Background: This study evaluated the polyphenolic composition, antibacterial activity, molecular docking interactions, and pharmacokinetic properties of Romanian oak and fir honeydew honeys. Methods: Spectrophotometric methods quantified total phenolic, flavonoid contents and antioxidant activity, and individual polyphenols were identified via HPLC-MS. Antibacterial efficacy against Gram-positive and Gram-negative bacteria was evaluated by determining the bacterial inhibition percentage and minimum inhibitory concentrations. The bioactive compounds identified via LC-MS analysis were used to further delineate the possible antibacterial activities in silico. Molecular docking was carried out to predict the binding interactions and complex formation of the identified compounds against protein crystal structures of the bacteria used in this study. Additionally, the pharmacokinetic profile of compounds with high inhibitory potential was assessed via ADMET (absorption, Distribution, Metabolism, Excretion, toxicity) predictors to ascertain their value. Results: Fir honeydew honey showed higher total phenolic (844.5 mg GAE/kg) and flavonoid contents (489.01 mg QUE/kg) compared to oak honeydew honey, correlating with more potent antioxidant activity (IC50 = 5.16 mg/mL). In vitro antimicrobial tests indicated a stronger inhibitory effect of fir honeydew honey, especially against Gram-positive strains like S. aureus, S. pyogenes, and L. monocytogenes, alongside certain Gram-negative strains such as E. coli and H. influenzae. Oak honeydew honey displayed selective antimicrobial action, particularly against P. aeruginosa and S. typhimurium. The docking outcomes showed rutin, rosmarinic acid, beta resorcylic acid, quercetin, ferulic acid, and p-coumaric acid have high inhibitory activities characterised by binding affinities and binding interactions against shiga toxin, riboflavin synthase, ATP-binding sugar transporter-like protein, undecaprenyl diphosphate synthase, putative lipoprotein, sortase A, and immunity protein, making them key contributors to the honey’s antimicrobial activity. Moreover, beta-resorcylic acid, quercetin, ferulic acid, and p-coumaric acid revealed interesting ADMET scores that qualify honey to serve as a good antimicrobial agent. Conclusions: These findings support their potential use as natural antibacterial agents and emphasise the value of integrating chemical, biological, and computational approaches for multidisciplinary characterisations. In this study, the physicochemical and antioxidant properties of 19 honey samples from Poland and Slovakia were assessed and models describing the relationship between antioxidant activity and the determined physicochemical features were developed. All tested honeys met the regulatory criteria of EU standards for the content of water, hydroxymethylfurfural, and diastase activity. Honey samples from Poland and Slovakia had similar glucose-to-fructose ratios, but differences were observed in diastase activity, electrical conductivity, and antioxidant potential. Polish forest honey samples showed the highest antioxidant activity, and Polish rapeseed honey showed higher antioxidant potential than the Slovak honey. Color analysis showed a strong correlation (R2 = 0.849) between the browning index and antioxidant capacity. Cluster analysis effectively distinguished honey types based on their chemical composition, although some sample overlap was attributed to environmental influences. Regression models identified key predictors of antioxidant potential, and polyphenol content evidenced by color parameters (a*, b*). This study provides valuable information on honey characteristics and demonstrates the feasibility of using statistical models to predict antioxidant properties. Full article

Buckwheat honey is known for its high antioxidant activity, yet the compounds responsible for this effect have not been fully identified. This study used LC-MS-based untargeted metabolomics to investigate the metabolite profile of buckwheat honey and its relationship with antioxidant activity and total phenolic content, assessed by DPPH, FRAP, and Folin–Ciocalteu assays. A key objective was also to optimize data preprocessing parameters to improve the accuracy and robustness of metabolomic analyses. Multivariate analyses (PCA, OPLS-DA) effectively differentiated honey samples with high and low antioxidant potential. A total of 43 features were associated with increased antioxidant activity and about 30 compounds, including organic acids, free amino acids, and Amadori compounds—early Maillard reaction products—were identified. The amounts of most of these compounds exhibited strong positive correlation (r > 0.8) with measured antioxidant potential. These findings suggest that, in addition to polyphenols, other compound classes such as melanoidin precursors known as transition metal chelators significantly contribute to the antioxidant properties of buckwheat honey. This approach provides valuable insight into the bioactive composition of honey and supports the identification of potential antioxidant markers. Full article

