Background/Objectives: Understanding the impact of dietary habits in terms of obesity, health outcomes, and functional decline is critical in Europe’s growing elderly population. This study analyzed trends in Mediterranean diet (MD) adherence, obesity prevalence, and grip strength among middle-aged and elderly Europeans using data from the Survey of Health, Ageing and Retirement in Europe (SHARE). Methods: Data from four SHARE waves (2015–2022) across 28 countries were analyzed. Dietary patterns were assessed through food frequency questionnaires classifying participants as MD-adherent or non-adherent where adherent implies daily consumption of fruits and vegetables and occasional (3–6 times/week) intake of eggs, beans, legumes, meat, fish, or poultry (an unvalidated definition of the MD pattern). Handgrip strength, a biomarker of functional capacity, was categorized into low, medium, and high groups. Body mass index (BMI), self-perceived health (SPHUS), chronic disease prevalence, and CASP-12 scores (control, autonomy, self-realization, and pleasure evaluated on the 12-item version) were also evaluated. Statistical analyses included descriptive methods, logistic regressions, and multiple imputations to address missing data. Results: A significant majority (74–77%) consumed fruits and vegetables daily, which is consistent with MD principles; however, the high daily intake of dairy products (>50%) indicates limited adherence to the MD, which advocates for moderate consumption of dairy products. Logistic regression indicated that individuals with two or more chronic diseases were more likely to follow the MD (odds ratio [OR] = 1.21, confidence interval [CI] = 1.11–1.32), as were those individuals who rated their SPHUS as very good/excellent ([OR] = 1.42, [CI] = 1.20–1.69). Medium and high maximal handgrip were also strongly and consistently associated with higher odds of MD adherence (Medium: [OR] = 1.44, [CI] = 1.18–1.74; High: [OR] = 1.27, [CI] = 1.10–1.48). Conclusions: The findings suggest that middle-aged and older adults are more likely to adhere to the MD dietary pattern if they have more than two chronic diseases, are physically active, and have a medium or high handgrip. Although an unvalidated definition of the MD dietary pattern was used, the results highlight the importance of implementing targeted dietary strategies for middle-aged and elderly adults. Background/Objectives: Prioritizing diet- or exercise-related self-efficacy and social support with their interactions may improve the effectiveness of interventions aimed at increasing daily fruit/vegetable intake and exercise, thereby reducing the risk of metabolic disorders in abdominally obese women. This study aimed to identify the profiles of diet- or exercise-related self-efficacy and social support among women with abdominal obesity, examine profiles related to insufficient fruit/vegetable intake and exercise, and explore associating factors of these profiles. Methods: A cross-sectional investigation in central south mainland China collected sociodemographic, anthropometric, and health-related variables, diet-related self-efficacy (Diet-SE) and social support (Diet-SS), exercise-related self-efficacy (Exercise-SE) and social support (Exercise-SS), and daily fruit/vegetable intake and exercise. We used latent profile analysis to identify distinct profiles, and binary logistic regression to examine the profiles’ behaviors and associating factors. Results: A total of 327 abdominally obese women were categorized into four profiles of Diet-SE and Diet-SS, and five profiles of Exercise-SE and Exercise-SS. Women in the Diet Dual-Low Group were associated with insufficient daily fruits/vegetables intake. Women in the Exercise Dual-Low Group or Exercise-SS Medium–Low Group were more likely to engage in insufficient daily exercise. Conclusions: Our findings align with previous evidence that women with low diet- or exercise-related self-efficacy and social support are at increased risk for insufficient daily fruit/vegetable intake or exercise. Additionally, medium Exercise-SS is associated with insufficient exercise behaviors, suggesting that interventions targeting healthy exercise should be initiated earlier among women with medium Exercise-SS, rather than waiting for it to decline to low level. Objective: This study aimed to assess the feasibility and acceptability of a Culinary Medicine and Wellness (CMW) class among undergraduate college students attending a U.S. Minority-Serving Institution (MSI), as well as their food security, mental health status, and eating behaviors. Methods: This pre- and post-intervention study was conducted at an MSI in a Southeastern U.S. University, where students enrolled in a 15-week, three-credit CMW class equivalent to 2.5 h per week