Compared to high-cost hardware-based Global Navigation Satellite System (GNSS) positioning techniques, smartphone-based precise positioning technology plays an important role in applications such as the Internet of Things (IoT). Since Google released the Nougat version of Android in 2016, this has provided a new method for achieving high-accuracy positioning solutions with a smartphone. However, two factors are limiting smartphone-based high-accuracy applications, namely, real-time precise orbit/clock products without the internet and the quality-adaptive precise point positioning (PPP) model. To overcome these two factors, we introduce BDS PPP-B2b orbit/clock corrections and a hybrid weight function (based on C/N0 and satellite elevation) into smartphone real-time PPP. To validate the performance of such a method, two sets of field tests were arranged to collect the smartphone’s GNSS measurements and PPP-B2b orbit/clock corrections. The results illustrated that the hybrid weight function led to 5.13%, 18.00%, and 15.15% positioning improvements compared to the results of the C/N0-dependent model in the east, north, and vertical components, and it exhibited improvements of 71.10%, 72.53%, and 53.93% compared to the results of the satellite-elevation-angle-dependent model. Moreover, the mixed-frequency measurement PPP model could also provide positioning improvements of about 14.63%, 19.99%, and 9.21%. On average, the presented smartphone PPP model can bring about 76.64% and 59.84% positioning enhancements in the horizontal and vertical components. Full article

Red Beetroot Skin Powder Addition as a Multifunctional Ingredient in Nougat

Beetroot (Beta vulgaris L.) is a plant grown for its roots, which are used to obtain sugar, feed animals, and for human use. Beetroot skin, a by-product of food processing, is a significant source of bioactive compounds, including dietary fiber and antioxidants. The primary objective of this work was to utilize beetroot skin powder to produce value-added nougat. Analytical methods, like antioxidant activity tests, proximate analysis, and sensory assessments, are used to determine the impact of beetroot skin powder on the final product. The beetroot skin powder extract had a remarkable content of phytochemicals and antioxidant activity. The inhibitory effect of the extract was tested on enzymes linked to metabolic syndrome, oxidative stress, and inflammation. The beetroot skin powder extract inhibited α-glucosidase, α-amylase, lipase, and lipoxygenase enzymes. The characterization of value-added nougat illustrates the multifunctionality of beetroot peel powder within its composition, serving as a significant source of natural compounds with antioxidant, coloring, and flavoring properties. This enhances sensory attributes, including color, aroma, and texture, augmenting product diversity and consumer appeal. This is evidenced by the increase in the total content of betalains (3.77 ± 0.09 mg/g DW.) and polyphenols (69.48 ± 2.88 mg GAE/100 g DW.), which lead to high antioxidant activity (73.89 ± 3.65 mM Trolox/100 g DW.) for the nougat sample with 6% added beetroot powder. Thus, beetroot skin powder replaced chemically synthesized additives with antioxidants and natural pigments, improving life quality and implicitly capitalizing on beetroot processing by-products, supporting circular economy principles at the global level. This study explores the phenomenon of nougat cracker syndrome among Korean tourists in Taipei, Taiwan, foregrounding the evolving concept of authenticity in tourism food souvenirs. Using a phenomenological case study approach, the study conducted interviews with 12 tourist groups (21 tourists) and four popular nougat cracker vendors, along with field observations. It investigates how authenticity is achieved beyond local food traditions through entrepreneurial emergence, municipal-level campaigns, social influence via online platforms, and shifts in the local business landscape that diversify tourism experiences. Authenticity, understood as a process of emergence, is examined through various factors: the prominent nougat cracker vendor MIMI and Taipei’s municipal-level campaign as pre-authenticity; memory of taste as the interaction of pre-, proto-, and post-authenticity; the increasing number of nougat cracker vendors in the city, viewed from a phenomenological perspective, as in situ authenticity; and the role of social media in both pre- and post-authenticity. This study contributes to the theoretical expansion of food souvenir authenticity and offers practical implications for developing food souvenir items that transcend conventional notions of authenticity. Nowadays, digitalisation is present in all links of the product life cycle and within product design. Packaging is a critical element that affects the customer’s purchase intention. Therefore, packaging is one of the elements for which it is positive to include techniques and methods based on Industry 4.0 to obtain results from users and bring them closer to the process. The relationship between packaging and the expected quality and emotions of users is a topic that is addressed in the social axis of sustainability and involves an effort to strengthen the relationship with the user. This article studies the expected quality of nougat in terms of packaging shape and colour using ANOVA analysis. For this purpose, a survey was carried out among 122 participants in Spain and Mexico. The main conclusion is that packaging with a combination of three shapes (rectangle, square and triangle) and colours (yellow, orange and red) enhances consumers’ emotions of Admiration, Satisfaction, Pleasant Surprise, Attraction, Fascination and Joy. Precise position information available from smartphones can play an important role in developing new location-based service (LBS) applications. Starting from 2016, and after the release of Nougat version (Version 7) by Google, developers have had access to the GNSS raw measurements through the new application programming interface (API), namely android.location (API level 24). However, the new API does not provide the typical GNSS observations directly (e.g., pseudorange, carrier-phase and Doppler observations) which have to be generated by the users themselves. Although several Apps have been developed for the GNSS observations generation, various data analyses indicate quality concerns, from biases to observation inconsistency in the generated GNSS observations output from those Apps. The quality concerns would subsequently affect GNSS data processing such as cycle slip detection, code smoothing and ultimately positioning performance. In this study, we first investigate algorithms for GNSS observations generation from the android.location API output. We then evaluate the performances of two widely used Apps (Geo++RINEX logger and GnssLogger Apps), as well as our newly developed one (namely UofC CSV2RINEX tool) which converts the CSV file to a Receiver INdependent Exchange (RINEX) file. Positioning performance analysis is also provided which indicates improved positioning accuracy using our newly developed tool. Future work finding out the potential reasons for the identified misbehavior in the generated GNSS observations is recommended; it will require a joint effort with the App developers. Full article

