Umami taste compounds are perceived in broilers through taste buds that detect peptides and amino acids, which can positively or negatively affect their feeding behavior. In this study, we evaluated the intake behavior for four essential amino acids (Lysine, Methionine, Threonine, and Tryptophan) in chickens. Sixty-four one-day-old male birds (Ross 308) were used. For 16 days during the early stage of the birds, two-choice preference tests were performed, in which 16 combinations composed of four amino acids in four concentrations (0.1 to 1.5%) diluted in water were evaluated, which were supplied in contrast to the delivery of water (a neutral compound) to a pair of birds in a pen for 4 h of administration after a prior 1 h fast. Amino acid solutions such as Threonine and Tryptophan tended to show less preference at the highest exposed concentrations (1.5%) concerning drinking water, which was confirmed in the case of Threonine when performing a sensory-motivated intake analysis (SMI). The opposite occurred with Lysine (1.5%), which numerically showed a higher preference ratified by SMI and acceptability analysis concerning water and other concentrations of the same amino acid, respectively. When palatability was measured with pecking cluster size, no significant differences across amino acid concentrations were observed, which is probably attributed to short recording periods and differences in solution intake behavior between chickens and previous experimental models such as rats. The results reinforce the notion that it is necessary to standardize feeding behavior tests in birds according to their feeding patterns and nutritional needs. Full article

Nutrition plays a fundamental role in poultry production. Developing high-quality diets that ensure positive feed perception by birds is a key strategy for enhancing production performance within the industry. This study evaluated the effect of crude protein (CP) and four essential amino acid (AA) reductions on broiler chickens’ growth performance and taste sensitivity for Lysine, Methionine, Threonine, and Tryptophan. Sixty-four one-day-old male broiler chickens (Ross 308) were exposed to four dietary treatments consisting of a balanced (control) diet with a total inclusion of CP and Lysine, Methionine, Threonine, and Tryptophan (T1); diets with a 30 g/kg reduction in CP maintaining 100% exogenous incorporation of the four aforementioned AAs (T2); diets with a 30 g/kg reduction in CP and 50% exogenous incorporation of the same four AAs (T3); and diets with a 30 g/kg reduction in CP with no exogenous incorporation of the four previously mentioned AAs (T4). After 7 days of acclimatization to the diets, the birds were offered Lysine, Methionine, Threonine, and Tryptophan at eight concentrations (0.1, 0.5, 1.0, 1.5, 2.0, 2.5, 3.0, and 3.5%) each for 4 h/day in a double-choice test for 32 days to determine the preferences and sensory-motivated intake (SMI) of the birds. During the 39-day trial, the birds in the T4 group showed a lower (p < 0.050) average daily feed intake (ADFI), average daily gain (ADG), feed conversion ratio (FCR), and body weight (BW) than the birds of the rest of the treatments. No significant effects of the different dietary treatments, CP content, or AA levels were observed on the preferences or SMI of the birds (p > 0.050). However, differences were found in the preferences and SMI between birds from the different treatments when evaluating the treatment × AA × concentration interaction (p < 0.050), reflecting that dietary treatments generate changes in the consumption behavior of birds in response to the delivery of AAs at different concentrations. The preference and SMI thresholds for Lysine decreased in the birds in the T4 group, while the thresholds for Methionine and Tryptophan increased compared to the birds in the control group (p < 0.050). We concluded that the reduction in CP and AAs in the diet of broiler chickens affects their productive parameters and increases their taste sensitivity, which was reflected in lower weight gain and feed conversion efficiency, along with increased preferences and higher SMI values in the birds exposed to diets with more significant nutritional deficits. Many consumers today pursue health goals to adopt healthier behaviors, and interest in promoting healthy eating habits in gastronomy is growing. Empirical evidence demonstrates that sensory cues (e.g., food color, food shapes, and background music) influence healthy eating behavior. However, the theoretical understanding of how sensory cues shape healthy food choices remains unclear. Specifically, this study develops the sensory–healthy eating model, a theoretical framework that explains how and when sensory cues influence healthy eating behavior (e.g., food choices and intake). By integrating related theories and empirical findings across interdisciplinary fields, we identify which sensory cues shape healthy eating and the psychological processes through which they operate. The theoretical model proposes that (1) sensory cues evoke cognitive (higher evaluation, lower potency, lower activity) and/or affective responses (positive valence, lower arousal), (2) these responses shape the perceived healthiness of foods based on their characteristics and quantity, and (3) the influence of perceived food healthiness on healthy eating behavior is stronger for consumers with health goals or motives. Our model provides a valuable framework for researchers and practitioners in marketing, food science, and gastronomy to promote healthy eating behavior. Full article

