Special Issue Information

Dear Colleagues,

Yeasts, specifically of the species Saccharomyces cerevisiae and other members of this family, are the most relevant microorganisms of industrial use in quantitative terms. From the bakery and beverage industries to ethanol fuel, the number of thousands of tons of biomass and its products that have been produced daily around the world represents an important part of the world’s economy and market. In addition, yeasts are increasingly being used to produce high-value molecules and metabolites that could become medicines and synthesis blocks for green fine chemistry. Despite the increasing number of very advanced metabolic engineering projects worldwide, there is still room for basic projects that study the genetics and physiology of yeasts that are trying to identify new potentials for their industrial tasks. In this context, we are pleased to invite you to contribute to this Special Issue that aims to shed light on these genetic and metabolic traits that may be useful and that bring new

insights into their biotechnological potential. Research and review articles are welcome for submission, given that they include (but are not limited to) the following themes:

  • Biodiversity;
  • Fermentation;
  • Metabolic engineering;
  • Natural resources;
  • Nutraceuticals;
  • Sustainable industry;
  • Quantitative physiology;
  • Evolutionary biology;
  • Genome editing;
  • Synthetic biology.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Journal of Fungi is an international peer-reviewed open access monthly journal published by MDPI.