and received instruction on cooking and preparing healthy meals on a budget. The primary outcomes were acceptability and feasibility of the CMW class. Participants’ food security status, mental health status, and fruit and vegetable intake were also assessed. Program evaluation utilized thematic analysis and descriptive statistics, and trend analyses of outcomes were performed. Results: Eleven participants completed both surveys. The average age was 24 years, with 73% identifying as Black/African American. All participants were female and experienced low or very low food insecurity, and most reported moderate stress levels. All participants reported they would recommend the CMW class to others, with 73% rating it as excellent. Additionally, 82% felt they had learned valuable cooking and budgeting skills. Conclusions: The acceptability and feasibility of a CMW class among college students at an MSI suggests a promising approach to improving cooking skills, enhancing nutrition knowledge, increasing fruit and vegetable intake, and reducing stress. The beneficial effect of consuming fruits and vegetables in the prevention of chronic non-communicable diseases and healthy aging is well known. This is attributed to food and vegetable antioxidant and fiber content. The aim of this publication is to communicate the results of recent research on pectin in humans, to propose an increased consumption of fruits and vegetables, or their possible use as a food supplement. A comprehensive narrative review was conducted considering recent publications on pectin. The description of starch, pectin, the physicochemical changes caused by pectin, and the effect of pectin on the activity of amylase are reported. Dietary fiber and gut microbiota in human health are also described, with the production of saturated fatty acids with fewer than six carbon atoms. Finally, health effects such as anti-hyperglycemic and anti-hyperlipidemic activities, preventing and controlling obesity and heart disease, are analyzed, as well as other health effects in tumors, the gastrointestinal tract, and immunity. Considering the beneficial effects of pectin in health and the low consumption throughout the world, it is recommended to promote the consumption of fruits and vegetables to increase pectin intake in the human diet. Background: Cardiovascular disease (CVD) is very widespread in countries with a Western-style diet, representing one of the major causes of morbidity. Genetic factors, obesity, diabetes, dyslipidemia, smoking, and ageing are risk factors for CVD outcomes. From a pathogenic point of view, the condition of low-grade inflammation of the arteries leads to endothelial damage and atherosclerosis development. Nowadays, a broad range of drugs is available to treat CVD, but many of them are associated with side effects. Therefore, alternative therapeutic remedies need to be discovered in combination with conventional drugs. A balanced diet rich in fruits and vegetables, e.g., the Mediterranean diet, has been shown to lower the incidence of CVD. Plant-derived polyphenols are ingested in food, and these compounds can exert beneficial effects on human health, such as antioxidant and anti-inflammatory activities. Objective: In the present review, the cellular and molecular bases of the beneficial effects of polyphenols in the prevention and treatment of CVD will be pointed out. Methods: This review has been conducted on the basis of a literature review spanning mainly the last two decades. Results: We found that an increased dietary intake of polyphenols is associated with a parallel decrease in chronic disease incidence, including CVD. Conclusion: Despite a plethora of preclinical studies, more clinical trials are needed for a more appropriate treatment of CVD with polyphenols. Full article

Contextualization: Lifestyle changes, such as smoking cessation, physical activity, and healthy eating, are essential for the treatment and prevention of cardiovascular diseases. The 2021 update of the European Society of Cardiology (ESC) guidelines highlights the need to investigate the adherence to the Mediterranean diet in patients who have suffered acute myocardial infarction (AMI). Objective: The aim of this study was to investigate the adherence to the Mediterranean diet and dietary 2021 ESC guidelines of individuals who have suffered AMI and to evaluate the sociodemographic and lifestyle factors associated with the adherence. Methods: A cross-sectional study was conducted using baseline data from participants prior to enrollment in the DICA-NUTS multicenter clinical trial. The dietary intake was assessed using a food frequency questionnaire and 24 h dietary recall. The nutrient intake was compared with the nutritional recommendations of the 2021 ESC guidelines, and