Honeydew honey (HH) is a distinctive type of honey known for its dark colour, high mineral and polyphenol content, and pronounced biological activity. This study continues previous research on beech and chestnut honeydew honeys by presenting a comprehensive analysis of linden honeydew honey (LHH) from Bosnia and Herzegovina—a variety that, until now, has not been characterised in detail. Physicochemical parameters confirmed its classification as HH, with high electrical conductivity (1.21 mS/cm) and low moisture (15.1%). GC-MS analysis revealed a unique volatile profile dominated by α-terpinolene (17.4%), distinguishing LHH from other HH types. The sample exhibited high total phenolic content (816.38 mg GAE/kg) and moderate antioxidant capacity (1.11 mmol TE/kg). Antimicrobial testing demonstrated strong activity against Staphylococcus aureus and Methicillin-resistant Staphylococcus aureus (MRSA), with lower efficacy against Gram-negative bacteria. No cytotoxic effects were observed in HaCaT keratinocytes at concentrations up to 60 mg/mL, and wound healing assays showed improved scratch closure reaching approximately 30% after 24 h and 41% after 48 h compared to the control. These results indicate that LHH possesses promising bioactive properties and potential for dermatological application. Further studies with broader sample sets are needed to explore variability and confirm the therapeutic relevance of LHH in comparison to other honeydew types. Full article

To elucidate the regional flavor characteristics of sun-dried green tea (SDT) and their underlying influencing factors, a comprehensive analysis was conducted using metabolomics and flavoromics approaches. This study systematically examined SDT samples and their corresponding tea garden soils from 13 distinct regions in Yunnan Province. The results revealed that the SDT samples could be classified into two distinct groups based on their flavor profiles. Compared to the regions of Pa Sha (PS), Bang Dong (BD), Dong Ban Shan (DBS), Dong Guo (DG), Su Hu (SH), Gua Feng Zhai (GFZ), and Wu Liang Shan (WLS), the regions of Xin Nong (XN), Ba Ka Nuan (BKN), Mang Ang (MA), Man Nuan (MN), Bing Dao (BDao), and Bin Shan (BS) exhibited a significant upregulation of the tea polyphenols (TP)/free amino acids (FAA) ratio. The former group was characterized by a sweet mellow taste, while the latter displayed a stronger taste profile. Furthermore, the analysis of volatile compounds demonstrated that geraniol and linalool were significantly upregulated in the PS, BD, DBS, DG, BS, and BDao regions, which were associated with tender and floral aromas. In contrast, isophorone, 2-pentyl furan, 1-octanol, D-limonene, and benzaldehyde were markedly enriched in the XN, BKN, MA, MN, SH, GFZ, and WLS regions, contributing to sweet and honey-like aromatic profiles. Altitude and mineral element phosphorus are potential key factors affecting the regional flavor differences in SDT. Specifically, SDT cultivated at higher altitudes and in soils with elevated available phosphorus content exhibited a greater likelihood of accumulating sweet mellow and floral compounds. This study provides scientific evidence for understanding the characteristic flavor profiles of SDT across different regions, offering valuable insights into the factors contributing to regional flavor differentiation in tea production. The aim of this study was to evaluate the influence of altitude on the phenolic content, antioxidant activity and mineral content of multifloral honeys collected in three different areas (plain, hill and mountain areas) of the Basilicata region. Our results show that the total phenolic and flavonoid contents and the multimineral profile were influenced by the altitudes of the different agro-climatic areas which are characterized by different soil characteristics and floral biodiversity. There was a negative correlation between altitude and total phenols, but there was a positive correlation between altitude and total flavonoids. Furthermore, altitude is closely related to antioxidant activities. Furthermore, the low correlations between antioxidant activities and polyphenols indicate that antioxidant activity is not only promoted by polyphenols but also by other biologically active substances (catalase, ascorbic acid and proteins) which contribute to the antioxidant activity of honey. This research demonstrates how different altitudes influence the analyzed parameters, confirming the uniqueness of honey with respect to the area of origin. Full article