Jamun (Syzygium cumini L. Skeels) is highly perishable with a very short shelf life, hence, jamun fruit is either consumed fresh as soon as it is harvested or converted to value-added products such as jam, wine, juice, and jellies. The processing of jamun fruit generates a large quantity of seeds as the primary waste. Jamun seeds are a rich source of macronutrients such as carbohydrates, proteins, lipids, minerals, and vitamins, thus making them an important ingredient in the food industry. The valorization of underutilized, nutritionally rich byproducts of the food processing industry has been providing new ways for unlocking their potential in the functional food industry or therapeutic food formulations. This review presents a detailed nutritional profile of jamun seeds and its potent application in the food industry as a possible functional ingredient. Along with its beneficial nutritional profile, the review also throws light upon the safety aspects associated with jamun seed consumption along with its acceptable daily intake. Safety and toxicity studies have motivated researchers and industrialists to search for possible applications in the food industry. Jamun seeds with array of nutritional benefits can be an important functional ingredient; however, further extensive research is necessary to find suitable levels of application of jamun seed in food products for harnessing its nutritional potential without affecting the products’ sensory palatability. It is well known that the state of hunger can modulate hormones and hypothalamic neural circuits to drive food-seeking behavior and consumption. However, the role the sensory cortex plays in regulating foraging is much less explored. Here, we investigated whether acute fasting in mice can alter an odor-guided foraging behavior and how it can alter neurons and synapses in the (olfactory) piriform cortex (PC). Acute hunger enhances the motivation of a mouse to search for food pellets and increases food intake. The foraging behavior strongly activates the PC, as revealed by c-Fos immunostaining. The activation of PC is accompanied by an increase in excitation–inhibition ratio of synaptic density. Fasting also enhances the phosphorylation of AMP kinase, a biochemical energy regulator. Taken together, our results uncover a new regulatory brain region and implicate the PC in controlling foraging behavior. Full article

Pigs display an innate preference for sweet taste compounds such as sucrose. However, the influence of sucrose supplementation into maternal diets has not been examined in pigs. We tested the hypothesis that sucrose inclusion into sows’ diets would modify the feeding behavior of post-weaning pigs for sweet and umami solutions. Twenty-two sows (85 days of gestation) were used. They randomly received a gestational and lactating diet with or without 50 g/kg of sucrose. Different sucrose and monosodium glutamate solutions were offered to the progeny to analyze different intake behavior measurements during nursery. Pigs born from treated sows presented a higher sucrose threshold than control animals (15 mM vs. 0.1 mM, p = 0.032) and displayed decreased sensory-motivated intake for this disaccharide (p < 0.023). Sucrose consumption decreased (p < 0.021) in pigs born from treated sows, as well as the consumption patterns for the less concentrated solutions (p < 0.014). The inclusion of sucrose into maternal diets (gestation and lactation) could modified pigs’ feeding behavior after weaning when offered sweet solutions, which speaks against the practicality of this supplementation in pig production systems. To investigate the main motives driving dietary intake changes potentially introduced by preventive measures to address the pandemic, an online survey, using a 36-item Food Choice Questionnaire applied for the period before (the year 2019) and during (2020–2021) the pandemic, was distributed between July and October 2021 among adult residents from Belgium. A total of 427 eligible respondents, the majority Dutch-speaking, were included for analyses. The importance of nine motives for food choices, including health, mood, convenience, sensory appeal, natural content, price, weight control, familiarity and ethical concerns, was assessed by scoring from 1 to 5, and comparing mean scores from the during period with the before period. Sensory appeal was the most important food choice motive before (mean score of 4.02 ± 0.51) and during (3.98 ± 0.48) the pandemic. Convenience and health also ranked among the main motives, with health observed to become more important during the pandemic (3.69 ± 0.60 during vs. 3.64 ± 0.59 before). Additionally, mean scores of mood (3.41 ± 0.71 vs. 3.32 ± 0.58), natural content (3.35 ± 0.84 vs. 3.26 ± 0.85) and weight control (3.33 ± 0.79 vs. 3.25 ± 0.76) were significantly higher during as compared to before. The extent of change in the level of importance for natural content was smaller with increasing age, and for health larger for urban areas, but for other motives there were no significant differences across population subgroups. Changes in the level of importance were observed in both directions, while a moderate share of respondents declared no change, suggesting some persistence of food choice motives. Further activities within public health monitoring should be considered to fully understand the COVID-19 implications on food choice motives together with people’s food behaviors and consumption. There is a growing global need to shift from animal- towards plant-based diets. The main motivations are environmental/sustainability-, human health- and animal welfare concerns. The aim is to replace traditional animal-based food with various alternatives, predominantly plant-based analogs. The elevated consumption of fish and seafood, leads to negative impacts on the ecosystem, due to dwindling biodiversity, environmental damage and fish diseases related to large-scale marine farming, and increased intake of toxic substances, particularly heavy metals, which accumulate in fish due to water pollution. While these facts lead to increased awareness and rising dietary shifts towards vegetarian and vegan lifestyles, still the majority of seafood consumers seek traditional products. This encourages the development of plant-based analogs for fish and seafood, mimicking the texture and sensorial properties of fish-meat, seafood, or processed fish products. Mimicking the internal structure and texture of fish or seafood requires simulating their nanometric fibrous-gel structure. Common techniques of structuring plant-based proteins into such textures include hydrospinning, electrospinning, extrusion, and 3D printing. The conditions required in each technique, the physicochemical and functional properties of the proteins, along with the use of other non-protein functional ingredients are reviewed. Trends and possible future developments are discussed. Full article

