Cover Story: This volume summarizes the Proceedings of the III International Ia ValSe-Food, Development of Food Ingredients from Iberoamerican Ancestral Crops and VI Symposium of Chia-Kink Network, which was held in the Central University of Chile, 16–18 November, Santiago, Chile. This volume gathers the recent investigations of la ValSe-Food Group and Chia-Link Network on these valuable seeds and other crops and provides comprehensive and up-to-date knowledge within all the relevant fields of food science. We hope that this book will contribute to the increased utilization of the Iberoamerican Valuable Seeds in human nutrition.
