Dear Colleagues,
Polyphenols such as anthocyanins found in grape skins, tannins found in grape seeds, catechins found in green tea, chlorogenic acid found in coffee, quercetin found in onions and broccoli, and isoflavones found in soybeans have antioxidant, anti-inflammatory, anti-aging, anti-fibrotic, antimicrobial, and anti-apoptotic effects. Many new functions of antioxidants have been reported, and they may also be used in dietary supplements and functional foods. This is a new research direction with many promising properties.
By integrating advanced tools and methodologies such as the nanoencapsulation of natural products and responsive hydrogels, gel systems rich in natural extracts are well positioned to meet the demands of modern consumers and industries for multifunctional and environmentally friendly products.
The applications of gels for food enrichment are wide, and it is a future challenge to explore the mechanism of action between the gel structure and the functionality of bioactive compounds. In addition, naturally derived hydrogels (hyaluronic acid, etc.) enhance the treatment of various diseases and induces tissue regeneration. On the other hand, gelled biofilms can cause a variety of infectious diseases. This Special Issue aims to pave the way for technological advances and the development of novel functional gels for the preparation of gel matrices rich in bioactive compounds, drug delivery, characterization, and related applications. We sincerely welcome submissions focusing on cutting-edge technologies and functional gels.

Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Gels is an international peer-reviewed open access monthly journal published by MDPI.
