield and quality of Brosimum alicastrum Swartz nut proteins. Enzymatic hydrolysis, in particular, produces hydrolysates with superior bioactive properties. These findings highlight the potential of Brosimum alicastrum Swartz proteins as valuable ingredients for the food and pharmaceutical industries, promoting the utilization of underexploited plant resources for sustainable and health-promoting applications. The valorization of byproducts from the sugarcane industry represents a potential alternative method with a low energy cost for the production of metabolites that are of commercial and industrial interest. The production of exopolysaccharides (EPSs) was carried out using the yeast Suhomyces kilbournensis isolated from agro-industrial sugarcane, and the products and byproducts of this agro-industrial sugarcane were used as carbon sources for their recovery. The effect of pH, temperature, and carbon and nitrogen sources and their concentration in EPS production by submerged fermentation (SmF) was studied in 170 mL glass containers of uniform geometry at 30 °C with an initial pH of 6.5. The resulting EPSs were characterized with Fourier-transform infrared spectroscopy (FT-IR). The results showed that the highest EPS production yields were 4.26 and 44.33 g/L after 6 h of fermentation using sucrose and molasses as carbon sources, respectively. Finally, an FT-IR analysis of the EPSs produced by S. kilbournensis corresponded to levan, corroborating its origin. It is important to mention that this is the first work that reports the production of levan using this yeast. This is relevant because, currently, most studies are focused on the use of recombinant and genetically modified microorganisms; in this scenario, Suhomyces kilbournensis is a native yeast isolated from the sugar production process, giving it a great advantage in the incorporation of carbon sources into their metabolic processes in order to produce levan sucrose, which uses fructose to polymerize levan. We assessed the emergence, growth, phenotypic plasticity and quality of both landrace and commercial tomato fruits under conditions of elevated temperature and increased CO2 concentrations [CO2]. Four growth chambers were used in which temperature and [CO2] differed: LTLC (30 °C, 400 µmol CO2 mol−1), LTHC (30 °C, 1200 µmol CO2 mol−1), HTLC (40 °C, 400 µmol CO2 mol−1) and HTHC (40 °C, 1200 µmol CO2 mol−1). The acronyms indicate the following: LT, low temperature; HT, high temperature; LC, low [CO2]; and HC, high [CO2]. Elevated temperatures significantly affected emergence in both genotypes, with the rate decreasing below 35% at HT compared to over 95% at LT. At HT, seedlings died before producing true leaves. This increase in temperature negatively affected plant growth, though HC produced some compensatory growth promotion. Regarding HT and CO2 interactions, HC failed to counteract the negative impacts of HT. The commercial variety showed a higher relative distance plasticity index (RDPI) under HT, whereas the landrace showed greater plasticity in plant height under HC. The largest fruit sizes were observed at LT, whereas no fruits were found at HTLC. Elevated temperature at HC resulted in enhanced total phenol content and increased antioxidant activity in the fruits. Full article

The purpose of this paper was to evaluate the effect of thermal treatment (TT: 121 ± 2 °C, 15 min) on the composition of commercial sweeteners diluted in water (10 °Brix). Additionally, we evaluated the impact of this TT on metabolic responses in C57BL/6 mice during a 24-week treatment. The sweeteners included in this study were sucrose (SC), glucose-63 (GLU63), agave syrup (AS), sucralose (SUC), and steviol glycosides (STG). HPLC analysis showed changes in the concentration of simple sugars of GLU63 and AS after TT. Importantly, in all sweeteners, TT modulated metabolic responses in mice. The mice drinking thermally treated sweetener solution showed an increase of 10–13% (p < 0.05) in food intake (AS, SUC, and STG), beverage intake (2–21%; SC and GLU63), weight gain (38%; SUC), energy (10–13%; AS, SUC, and STG), glucose levels (11–17%; SC and STG), GLP-1 (30%; SC) and insulin (88%; AS) release, and the generation of protein carbonyl (SC) and malondialdehyde (all sweeteners tested) compared to mice drinking solution without TT. In conclusion, TT of sweetener solutions accentuates the metabolic responses of healthy mice, which can be related to overweight and its comorbidities. Full article

