Special Issue Information

Dear Colleagues,                

We are delighted to let you know about a new Special Issue on “Food and Wine Pairing” in Beverages (an international, peer-reviewed, open-access journal on research, development, and public policy related to beverages).

Food and drink pairing has been growing in popularity and interest among academics, practitioners, and consumers.  Food and wine pairing presents a strategy to differentiate firms and consumer experiences to meet market segment demands for unique, memorable experiences and enhance quality of life.  Therefore, the adoption of food and wine practices provides firms with an opportunity for competitive advantage and increased sales.

In this Special Issue, we will recognize papers that expand the boundaries of our existing knowledge in this field. While research and anecdotal evidence demonstrate the impact of a variety of factors on these pairing perceptions based on liking, environmental impacts, personal preferences, and food-wine elements, a large number of questions remain, and a better understanding of these relationships will benefit consumers, practitioners, and scholars. Topic areas may include (but are not limited to) the following: how we perceive pairings; pairing practices; pairing by wine style; pairing by food type; the impact of other factors in the pairing process, specialty pairing menus; the impact of elements such as umami, kokumi, or oleogustus; food-wine and bridging networks; the impact of pairings on quality of life; and new methods in assessing pairing perceptions.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. A guide for authors and other relevant information for submission of manuscripts is available on the Instructions for Authors page. Beverages is an international peer-reviewed open access quarterly journal published by MDPI.

Please visit the Instructions for Authors page before submitting a manuscript. The Article Processing Charge (APC) for publication in this open access journal is 1600 CHF (Swiss Francs). Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
