Special Issue Information

Dear Colleagues,

Enzymes play a crucial role in biocatalysis and fermentation processes due to their ability to catalyze specific biochemical reactions under mild conditions with high efficiency and selectivity. In biocatalysis, enzymes are employed as biological catalysts to convert substrates into desired products, often enhancing reaction rates and reducing the need for harsh chemical reagents. Their specificity allows for targeted transformations, which is particularly valuable in producing pharmaceuticals, fine chemicals, food, and biofuels. In fermentation, enzymes contribute to the breakdown of complex biomolecules into simpler compounds that microorganisms can metabolize. Enzymatic activity in fermentation also influences product yield, purity, and process efficiency. The integration of enzymes in these fields supports sustainable and green chemistry approaches by minimizing waste disposal and energy consumption. Furthermore, advances in enzyme engineering and immobilization techniques have expanded their applicability, improving stability and reusability in biotechnological and industrial bioprocesses.

This Special Issue will focus on publishing innovative research and review articles that discuss the enzyme application in biocatalysis and fermentation. It also welcomes articles that utilize axenic cultures or microbial consortia in bioresource valorization, biomanufacturing, and fermentation technology.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Fermentation is an international peer-reviewed open access monthly journal published by MDPI.