the adherence to the Mediterranean diet was analyzed using a Mediterranean diet score. Furthermore, the analyses of the factors associated with the Mediterranean diet score and 2021 ESC were performed. Analyses were conducted using Stata Data Analysis and Statistical Software version 15.0. Values were considered statistically significant when the p-value < 0.05. Results: Among 488 participants aged ≥ 40 years, moderate adherence to the Mediterranean diet was observed obtaining an average of nine points, with a low intake of vegetables, fish, and cereals. The protein intake was adequate with 18% (interquartile range [IQR] 15.0–23.1) of the total energy value, and the saturated fat intake was high with 9.7% (IQR 7.3–12.7) of the total energy value, while the carbohydrate and total fat intake was adequate. According to the 2021 ESC guidelines, the fiber intake was low with more than 79% of the sample consuming less than 30 g per day. The multivariate analysis using the 2021 ESC dietary recommendations showed that older age (≥60 years) [odds ratio (OR) = 1.63; 95% confidential interval (CI) = 1.44–1.91], never smoking (OR = 1.34; 95% CI = 1.17–1.65), and higher education (OR = 1.37; 95% CI = 1.17–1.77) were correlated with an increased fruit and vegetable intake. Non-white, never-smokers, and former smokers were more likely to consume fish. The alcohol scores were higher in older age participants and women. The dairy scores increased with older age, while the cereal scores decreased. No significant association was found for legumes. Conclusions: According to the scores used, the diet of these individuals moderately reflects the Mediterranean characteristics. Analyzing the 2021 ESC dietary recommendations, the studied population was inadequate. This study found different factors associated with an adequate food intake in post-AMI patients. The highlight of this study was that older age is more likely to increase fruit, vegetable, and dairy intake. Full article

Background: Vietnam is experiencing a significant “double burden” of malnutrition, characterized by the persistent challenge of undernutrition, particularly stunting in ethnic minority and mountainous regions, alongside a rising prevalence of overweight and obesity. Understanding dual nutritional status and its related factors in adolescents from these vulnerable areas is crucial for effective intervention. Objective: The current study explored the nutritional status of ethnic minority secondary school students in some mountainous provinces in the northwest of Vietnam and identified some related factors. Methods: We conducted a cross-sectional study over six months (June–December 2023), involving 1847 ethnic minority high school students from Son La and Dien Bien provinces, recruited through convenience sampling in primary healthcare settings. Nutritional status was determined using WHO 2006 Child Growth Standards, specifically height-for-age Z-scores (HAZ) and body mass index (BMI)-for-age Z-scores (BAZ). A 4-point scale assessed nutritional practices, including food consumption frequency and eating habits. Results: This study identified a stunting (HAZ < −2 SD) prevalence of 16.7% and wasting (BAZ < −2 SD) of 5.6%; overweight/obesity (BAZ > +1 SD) prevalence was 8.2%. Key factors related to stunting were being male, having more siblings, poor/near-poor household economic status, low maternal education level, and frequent occurrences of gastrointestinal and respiratory diseases. A higher risk of overweight/obesity was associated with consuming more than three meals daily, nocturnal snacking, frequent intake of fried foods, insufficient consumption of vegetables and fruits, and inadequate daily physical activity. Conclusions: Our study shows a comprehensive picture of malnutrition among children in ethnic minority areas. Essential nutritional intervention programs, projects, and models are a top priority to reduce the disease burden for children’s bright future and to enhance socio-economic development in the mountainous regions of Vietnam. The Dietary Approaches to Stop Hypertension (DASH) diet, characterized by high consumption of fruits, vegetables, whole grains, low-fat dairy products, and limited intake of saturated fats, cholesterol, and refined sugars, has been suggested to reduce the risk of preeclampsia. This narrative review aimed to summarize and synthesize the evidence regarding the role of the DASH diet in preeclampsia prevention. PubMed/MEDLINE, Embase, Google Scholar, ScienceDirect, Scopus, and Web of Science databases were searched to identify relevant studies. Multiple observational and intervention studies examining DASH diet adherence and preeclampsia outcomes were included. Higher adherence to the DASH diet was associated with an approximately 35–45% reduced