Phytochemicals are natural compounds found in plants that have potential health benefits such as antioxidants, anti-inflammatory and anti-cancer properties, and immune reinforcement. Polygonum cuspidatum Sieb. et Zucc. is a source rich in resveratrol, traditionally consumed as an infusion. In this study, P. cuspidatum root extraction conditions were optimized to increase antioxidant capacity (DPPH, ABTS+), extraction yield, resveratrol concentration, and total polyphenolic compounds (TPC) via ultrasonic-assisted extraction using a Box–Behnken design (BBD). The biological activities of the optimized extract and the infusion were compared. The optimized extract was obtained using a solvent/root powder ratio of 4, 60% ethanol concentration, and 60% ultrasonic power. The optimized extract showed higher biological activities than the infusion. The optimized extract contained 16.6 mg mL−1 resveratrol, high antioxidant activities (135.1 µg TE mL−1 for DPPH, and 230.4 µg TE mL−1 for ABTS+), TPC (33.2 mg GAE mL−1), and extraction yield of 12.4%. The EC50 value (effective concentration 50) of the optimized extract was 0.194 µg mL−1, which revealed high cytotoxic activity against the Caco-2 cell line. The optimized extract could be used to develop functional beverages with high antioxidant capacity, antioxidants for edible oils, functional foods, and cosmetics. Full article

Peach is a fruit highly appreciated by consumers; however, it is highly perishable, so drying is an alternative to preserve its physical and chemical properties. In this study, the effect of drying in natural and forced convection at three different temperatures (40 °C, 45 °C and 50 °C) and solar drying with two air velocities (1 m/s and 3 m/s) on the color, texture, total phenol content and antioxidant capacity of peach (Prunus persica (L.) Batsch), were evaluated. The experimental data of the drying kinetics were adjusted to five different mathematical models (Page, Logarithmic, Two-term exponential, Wang and Singh, and Verma et al.). The model that best represented the experimental data in natural convection was the Wang and Singh model (r2 > 0.998; RMSE < 0.016; χ2 < 2.85 × 10−4); in forced convection (45 °C and 50 °C), it was the Verma et al. model (r2 > 0.997; RMSE < 0.025; χ2 < 8.12 × 10−4); and finally, for solar drying, it was the Logarithmic model at 3 m/s (r2 = 0.999; RMSE < 0.012; χ2 < 1.12 × 10−4) and Wang and Sing model (1 m/s) (r2 = 0.998; RMSE = 1.31 × 10−4; χ2 = 1.92 × 10−4). The highest color difference was in samples dried by the natural convection method. The highest values of hardness were obtained by the solar drying method. The value of chlorogenic acid increased with the temperature of natural convection, while the concentration of neochlorogenic acid increased with the temperature at forced convection. For solar drying, the values of chlorogenic acid were greater at 3 m/s; in contrast, the neochlorogenic acid was greater at 1 m/s. Full article

Propolis collected by stingless bees is a valuable biocultural resource and a source of bioactive compounds. Methodologies to establish both the geographic origin and the potential pharmacological activity of propolis of stingless bees are required to regulate their sustainable use. The aim of this study was to classify Melipona beecheii propolis according to its phenolic compound content and potential pharmacological activity, using in vitro assays and statistical methodologies of multivariate analysis, hierarchical cluster analysis, and principal component analysis. Propolis samples were collected from seven states in southeastern Mexico. Total phenolic content and flavonoids were determined spectrophotometrically, and antioxidant, anti-inflammatory, and antimicrobial activities were evaluated. Both total phenolic content and flavonoids, and in vitro bioactivity potential of propolis extracts showed significant variations. Multivariate analysis, hierarchical cluster analysis, and principal component analysis enabled us to distinguish and classify propolis produced by M. beecheii according to similarity in terms of total phenolic content, in vitro bioactivity potential, and geographical origin. This strategy could be used to establish regulations for sustainable use, marketing, and industrial applications. Full article

