Special Issue Information

Dear Colleague,

Natural antioxidants, originating from diverse biological sources, play a vital role in combating oxidative stress, preserving food quality, and promoting human health. In recent years, significant advances have been made in the extraction, identification, and functional evaluation of antioxidant compounds, including polyphenols, vitamins, flavonoids, and carotenoids. Simultaneously, innovative strategies in chemical synthesis and biotechnological production are expanding the availability and tailoring the activity of natural antioxidants. This Special Issue welcomes original research and reviews that explore the characterization, synthesis, functional properties, and application of natural antioxidants across a variety of scientific fields. Topics may include—but are not limited to—analytical methods for antioxidant profiling, structure–activity relationships, food preservation and packaging, nutraceutical development, pharmaceutical formulations, green synthesis methods, and the role of antioxidants in human and animal health. The goal of this Special Issue is to bring together multidisciplinary insights relating to the potential of natural antioxidants as sustainable bioactive compounds with broad technological applications. Contributions from chemists, food scientists, pharmacologists, agronomists, and materials scientists are especially encouraged.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