risk of preeclampsia in observational studies. Intervention trials in high-risk populations demonstrated improved blood pressure control and potential reductions in preeclampsia incidence. The DASH diet appears to exert protective effects through multiple mechanisms, including improved blood pressure regulation, enhanced antioxidant defense, reduced inflammation, and improved endothelial function. The heterogeneity in study designs, DASH diet assessment methods, and intervention protocols limited the strength of conclusions. Evidence for the effects of greater adherence to the DASH diet on preeclampsia prevention is promising but requires confirmation through larger randomized controlled trials. Future research should focus on standardized DASH diet assessment methods, optimal timing and duration of dietary intervention, and exploration of potential synergies with other preventive strategies. Chronic Illnesses: Varied Health Patterns and Mental Health Challenges

Background/Objectives: Hypertension, diabetes, and cancer are three prevalent chronic conditions with distinct etiologies and significant global health impacts. This study aimed to explore the diverse impacts of different chronic illnesses on health behaviors and psychological well-being, with a focus on identifying and addressing the unique challenges faced by individuals with hypertension, diabetes, and cancer. It was hypothesized that health behaviors and psychological well-being would differ significantly among individuals with hypertension, diabetes, and cancer, reflecting the distinct demands and psychosocial impacts of each condition. Methods: The database of Americans’ Changing Lives, Wave 6, including 767 participants, was used (56.1% hypertension, 20.8% diabetes, and 19.9% cancer cases). Variables concerning physical and mental health issues were chosen. Descriptive statistics summarized the data. Chi-squared and t-tests assessed associations and group differences, with effect sizes reported. Logistic regression examined predictors of hypertension, diabetes, and cancer. Sensitivity analyses excluded outliers. Results: Hypertensive individuals are more likely to show cognitive impairment and unhealthy behaviors, including poor self-rated health, higher BMI, lower physical activity, and altered alcohol use. Risk increases with age, widowhood, retirement, hospital admissions, and poor mental health, while more emergency room or doctor visits slightly reduce it. People with diabetes experience greater depressive symptoms, hopelessness, and financial stress. They also tend to have poorer self-rated health, higher BMI, and less physical activity. Risk is higher for separated individuals and lower for females. Psychological distress is a key factor, while age, employment, and healthcare use show minimal influence. Cancer is linked to chronic stress, poorer perceived health, and mental health challenges. Risk is higher among older adults and those who keep house. Poor self-rated health, high BMI, low fruit and vegetable intake, and psychological distress increase risk, but healthcare use is not a strong predictor. Conclusions: While different chronic illnesses present distinct challenges to health behaviors and psychological well-being, they also share common features-such as increased stress and lifestyle disruptions-underscoring the importance of both tailored and cross-cutting interventions to effectively support individuals across conditions. Introduction: People with disabilities are characterized by suboptimal health and lower self-rating health. Their need for health care is greater, they often have a higher prevalence of health problems and they have more difficulty accessing health care. The aim of this study was to assess the health behaviors and health indicators of 12–18-year-old young people with intellectual disabilities and autism spectrum disorder, and to explore their school-related perceptions in the Northern Great Plain region of Hungary. Materials and Methods: A cross-sectional questionnaire survey was conducted with the participation of 185 young people. A custom questionnaire was used, based on the Health Behavior in School-aged Children (HBSC) survey, assessing eating habits, oral care, physical activity, mental well-being, and self-reported health status. The sample was categorized into three groups: the ID1 (Intellectual Disability level 1) group, encompassing young individuals with mild intellectual disability; the ID2 group, encompassing young people with moderate intellectual disability; and the ID+ASD group, encompassing young individuals affected by both intellectual disability and autism spectrum disorder. Results: Consumption of various food types was below optimal levels. Low intake of fruits and vegetables was common, with