Extensive beef systems in the tropics are the cheapest but require more land and longer rearing times with environmental impact. This study was carried out to evaluate three beef bull’s production systems in tropics: pasture-based system (PASTU), feedlot system immediately after weaning (FELOT) and a system with the combination of rearing in pasture and finishing in feedlot (PRIME) on animal performance and carcass characteristics of 30 bulls crossbred Angus x Nellore. The final weight, average daily gain and carcass weight (hot and cold) were higher (p < 0.050) for the FELOT system, intermediate for the PRIME system and lowest for the PASTU system. The carcass dressing (hot and cold), dripping losses, ratio (Longissimus dorsi) and degree of finishing were similar (p > 0.050). The carcass pH24h was higher for the PRIME system (p < 0.010). Subcutaneous fat thickness (mm) was lower for the PASTU system (p < 0.050). Marbling was better for the PRIME system. The tissular composition was similar among systems related to muscle percentage but PASTU showed the highest bone percentage (p < 0.050) and lowest of adipose (p < 0.050). PRIME enable cost-effective, fast beef production with less environmental impact. Full article

In the Australian primary industries, beef cows are recognized as monovular while sheep are less so, and both seem likely to benefit from increased litter sizes. In both species, there have been genetic developments causing increased litter sizes, but these have only had limited commercial application. This report describes the commercial use of the FecB (Booroola) gene in prime lamb ewes to increase lambing percentage from the 111% typical of the local industry to 145% in the flock described. In cattle, the use of the USMARC Twinner selection line genetics raised calf weaning percentage from the 89% typical of the local industry to 115% in the herds described. Full article

Nutrient composition data that accurately represent available beef products are critical to understanding beef’s role in healthy dietary patterns. The quality of beef products has changed over the past several decades, and updated nutrient data are warranted as USDA Prime beef cuts become more available. In an effort to provide a complete nutrient profile for frequently purchased USDA Prime beef cuts, five USDA Prime cuts; strip loin steak, tenderloin steak, ribeye steak, top sirloin steak, and rib roast were collected from retail stores in six geographical locations over three collections for macro- and micronutrient analysis in both the raw and cooked state. The separable lean portion of all analyzed USDA Prime cuts qualified as a good or excellent source, providing 10–19% or at least 20% of the daily value, respectively, for protein, niacin, vitamin B12, selenium, phosphorus, and zinc per FDA labeling claim standards. There was not a significant difference in cholesterol content between any of the cuts, raw or cooked (p ≥ 0.44 and 0.34, respectively). The percent lipid in raw, separable lean portions of the rib roast and strip loin steak was significantly greater than the lipid portion in tenderloin and top sirloin steaks (p ≤ 0.01). Per USDA standards, the separable lean portions of tenderloin steak and top sirloin steak qualify as lean beef, containing less than 10 g total fat, less than 4.5 g saturated fat, and less than or equal to 95 mg cholesterol. The current study provides the most up-to-date nutrient analysis for USDA Prime beef cuts, helping consumers and health professionals better identify the role of high-quality beef cuts in healthy dietary patterns. Beef dry-aging consists of a selection of unpackaged prime cuts placed in a controlled environment cold room for several weeks. The goals are to concentrate flavors like nutty and beefy and to improve tenderness. The aim of this study was to verify the microbiological and physicochemical behavior and sensory perception of meat during a sample process example of meat dry-aging. Twelve beef loins were selected for 90 days of dry aging and placed in a cold room with average temperature, relative humidity and forced air 3.2 ± 0.7 °C, 60.7 ± 4.2% and 0.5–2 m/s, respectively. Samples of crust and lean meat were collected on days 1, 14, 21, 35, 60 and 90 of the dry aging process for microbiological, physicochemical (pH, aw, color L*a*b*) and sensory analysis. During drying, no pathogenic bacteria were detected, and the average counts were higher for the crust. The average values for water activity (aw) and pH were 0.98 ± 0.02 and 5.77 ± 0.015, respectively. A slight decrease in aw and an increase in pH were observed over the aging period (p < 0.05). The lower microbial counts on the lean meat and the overall assessment of freshness confirm the importance of good manufacturing and storage practices during dry aging. Full article