The main objective of this study was to provide an overview of the potential health-promoting properties of honeys collected at specific apiary locations from the protected area of Montesinho Natural Park (MNP), by analyzing their amino acid and polyphenolic profiles, and their biological properties, and comparing them with the renowned Manuka honey. The results revealed differences in total phenolic content among the samples examined and between sampling campaigns, with values ranging from 55.6 to 225 mg gallic acid equivalents (GAE) per 100 g of honey, compared to 57.2 mg GAE/100 g for Manuka honey. Gallic acid, neochlorogenic acid, and catechin were the key phenolics of MNP honey samples. MNP honey exhibited high levels of essential amino acids (phenylalanine, lysine, and valine), strong antioxidant and antimicrobial activities, moderate enzyme inhibition, and high proline content in some locations. These results highlight the exceptional nutritional and therapeutic potential of MNP honey. Full article

This study aimed to characterize the metabolomic profile of monofloral honey from Eucryphia cordifolia (ulmo) and evaluate the potential transfer of bioactive compounds from the plant parts, including the leaves and flowers, to the honey. Using UHPLC/Q-TOF-MS analysis, various flavonoids and phenolic acids were identified and quantified in extracts from the leaves, flowers, and honey from E. cordifolia. Given their rich polyphenolic composition, E. cordifolia leaves were included in this study to assess their potential contribution to the antioxidant properties and chemical markers of ulmo honey. Additionally, the polyphenolic compounds in honey samples were quantified. Chromatographic analysis via UHPLC-MS/MS revealed that ulmo honey contains phenolic acids such as gallic, syringic, ferulic, chlorogenic, caffeic, and coumaric acid, as well as flavonoids including pinocembrin, quercetin, luteolin, kaempferol, epicatechin, apigenin, and isorhamnetin. The results indicate that pinocembrin and gallic acid are the main chemical markers of ulmo honey, while isorhamnetin could complement its characterization as a complementary marker. UHPLC/Q-TOF-MS analysis was also utilized to compare the compounds present in the honey with those found in the plant parts (leaves and flowers), respectively. A total of 10 shared compounds were identified, 9 of which were preliminarily identified, while 1 remains unknown. Notably, dihydroquercetin 3-O-rhamnoside, quercetin 3-O-rhamnoside, cyanidin 3-(p-coumaroyl)-glucoside, and eupatorin were detected in ulmo honey for the first time. Along with gallic acid, pinocembrin, and isorhamnetin, these compounds could contribute to a characteristic fingerprint for identifying the botanical origin of the honey. Overall, these findings provide valuable insights into the chemical composition of ulmo honey and its potential application as a functional product with antioxidant properties. Full article