only 21.6% of the respondents consuming fruit daily and 23.8% consuming vegetables daily. ID1 group reported significantly higher rates of nervousness several times a week (17.8% vs. 5.6% and 6.9%, p < 0.001), sleep difficulties (28.8% vs. 7.4% and 15.5%, p = 0.032), and dizziness (9.6% vs. 1.9% and 3.4%, p = 0.022) compared to the other two groups. A third school-related factor, related to negative emotions, showed a near-significant difference (p = 0.064), suggesting that students with both autism spectrum disorder and intellectual disability perceive lower levels of acceptance from teachers. On school-free days, computer usage was significantly highest in the ID+ASD group; 50% of them used a computer for at least 4 h per day. Conclusions: To improve mental well-being among affected children, psychological support and the implementation of mental health programs are recommended. In addition to teaching stress management techniques and coping mechanisms, integrating relaxation techniques into comprehensive developmental programs—both individually and in groups—is advised. Background/Objectives: Child undernutrition remains a critical public health issue in Nepal, especially in the rural district of Solukhumbu. This study aimed to assess the prevalence and clinical characteristics of undernutrition, dietary patterns, and related health indicators in school-aged children from the Shree Saraswoti Basic School in Phuleli. Methods: A descriptive, cross-sectional study was conducted between July and August 2022. Fifty-four children (51.8% boys; mean age 9.4 ± 2.1 years) were evaluated using anthropometry, clinical examination, hemoglobin measurement, and three-day 24 h dietary recall. Data were analyzed using descriptive and inferential statistics. Results: BMI z-scores indicated that 39% of children were at risk of acute undernutrition, and 2% were at risk of moderate acute undernutrition. After adjusting for altitude, 87% were classified as anemic. Diets were dominated by cereals and vegetables, with a very low intake of fruits and proteins and no dairy consumption. Dental caries affected 59% of participants. Girls presented slightly higher subcutaneous fat percentages; however, 14.8% of the children exceeded the recommended thresholds. A dietary assessment revealed poor eating habits, including excessive intake of simple carbohydrates and insufficient nutrient diversity. Although socioeconomic data were not directly collected, the findings reflect the typical context of the vulnerability of isolated mountain communities. Undernutrition indicators (BMI, clinical signs, anemia) were associated with poorer health outcomes. An unexpected moderate inverse correlation was found between BMI and both systolic (r = −0.601) and diastolic (r = −0.550) blood pressure. Conclusions: The findings reveal a high burden of undernutrition and anemia among children in Solukhumbu, linked to poor diet and structural vulnerability. Urgent, community-based interventions—including nutrition education, agricultural diversification, and improved healthcare access—are needed. Longitudinal monitoring is essential to track progress and design sustainable, multisectoral solutions. Full article

Background/Objectives: Sarcopenia, characterized by the loss of muscle mass and strength, is prevalent in older persons and affects their quality of life. Nutritional intervention and physical activity play a key role in its prevention and treatment. This study aims to investigate the relationship between food consumption frequency as assessed through the Mini Nutritional Assessment (MNA) and probable sarcopenia, evaluated by grip strength, in Chilean older persons aged 65 or older. Methods: A correlational, cross-sectional study with a non-probabilistic sample of 155 older persons aged 65 or older was undertaken. Food consumption frequency was assessed using the MNA, and muscle strength was measured using a handgrip dynamometer. The authors analyzed the relationship between food consumption frequency, as assessed by the MNA, and the protein intake index with muscle strength. Results: Participants who consumed less than two servings of fruits and vegetables per day were 4.28 times more likely to have low muscle strength compared to those who consumed two or more servings per day (OR = 4.28; 95% CI: 1.59–11.45). No significant associations were found with the consumption of dairy products, legumes, meat, fish, poultry, or fluids. The protein intake index did not show a significant relationship with muscle strength. Conclusions: The results suggest that a diet rich in fruits and vegetables may have a protective effect on muscle strength in older persons. Promoting adequate intake of these foods could be critical in the prevention of sarcopenia in this population. Full article

