Special Issue Information

Dear Colleagues,

Postharvest senescence is a major factor affecting the quality, nutritional value, and marketability of fruits and vegetables. It encompasses physiological, biochemical, and molecular changes that lead to deterioration in texture, flavor, color, nutrition, and overall shelf life. Understanding the regulatory mechanisms governing postharvest senescence—including hormonal signaling, transcriptional and epigenetic networks, reactive oxygen species (ROS) metabolism, and cell wall remodeling—is critical for developing strategies to maintain crop quality, reduce losses, and improve postharvest management.

This Special Issue, “Postharvest Senescence Control and Underlying Regulatory Processes in Fruit and Vegetables,” aims to highlight interdisciplinary research that bridges fundamental plant biology with applied agricultural practices. Contributions are welcome that investigate the molecular, physiological, and biochemical aspects of senescence in fruits and vegetables, as well as innovative postharvest technologies and management strategies.

We invite original research articles, reviews, and perspectives on topics such as hormonal and ROS regulation, transcriptional networks, cell wall dynamics, stress responses, plant–pathogen interactions, and applied approaches to enhance the storability, shelf life, and quality of fruits and vegetables.