Meat has been found to be a prime vehicle for the dissemination of foodborne pathogens to humans worldwide. Microbial meat contaminants can cause food-borne diseases in humans. The threat to consumers by microbial meat contaminants necessitates the studying of meat microbial loads to prevent potential illnesses in consumers. Studies investigating the meat microbial loads in South Africa are limited. The objective of this study was to compare microbial contamination of different meat types from low-throughput (LTA) and high-throughput abattoirs (HTA) at three stages of the distribution chain from abattoir to retail outlets. Beef, pork, and mutton (n = 216) carcasses were sampled: during the loading process at the abattoirs, when off-loading at the supply points and during marketing. All samples were subjected to total bacterial count (TBC), coliform count (CC), presumptive Escherichia coli (E. coli) (PEC) and Staphylococcus aureus (S. aureus) detection. In mutton, TBC dominated at loading, CC was similar across distribution chain stages, PEC was the predominant microbial contaminant at the offloading stage at the HTA, but TBC was affected at loading, CC was similar across distribution chain stages, PEC was affected at loading, and S. aureus was affected at the display stage at the LTAs. In beef, TBC had similar levels at loading; CC and PEC dominated at the display stage for the HTAs. However, TBC was affected at the display stage; CC was similar across stages; PEC was affected at the offloading stage at the LTAs. In pork, higher contamination levels were discovered at the display stage, CC dominated at the loading stage, with PEC detected at offloading at the HTAs but TBC, CC, PEC and S. aureus were similar across stages at the LTAs. TBC, CC and PEC were affected by the storage period and meat supplier to meat shop distance whereas distance affected the TBC, CC and PEC. Meat supplier to meat shop distance negatively correlated with meat distribution chain stage but positively correlated with TBC, CC and PEC such as temperature. Temperature positively correlated with meat distribution chain stage and shop class. Meat distribution chain stage was negatively correlated with storage period, TBC, CC and PEC but positively correlated with shop class. Shop class negatively correlated with storage period, TBC, CC and PEC. Storage period positively correlated with TB, CC and PEC. TBC and meat type positively correlated with CC and PEC. CC positively correlated with PEC but negatively correlated with S. aureus such as PEC. In conclusion, mutton, pork and beef meat are susceptible to microbial contamination at distribution chain stages in abattoirs. Full article

Maternal antibodies interfere with BRSV vaccine responses and efficacy in young calves. The objective of this study was to determine if vaccination before the complete absorption of colostral antibodies results in adequate immune priming and clinical protection of beef calves. Within 6 h of life, calves were randomly assigned to 2 different treatment groups. Group Vacc (n = 25) received a single dose of a modified-live virus (MLV) BRSV vaccine intranasally (IN) and group Control (n = 25) received 2 mL of 0.9% saline IN. At approximately 3 months of age, all calves were experimentally challenged with BRSV. Serum and nasal secretion samples were collected before and after challenge for BRSV real-time RT-PCR and antibody testing. Respiratory signs were not observed before challenge. After challenge, respiratory scores were similar between groups. On the challenge day, >40% of calves in each group were febrile. The mean serum and nasal BRSV-specific antibody titers indicated natural BRSV exposure before the experimental challenge in both groups. All calves tested positive for BRSV and had a similar duration of shedding after challenge. Based on these results, vaccination at birth does not offer advantages for immune priming or clinical protection for beef calves in BRSV-endemic cow-calf herds. Full article

A linear programming optimization tool is useful to assist farmers with optimizing resource allocation and profitability. This study developed a linear programming profit optimization model with a silage supplement scenario. Utilizable kilograms of pasture dry matter (kg DM) of the total pasture mass was derived using minimum and maximum pasture mass available for beef cattle and sheep and herbage utilization percentage. Daily metabolizable energy (MJ ME/head) requirements for the various activities of beef cattle and sheep were estimated and then converted to kg DM/head on a bi-monthly basis. Linear programming was employed to identify the optimum carrying capacity of beef cattle and sheep, the most profitable slaughtering ages of beef cattle, the number of prime lambs (sold to meat processing plants), and sold store lambs (sold to other farmers for finishing). Gross farm revenue (GFR) and farm earnings before tax (EBT) per hectare and per stock unit, as well as total farm expenditure (TFE), were calculated and compared to the average value of Taranaki-Manawatu North Island intensive finishing sheep and beef Class 5 farming using Beef and Lamb New Zealand (B+LNZ) data. The modeled farm ran 46% more stock units (a stock unit consumed 550 kg DM/year) than the average value of Class 5 farms. At this stocking rate, 83% of the total feed supplied for each species was consumed, and pasture supplied 95% and 98% of beef cattle and sheep feed demands, respectively. More than 70% of beef cattle were finished before the second winter. This enabled the optimized system to return 53% and 188% higher GFR/ha and EBT/ha, respectively, compared to the average values for a Class 5 farm. This paper did not address risk, such as pasture growth and price fluctuations. To understand this, several additional scenarios could be examined using this model. Further studies to include alternative herbages and crops for feed supply during summer and winter are required to expand the applicability of the model for different sheep and beef cattle farm systems. Fat content is one of the most important parameters of beef grading. In this study, a hyperspectral imaging (HSI) system, combined with multivariate data analysis, was adopted for the classification of beef grades. Three types of beef samples, namely Akaushi (AK), USDA prime, and USDA choice, were used for HSI image acquisition in the spectral range of 400–1000 nm. Spectral information was extracted from the image by applying the partial least squares discriminant analysis (PLS-DA) for the three classifications. A total of eight different types of data pre-processing procedures were tested during PLS-DA to evaluate their individual performance, with the accepted pre-processing method selected based on the highest accuracy. Chemical and binary images were generated to visualize the fat mapping of the samples. Quantitative analysis of the samples was performed for the reference measurement of the dry matter and fat content. The highest overall accuracy, 86.5%, was found using the Savitzky–Golay second derivatives pre-processing method for PLS-DA analysis. The optimal wavelength values were found from the beta coefficient curve. The chemical and binary images showed significant differences in fat mapping among the three groups of samples, with AK having the greatest intramuscular fat content and USDA choice having the least. Similar results were observed during the proximate analysis. The findings of this study demonstrate that the HSI technique is a potential tool for the fast and non-destructive determination of beef grades based on fat mapping. Full article

