Special Issue Information

Dear Colleagues,

Advancing sustainability requires a holistic approach to managing food resources in a dynamic socio-economic context, with the ultimate goal of preventing ecological crises. Current challenges in terms of finding healthy food products concern the various pollutions of the soil, air, and water, which affect raw materials through the transfer of these pollutants—physical, chemical, and microbiological. These must be neutralized so that the final product does not exert negative effects on consumer health. In this effort, appropriate methods must be found to, on the one hand, prevent pollution and, on the other hand, identify the presence of contaminants along the food chain and implement decontamination strategies that do not have a negative impact on the environment. At the same time, in the food industry, we must focus on ecological technologies and on generating as little waste as possible, finding methods that can use, for the most part, the waste resulting from food processing technologies, thus applying the principles of the circular economy. Considering these directions of study, we believe that this Special Issue adheres to the journal’s scholarly objectives, and, through the research results of colleagues in the same field of research, we will be able to make significant contributions in terms of sustainability in the food industry. Beyond this, we will be able to disseminate the results of research whose objectives are to highlight the ways in which the sustainable use of resources is promoted, the ways in which the environmental impact of the technologies used is reduced, the techniques through which we will be able to reduce food waste, and waste recovery methods resulting from various technologies in the circular economy.

Sustainability is an international peer-reviewed open access semimonthly journal published by MDPI.