Fruit and Vegetable Consumption Among Adolescent Secondary School Students in Boukombe and Natitingou, North Benin

Fruit and vegetables (F&V) are recommended for a healthy life. Adolescence is a critical period for the onset of eating disorders and future health. F&V consumption among adolescents is globally low, making this group a key target for diet/nutrition-related interventions. This cross-sectional study aimed to assess F&V consumption among secondary school students in the food-insecure communes of Boukombe (rural) and Natitingou (urban), Benin. Using probabilistic random sampling, 303 students completed F&V intake frequency questionnaires and 24-h dietary recalls on school and non-school days. Poisson models identified factors associated with F&V consumption. The results showed that only 8.8% (Boukombe) and 11% (Natitingou) of students consumed fruit at least twice per day, and over 80% of students had not eaten fruit in the preceding 24 h; 9.9% and 11.4%, respectively, consumed vegetables at least twice per day. On average, 45.5% of students in Boukombe and 68% in Natitingou consumed at least three types of vegetables on school days. The most commonly consumed fruits were oranges in Boukombe and lemons in Natitingou. Factors influencing fruit consumption included sex (p = 0.005), age (p = 0.04), and mothers’ occupation (p = 0.03) on school days/and school or non-school days, while commune (p = 0.00017) and ethnic group affected vegetable consumption. Such low F&V consumption among surveyed students is a matter of public health concern, as it is likely to affect their health―in terms of micronutrient deficiency―and intellectual performance. These results should incentivize nutrition researchers, project managers, public health officials, and policymakers to (re)design and implement broader measures targeting secondary school students’ dietary practices to increase their F&V consumption. This study aims to explore how cancer-related risk factors cluster among college students in Guam. Using the 2021–2022 Pacific Islands Cohort of College Students data, we conducted a latent class analysis (LCA) to organize the sample into classes based on clustering cancer risk factors, including tobacco use, binge drinking, low fruit/vegetable intake, physical inactivity, betel nut use, overweight/obesity, depression, and anxiety. Among the 577 college students surveyed, results show a high prevalence of low fruit/vegetable intake, overweight/obesity, depression, and anxiety. The LCA identified three classes, each defined by different clustering cancer risk behaviors. All classes showed high prevalence of low fruit/vegetable intake. Class 1 had the highest rates of tobacco use, betel nut use, and binge drinking. Class 2 had the highest rates of physical inactivity, depression, and anxiety. Class 3 had the lowest rates of betel nut use, overweight/obese, depression, and anxiety when compared with Classes 1 and 2. The clustering of risk behaviors highlights the need for targeted interventions and prevention strategies among Guam’s youth, aiming to address these behaviors and potentially reduce cancer risk in the region. Background/Objectives: Changes to food systems and food environments across the Pacific Islands region have influenced dietary behaviors. While dietary intake is limited, it is believed that fruit and vegetable consumption is low within these populations. Given the benefits of fruit and vegetable consumption, this exploratory study aimed to identify the motivators and facilitators of fruit and vegetable intake in a subset of Tongan adults. Methods: Semi-structured, 30 min interviews were conducted in Tongan with 12 participants (5 fieldworkers and 3 female community members who were interviewed separately and 4 women who took part in a small group interview). The responses were translated into English and were analyzed using thematic analysis. Results: Most participants thought that low fruit and vegetable consumption was of concern in Tongan communities. All participants agreed that diverse fruit and vegetable consumption is a priority for Tongan people and that communities are motivated to consume more fruits and vegetables. A total of 12 themes were derived from the results: 6 motivational and 6 facilitating, including determinants such as dietary patterns (taste and culture), community engagement/working in groups, and financial factors. Conclusions: While using a small sample size from Tongatapu, this provides a valuable insight from the Tongan communities’ perspectives on motivators and facilitators of fruit and vegetable consumption. The results offer policymakers, government, and NGOs contextually relevant and up-to-date data that can be used when developing health and nutrition programs. Full article