Maternal intake of high fat diet (HFD) increases risk for obesity and metabolic disorders in offspring. Developmental programming of taste preference is a potential mechanism by which this occurs. Whether maternal HFD during pregnancy, lactation, or both, imposes greater risks for altered taste preferences in adult offspring remains a question, and in turn, was investigated in the present study. Four groups of offspring were generated based on maternal HFD access: (1) HFD during pregnancy and lactation (HFD); (2) HFD during pregnancy (HFD-pregnancy); (3) HFD during lactation (HFD-lactation); and (4) normal diet (ND) during pregnancy and lactation (ND). Adult offspring 70 days of age underwent sensory and motivational taste preference testing with various concentrations of sucrose and Intralipid solutions using brief-access automated gustometers (Davis-rigs) and 24 h two-bottle choice tests, respectively. To control for post-gestational diet effects, offspring in all experimental groups were weaned on ND, and did not differ in body weight or glucose tolerance at the time of testing. Offspring exposed to maternal HFD showed increased sensory taste responses for 0.3, 0.6, 1.2 M sucrose solutions in HFD and 0.6 M in HFD-pregnancy groups, compared to animals exposed to ND. Similar effects were noted for lower concentrations of Intralipid in HFD (0.05, 0.10%) and HFD-pregnancy (0.05, 0.10, 0.5%) groups. The HFD-lactation group showed an opposite, diminished responsiveness for sucrose at the highest concentrations (0.9, 1.2, 1.5 M), but not for Intralipid, compared to ND animals. Extended-access two-bottle tests did not reveal major difference across the groups. Our study shows that maternal HFD during pregnancy and lactation has markedly different effects on preferences for palatable sweet and fatty solutions in adult offspring and suggests that such developmental programing may primarily affect gustatory mechanisms. Future studies are warranted for determining the impact of taste changes on development of obesity and metabolic disorders in a “real” food environment with food choices available, as well as to identify specific underlying mechanisms. A lifelong adherence to a gluten-free (GF) diet is currently the only treatment for Celiac disease (CD), an autoimmune disorder that arises after gluten ingestion in individuals who are genetically predisposed. The gluten intake exerts toxic effects through several pathways involving gut barrier integrity, intestinal microbiota composition and immune system stimulation. However, despite the great benefit of GF diet for CD patients, its use has been debated. Indeed, individuals who adopt this diet regime may be at risk of nutrient deficiencies. Emerging evidence supports a beneficial effect of a GF diet also for other pathological conditions, including gluten-related disorders (GRD) often associated to CD, such as Non celiac gluten sensitivity (NCGS) and Dermatitis Herpetiforme (DH) as well as Irritable bowel syndrome (IBS) and Diabetes. This suggests a pathogenic role of gluten in these conditions. Despite the growing popularity of GF diet among consumers, to date, there are limited evidences supporting its use for the management of non-celiac diseases. Therefore, in this review, we discuss whether the GF diet could really improve the general quality of life of patients with GRD and non-GRD conditions, keeping in mind its sensorial limitations and nutritional inadequacies. In addition, we discuss the current motivations, leading to the use of a GF diet, despite the inferior quality of GF products respect to those containing gluten. Full article