The present study examined whether priming with estradiol benzoate (EB) for 12 h increased both the peak and duration of LH release in response to kisspeptin (KISS1, KP) in cows. In a Latin square design, ovariectomized Nelore cows (n = 8) received: Control, i.m. 4 mL of 0.9% saline; KP, i.m. 4 mg murine KISS1-10; EBKP, i.m. 4 mg KISS1-10 + i.m. 2 mg EB simultaneously; EB12KP, i.m. 4 mg KISS1-10 + i.m. 2 mg EB 12 h before KISS1-10. Concentrations of LH were determined in blood samples obtained at time 0 (treatment), 20, 40, 60, 90, 120, 150, 180, 210 and 270 min. Concentrations of LH were analyzed by Proc GLIMMIX for repeated measures. In case of significance, the adjusted Tukey test was used to test for differences among treatments. GraphPad 8.0 PRISM® was used to determine the area under the LH-response curve (AUC) after injection of KISS1-10. Plasma LH remained relatively constant throughout sampling after treatment with saline. The peak in LH after injection of KISS1-10 occurred at 20 min in Groups KP and EBKP and at 40 min in Group EB12KP. The peak LH response (∆LH, ng/mL) was greater (p < 0.01) in Group EB12KP (5.6 ± 0.9) than in Groups KP (2.4 ± 0.9) and EBKP (3.5 ± 0.9), which did not differ. AUC (LH ng/mL*min) was greater (p = 0.02) in Group EB12KP (439 ± 73) than in Groups KP (176 ± 73) and EBKP (241 ± 73), with the latter two groups not differing. The findings indicated that 12 h priming with EB increased both the peak and duration of the LH response to treatment with KISS1. The incorporation of EB priming and KISS1 could improve the efficiency of estrus synchronization with fixed-time AI in cows. This would have an important practical application in assisted breeding in beef and dairy cattle. Full article

The mechanism of food allergy may vary. This study aimed to compare the effects of milk, yogurt, or beef meat supplementation on humoral and cellular immune responses in a mice model. Mice were divided into four groups: The “Milk group” was sensitized with a β-lactoglobulin (β-lg)/α-casein (α-CN) mixture and supplemented cow milk; the “Yogurt group” was sensitized with β-lg/α-CN and supplemented yogurt; the “Beef group” was immunized with bovine serum albumin (BSA) and supplemented beef meat; and the “PBS group” received PBS in all procedures. ELISA was used to measure humoral response, including: Total IgE, specific IgG, and IgA. Cellular response was determined by phenotyping lymphocyte from lymphoid tissue and measuring the Th1/Th2 cytokine concentration with flow cytometry. The qPCR method was used for quantification of the fecal microbiota. The results obtained revealed a lower IgE level for the Yogurt group than for the Milk one. In the Yogurt group, the contribution of regulatory T cells to MLN and PP was higher compared to the other groups. We confirmed that diet supplementation with yogurt modulates the immune response to the prime allergen, and changes the activity of serum antibodies to milk proteins and BSA. Based on a specific antibodies level, we cannot exclude the possibility of CMA mice reaction against BSA. Full article

We propose a method for building a simple electronic nose based on commercially available sensors used to sniff in the market and identify spoiled/contaminated meat stocked for sale in butcher shops. Using a metal oxide semiconductor-based electronic nose, we measured the smell signature from two of the most common meat foods (beef and fish) stored at room temperature. Food samples were divided into two groups: fresh beef with decayed fish and fresh fish with decayed beef. The prime objective was to identify the decayed item using the developed electronic nose. Additionally, we tested the electronic nose using three pattern classification algorithms (artificial neural network, support vector machine and k-nearest neighbor), and compared them based on accuracy, sensitivity, and specificity. The results demonstrate that the k-nearest neighbor algorithm has the highest accuracy. Full article