Functional Properties of Rapeseed Honey Enriched with Lyophilized Fruits

This study evaluates the physicochemical characteristics, antioxidant, antibacterial, and antiproliferative properties of rapeseed honey collected from Vojvodina, Serbia, as well as rapeseed honey-based products enriched with 10% fruit lyophilizate, including sour cherry (Prunus cerasus), strawberry (Fragaria), blueberry (Vaccinium myrtillus), raspberry (Rubus idaeus), blackberry (Rubus fruticosus), orange (Citrus sinensis), and pineapple (Ananas comosus). Honey-based products with lyophilizates were developed to enhance the relatively limited therapeutic potential of rapeseed honey by incorporating fruit lyophilizates known to possess bioactive compounds. The moisture content, pH, electrical conductivity, free acidity, hydroxymethylfurfural (HMF), and mineral composition were analyzed. Sour cherry-enriched honey exhibited the highest total phenolic content (TPC = 102 ± 0.18 mg GAE/100 g), while blueberry-enriched honey had the highest total flavonoid content (TFC = 34.9 ± 0.89 mg CAE/100 g) and total anthocyanin content (TAC = 299 ± 3.14 mg EC/100 g), with the greatest relative scavenging capacity (81.0 ± 0.46% of DPPH inhibition). Polyphenol profiling identified phenolic acids and flavonoids, with raspberry-enriched honey showing the highest total polyphenol content (47.0 ± 0.98 mg/kg) due to its high ellagic acid content (38.4 ± 1.11 mg/kg). All honey-based products demonstrated moderate antibacterial activity against Staphylococcus aureus and Staphylococcus epidermidis. Significant antiproliferative effects against breast (MCF-7), cervix (HeLa), and colon (HT-29) cancer cell lines were observed, particularly in pineapple and blueberry-enriched honey, with IC50 values as 9.04 ± 0.16 mg/mL and 9.95 ± 0.24 mg/mL for MCF-7 cells, respectively. Based on all the obtained results, it can be concluded that the enrichment of rapeseed honey with fruit lyophilizates at a 10% level contributed to an increase in the antioxidant, antibacterial, and antiproliferative properties of rapeseed honey. The rise in honey production and imports into the United States necessitates the need for robust methods to authenticate honey origin and ensure consumer safety. This review addresses the scope of honey authentication, with a specific focus on the exploration of polyphenols and sugar markers to evaluate honeys in the U.S. In the absence of comprehensive federal standards for honey in the United States, challenges related to authenticity and adulteration persist. Examining the global landscape of honey authentication research, we observed a significant gap in the literature pertaining to U.S. honeys. While honeys from Europe, Australia, New Zealand, and Asia have been extensively studied, the decentralized nature of the U.S. honey market and the lack of comprehensive standards have limited the number of investigations conducted. This review consolidates the findings of global honey studies and emphasizes the need for further research studies on honey authenticity markers within the United States. We also explore previous studies on the U.S. that focused on identifying potential markers for honey authenticity. However, the inherent variability in polyphenol profiles and the lack of extensive studies of the sugar contents of honey on a global scale pose challenges to establishing universal markers. We conclude that by addressing these challenges, the field of research on polyphenols and sugars in honey can move toward more reliable and standardized methods. This advancement will enhance the use of polyphenols and other constituents like sugars as authenticity markers, ultimately benefiting both researchers and the honey industry in ensuring honey quality. Research on the comprehensive utilization of sour jujube and its beneficial properties to human health has attracted extensive attention. This study aims to conduct a bibliometric analysis of the bioactive profile of sour jujube and future trends in applications. The research advancements within this field from 2000 to 2023 were addressed using the Web of Science database and VOSviewer. Among the 322 results, the most frequent keywords of bioactivity are flavonoids, antioxidants, saponins, insomnia, polyphenols, terpenoids and anti-inflammatory; the most studied parts of sour jujube are seeds, fruits and leaves; the published articles with high citations mainly focus on identification, biological effects and different parts distribution of bioactive compounds. The bioactivity of various parts of sour jujube was reviewed considering their application potential. The seeds, rich in flavonoids, saponins and alkaloids, exhibit strong effects on central nervous system diseases and have been well-developed in pharmacology, healthcare products and functional foods. The pulp has antioxidant properties and is used to develop added-value foods (e.g., juice, vinegar, wine). The leaves can be used to make tea and flowers are good sources of honey; their extracts are rich sources of flavonoids and saponins, which show promising medicinal effects. The branches, roots and bark have healing properties in traditional folk medicine. Overall, this study provides a reference for future applications of sour jujube in food and medicine fields. Yucatan, Mexico, is renowned for its rich plant diversity, with ~40% melliferous plants. Yucatan bee honey (BH) constitutes ~15.83% of Mexico’s annual BH production, giving high international value. Major melliferous families in Yucatan include Fabaceae, with Piscidia piscipula (“Jabin”) as an example, and Polygonaceae, with Gymnopodium floribundum (“Dzidzilche”), crucial for BH production. This study aimed to profile the metabolome of Jabin and Dzidzilche flowers and their associated BH to identify metabolites for each flower coming from two regions (Tahdziu and Acanceh) of Yucatán. Liquid chromatography–tandem mass spectrometry (LC–MS2), total polyphenol content (TPC), and antioxidant capacity (AC) were implemented. As many as 101 metabolites (69 in flowers, 55 in BH) were tentatively identified using spectral libraries and in silico predictions, predominantly flavonoids, which accounted for 50.7% of the total identified metabolites in flower and 16.4% in BH. Samples exhibited variations in TPC, AC, secondary metabolites, and chemical classes depending on geography and botanical origin. Dzidzilche flowers from Acanceh displayed the highest total polyphenol content (TPC, 1431.24 ± 15.38 mg GAE/100 g dry matter) and antioxidant capacity (AC, 93.63% inhibition). Among the metabolites detected in flowers (Piscidia piscipula, Gymnopodium floribundum), 50.7% were found to be part of the flavonoid chemical class, whereas in their respective honey samples, only 16.4% of the identified metabolites were categorized as flavonoids. Vanillin and vitexin were tentatively identified as potential markers for the botanical origin identification of honey from Piscidia piscipula and Gymnopodium floribundum, respectively. Recognizing botanical and geographic BH origin is important for product authentication, identification, and traceability. This study offers chemical insights that can be valuable and complementary to melissopalynology, aiding in determining the origin and quality of Yucatan BH. Full article