Motivations for food choices may determine consumption, and understanding that relationship may help direct strategies for formulating diets. This study aimed to identify associations between motivations for food choices and consumption of food groups. An observational cross-sectional survey was conducted in 921 manufacturing workers from 33 companies in Brazil, based on a stratified two-stage probability sample. Motivations for food choices were assessed with the Food Choice Questionnaire, and intake of food groups was measured using 24-h dietary recall. Consumption was classified into 31 food groups defined according to their nutritional value and the NOVA classification. Data were analyzed with multilevel mixed-effects regression. The results showed that sensory appeal and price were the most important motivations for food choices, while ethical concern was less important. Sensory appeal was positively associated with consumption of industrialized condiments (p = 0.022), price showed a negative correlation with consumption of plant oils (p = 0.022), ethical concern showed positive correlation within consumption white meat (p = 0.065) and negative correlation within pasta dishes (p < 0.001). Regarding the NOVA classification, health correlated with an increase in consumption of unprocessed foods (p = 0.017) and weight control with a decrease in consumption of processed culinary ingredients (p = 0.057). High whole grain intake is beneficial for health. However, adolescents consume low levels of whole grain and the understanding of the underpinning reasons for this is poor. Using a visual, participatory method, we carried out a pilot feasibility study to elicit in-depth accounts of young people’s whole grain consumption that were sensitive to their dietary, familial and social context. Furthermore, we explored barriers and suggested facilitators to whole grain intake and assessed the feasibility of using SenseCam to engage adolescents in research. Eight British adolescents (aged 11 to 16 years) wore a SenseCam device which auto-captured images every twenty seconds for three consecutive days. Participants then completed traditional 24-hour dietary recalls followed by in-depth interviews based on day three SenseCam images. Interview data were subjected to thematic analysis. Findings revealed that low adolescent whole grain intake was often due to difficulty in identifying whole grain products and their health benefits; and because of poor availability in and outside of the home. The images also captured the influence of parents and online media on adolescent daily life and choices. Low motivation to consume whole grains, a common explanation for poor diet quality, was rarely mentioned. Participants proposed that adolescent whole grain consumption could be increased by raising awareness through online media, improved sensory appeal, increased availability and variety, and tailoring of products for young people. SenseCam was effective in engaging young people in dietary research and capturing data relevant to dietary choices, which is useful for future research. Full article

Older Consumers’ Readiness to Accept Alternative, More Sustainable Protein Sources in the European Union

Protein-energy malnutrition (PEM) is a growing concern on account of an aging population and its negative health consequences. While dietary protein plays a key role in the prevention of PEM, it also plays a pivotal role in the environmental impact of the human diet. In search for sustainable dietary strategies to increase protein intake in older adults, this study investigated the readiness of older adults to accept the consumption of the following alternative, more sustainable protein sources: plant-based protein, insects, single-cell protein, and in vitro meat. Using ordinal logistic regression modeling, the associations of different food-related attitudes and behavior and sociodemographics with older adults’ acceptance to consume such protein sources were assessed. Results were obtained through a consumer survey among 1825 community-dwelling older adults aged 65 years or above in five EU countries (United Kingdom, the Netherlands, Poland, Spain, and Finland). Dairy-based protein was generally the most accepted protein source in food products (75% of the respondents found its consumption acceptable or very acceptable). Plant-based protein was the most accepted alternative, more sustainable protein source (58%) followed by single-cell protein (20%), insect-based protein (9%), and in vitro meat-based protein (6%). We found that food fussiness is a barrier to acceptance, whereas green eating behavior and higher educational attainment are facilitators to older adults’ acceptance to eat protein from alternative, more sustainable sources. Health, sensory appeal, and price as food choice motives, as well as gender and country of residence were found to influence acceptance, although not consistently across all the protein sources. Findings suggest that there is a window of opportunity to increase older adults’ acceptance of alternative, more sustainable protein sources and in turn increase protein intake in an environmentally sustainable way in EU older adults. Pigs show an innate preference for umami (monosodium glutamate, MSG) taste. Nevertheless, the influence of a pre and postnatal umami exposure remains unclear. An experiment was conducted to test the hypothesis that MSG inclusion into maternal diets would modify the feeding behavior of post-weaning pigs. A total of 22 sows were selected on day 85 of gestation and randomly assigned to one of two gestating and lactating programs (standard commercial diets without or with 50 g/kg of MSG). Later, 208 pigs born from these sows were selected to evaluate their preference thresholds, sensory-motivated intake, total consumption, and consumption patterns for MSG and sucrose solutions. Pigs born from MSG-fed sows showed lower (p < 0.045) preference thresholds for MSG and sucrose than did animals born from control sows, and displayed an increased (p < 0.050) sensory-motivated intake for sucrose and decreased for MSG. Conversely, no differences (p > 0.05) were observed in the total consumption or consumption patterns of MSG or sucrose solutions among pigs born from control and MSG-fed sows. It is concluded that the feeding behavior of nursery pigs can be influenced by pre and postnatal inclusion of a taste active compound into maternal diets. It would appear that a compensatory mechanism to balance dietary nutrients might be in place. Full article
