Special Issue Information

Dear Colleagues,

In recent years, there has been an increasing concern of consumers about achieving a healthier life through the consumption of health-promoting foods. As a consequence, the industry has responded by formulating new products with bioactive compounds from natural sources to meet the demands of the public. Additionally, the sources for such products are continuously diversifying and expanding, shedding light on materials and by-products that were previously ignored. Research on wastewater streams, stems, leaves, and other agricultural derivatives, has prompted the extraction and characterization of valuable compounds, such as polyphenols, phytosterols, terpenoids, carotenoids, tocopherols, among others, which have proven to be biologically active and beneficial to health. Such benefits include, but are not limited to, antitumoral, antioxidant, anti-inflammatory, antimicrobial, and antifungal properties. Even though extensive research has been carried out on this topic, the field continues evolving rapidly; thus, emerging technologies are allowing the discovery of new materials, methodologies, and applications. Therefore, we invite researchers to submit original research that encompasses novel technologies for the extraction, identification, production, and assessment of the functionality of bioactive compounds obtained from natural sources, as well as innovative applications of such materials on food products targeted for a new generation of health-conscious consumers.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