The presence of phenolic compounds in honey can serve as potential authenticity markers for honey’s botanical or geographical origins. The composition and properties of honey can vary greatly depending on the floral and geographical origins. This study focuses on identifying the specific markers that can distinguish honey based on their geographical areas in the United States. The main approach presented in this study to identify the geographic origins of honey involves chemometric methods combined with phenolic compound fingerprinting. Sample clean-up and phenolic compound extraction was carried out using solid phase extraction (SPE). Reversed phase liquid chromatography in combination with tandem mass spectrometry were utilized for the separation of the compounds. The honey physicochemical qualities were predominantly determined via spectrophotometric methods. Multivariate statistical tools such as principal component analysis (PCA), analysis of variance (ANOVA), and partial-least squares discriminant analysis (PLS-DA) were employed as both classification and feature selection tools. Overall, the present study was able to identify the presence of 12 potential markers to differentiate the honey’s geographical origins. The total phenolic content ranged from 81.6 to 105.7 mg GAE/100 g corresponding to honey from Colorado and Washington, respectively (GAE: gallic acid equivalents). The regression analysis shows a tendency for the total phenolic content of honey to increase as the color of honey increases. The most important result obtained in this study is the demonstration that the geographical origin of honey plays a critical role in predicting the physical properties and phenolic composition of honey. Honey is widely used in traditional medicine and modern wound healing biomaterial research as a broad-spectrum antimicrobial, anti-inflammatory and antioxidant agent. The study’s objectives were to evaluate the antibacterial activity and polyphenolic profiles of 40 monofloral honey samples collected from beekeepers in the territory of Latvia. The antimicrobial and antifungal activity of Latvian honey samples were compared with commercial Manuka honey and the honey analogue sugar solutions–carbohydrate mixture and tested against Escherichia coli, Pseudomonas aeruginosa, Staphylococcus aureus, clinical isolates Extended-Spectrum Beta-Lactamases produced Escherichia coli, Methicillin-resistant Staphylococcus aureus and Candida albicans. Antimicrobial activity was evaluated with the well-diffusion method (80% honey solution w/v) and microdilution method. The honey samples with the highest antimicrobial potential were tested to prevent biofilm development and activity against a preformed biofilm. The principal component analysis of the antimicrobial properties of honey samples vs. polyphenolic profile was performed. Eleven honey samples exhibited antibacterial activity to all investigated bacteria. The antibacterial effect of the samples was most significant on the Gram-positive bacteria compared to the studied Gram-negative bacteria. Latvian honey presents promising potential for use in wound healing biomaterials, opening the possibility of achieving long-term antibacterial effects. Full article

This study evaluates the phenolic profile as well as the antioxidant properties of Shennongjia Apis cerana honey through a comparison with Apis mellifera honey in China. The total phenolic content (TPC) ranges from 263 ± 2 to 681 ± 36 mg gallic acid/kg. The total flavonoids content (TFC) ranges from 35.9 ± 0.4 to 102.2 ± 0.8 mg epicatechin/kg. The correlations between TPC or TFC and the antioxidant results (FRAP, DPPH, and ABTS) were found to be statistically significant (p < 0.01). Furthermore, the phenolic compounds are quantified and qualified by high performance liquid chromatography-high resolution mass spectrometry (HPLC-HRMS), and a total of 83 phenolic compounds were tentatively identified in this study. A metabolomics analysis based on the 83 polyphenols was carried out and subjected to principal component analysis and orthogonal partial least squares-discriminant analysis. The results showed that it was possible to distinguish Apis cerana honey from Apis mellifera honey based on the phenolic profile. Full article