In the present work, the total phenolic content (TPC), total flavonoids content (TFC), antioxidant activity, and phenolic profile from pulp (PU) and peel (PE) extracts obtained from the ciricote (Cordia dodecandra A. DC.) fruit by ultrasound-assisted extraction (UAE) in immature (IM), semimature (SM), and mature (MM) stages were investigated. The effect of the diameter of the ultrasonic probe in the IM stage was also evaluated. The TPC and antioxidant activity in IM fruit extracts by UAE increased up to 11.01 and 23.82 times, respectively, compared to the maceration method. The main phenolic compounds in the PE of IM fruit identified by UPLC-DAD-ESI-MS/MS were quantified as caffeic acid, rutin, and rosmarinic acid, distributed as 45.82, 41.45, and 12.72%, respectively. The PE extracts of IM fruit obtained with the 3 mm diameter probe had 1.27, 2.44, and 1.37 times the TPC (19.93 ± 0.28 mg GAE (Gallic equivalents) g−1 dw), TFC (34.85 ± 4.99 mg RE (Rutin equivalents) g−1 dw), and antioxidant activity (122.09 ± 17.09 µTE (Trolox equivalents) g−1 (DPPH)), respectively, compared to those obtained with a 13 mm diameter probe. The results obtained suggest the use of the ciricote native fruit as a source of bioactive compounds, directly as fresh fruit or processed, thus helping to increase its production and consumption. The properties of biological-chemical chitosan (BCh) films from marine-industrial waste and a non-conventional Ramon starch (RS) (Brosimum alicastrum) were investigated. Blended films of BCh/RS were prepared to a volume ratio of 4:1 and 1:4, named (BChRS-80+q, biological-chemical chitosan 80% v/v and Ramon starch, BChRS-20+q, biological-chemical chitosan 20% v/v and Ramon starch, both with quercetin), Films from commercial chitosan (CCh) and corn starch (CS), alone or blended (CChCS-80+q, commercial chitosan 80% v/v and corn starch, CChCS-20+q commercial chitosan 20% v/v and corn starch, both with quercetin) were also prepared for comparison purposes. Films were investigated for their physicochemical characteristics such as thickness, moisture, swelling, water-vapor permeability, and water solubility. In addition, their mechanical and structural properties were studied using Fourier Transform Infrared Spectroscopy (FTIR), Thermogravimetric analysis (TGA) and Scanning Electron Microscopy (SEM) techniques. Antioxidant activity was evaluated as radical scavenging, and antimicrobial effect was also determined. The BCh and RS films presented similar tensile strength values compared with commercial biopolymers. Only films with chitosan presented antioxidant and antimicrobial activity. The FTIR spectra confirmed the interactions between functional groups of the biopolymers. Although, BChRS-80+q and BChRS-20+q films exhibited poor mechanical performance compared to their commercial counterparts, they showed good thermal stability, and improved antioxidant and antimicrobial activity in the presence of quercetin. BChRS-80+q and BChRS-20+q films have promising applications due to their biological activity and mechanical properties, based on a novel material that has been underutilized (Ramon starch) that does not compete with materials for human feeding and may be used as a coating for food products. The role of the oral microbiome and its effect on dental diseases is gaining interest. Therefore, it has been sought to decrease the bacterial load to fight oral cavity diseases. In this study, composite materials based on chitosan, chitosan crosslinked with glutaraldehyde, chitosan with zinc oxide particles, and chitosan with copper nanoparticles were prepared in the form of thin films, to evaluate a new alternative with a more significant impact on the oral cavity bacteria. The chemical structures and physical properties of the films were characterized using by Fourier transform infrared spectroscopy (FTIR,) Raman spectroscopy, X-ray photoelectron spectroscopy (XPS), elemental analysis (EDX), thermogravimetric analysis (TGA), X-ray diffraction (XRD), scanning electron microscopy (SEM), and contact angle measurements. Subsequently, the antimicrobial activity of each material was evaluated by agar diffusion tests. No differences were found in the hydrophilicity of the films with the incorporation of ZnO or copper particles. Antimicrobial activity was found against S. aureus in the chitosan film crosslinked with glutaraldehyde, but not in the other compositions. In contrast antimicrobial activity against S. typhimurium was found in all films. Based on the data of present investigation, chitosan composite films could be an option for the control of microorganisms with potential applications in various fields, such as medical and food industry.
