Dear Colleagues,
This Special Issue, titled “New Challenges in Environmental Microbiology and Food and Nutrition Science”, delves into the convergence of environmental microbiology and food and nutrition science, addressing novel obstacles and prospects while incorporating key areas such as novel microbial technologies, gut microbiota and human health, functional foods, microbial fermentation and foods, probiotic products, and plant-based food. Environmental microbiology is instrumental in deciphering microbe–environment interactions, while food and nutrition science focuses on the impact of food on health. This issue will synthesize cutting-edge research on environmental microbiology’s role in food safety and quality, the effects of environmental changes on food microbiology, novel microbial technologies for food production and preservation, and the gut microbiota–human health link. It will also address challenges such as antibiotic resistance, sustainable food systems, and the development of functional foods, including plant-based options and probiotics, with an emphasis on the significance of microbial fermentation. By bridging environmental microbiology and food and nutrition science, this issue aims to stimulate interdisciplinary collaboration and provide fresh insights into global food security and public health challenges, potentially driving innovation in microbial fermentation for food, probiotic product development, and plant-based functional foods that leverage gut microbiota for health benefits.