Currently, in Spain there are no studies assessing the intakes and sources of intrinsic and added sugars by both children consuming standard milks and children regularly consuming adapted milk formulas. Our goal was to evaluate current sugar intake levels (intrinsic and added) and their major dietary sources within the EsNuPI study participants by applying two 24-h dietary recalls that were completed by 1448 children (1 to <10 years) divided into two subsamples: One “Spanish Reference Sample” (SRS) of the general population (n = 707) and another sample which included children consuming adapted milks including follow-on milk, toddler’s or growing up milk and fortified and enriched milks, here called “Adapted Milk Consumers Sample” (AMS) (n = 741). Estimates of intrinsic and added sugar intakes from the Spanish EsNuPI population as well as the adherence to recommendations varied notably according to age segment, but no major differences between subsamples were found. Younger children (1 to <3 years) showed the highest added sugar contribution to total energy intake (TEI) (SRS: 12.5% for boys and 11.7% for girls; AMS: 12.2% for boys and 11.3% for girls) and the lowest adherence to recommendations set at <10% TEI (SRS: 27.4% for boys and 37.2% for girls; AMS: 31.3% for boys and 34.7% for girls). Adherence increased with age but remains inadequate, with approximately one in two children from the older age segment (6 to <10 years) exceeding the recommendations. Main food sources of intrinsic sugars for both subsamples were milk and dairy products, fruits, vegetables and cereals, while for added sugars, these were milk and dairy products (mainly yogurts), sugars and sweets (mainly sugary cocoa and nougat), bakery products (mainly cookies) and cereals (mainly bread and wheat flour). However, for the AMS, the groups milk and dairy products and cereals showed a significantly lower contribution to intrinsic sugar intake but a significantly higher contribution to that of added sugars. These results demonstrate that sugar intake and the adherence to recommendations in the studied population varied notably according to age but not to the type of milk consumed. In addition, our results highlight the need to monitor the consumption of added sugars by the infant population, as well as the need to make efforts to facilitate this task, such as harmonizing the recommendations regarding free/added sugars and the inclusion of information on their content on the nutritional labeling of products in order to incorporate them into food composition databases. The Global Navigation Satellite System (GNSS) receiver is one of the many sensors embedded in smartphones. The early versions of the Android operating system could only access limited information from the GNSS, allowing the related Application Program Interface (API) to obtain only the location. With the development of the Android 7.0 (Nougat) operating system in May 2016, raw measurements from the internal GNSS sensor installed in the smartphone could be accessed. This work aims to show an initial analysis regarding the feasibility of Zenith Total Delay (ZTD) estimation by GNSS measurements extracted from smartphones, evaluating the accuracy of estimation to open a new window on troposphere local monitoring. Two different test sites have been considered, and two different types of software for data processing have been used. ZTDs have been estimated from both a dual-frequency and a multi-constellation receiver embedded in the smartphone, and from a GNSS Continuously Operating Reference Station (CORS). The results have shown interesting performances in terms of ZTD estimation from the smartphone in respect of the estimations obtained with a geodetic receiver. Full article

A new method to design in-orbit synthetic aperture radar operational parameters has been implemented for the Korean Multi-purpose Satellite 6 mission. The implemented method optimizes the pulse repetition frequency when a satellite altitude changes from its nominal one, so it has the advantage that the synthetic aperture radar performances can satisfy the requirements for the in-orbit operation. Other commanding parameters have been designed to conduct trade-off between those parameters. This paper presents the new optimization method to maintain the synthetic aperture radar performances even in the case of an altitude variation. Design methodologies to determine operational parameters, respectively, at nominal altitude and in orbit are presented. In addition, numerical simulation is presented to validate the proposed optimization and the design methodologies. Full article

Fat bloom is an outstanding quality defect especially in filled chocolate, which usually comprises oils of different origins and with different physical properties. Dark chocolate pralines filled with nougat contain a significant amount of hazelnut oil in their center and have been reported as being notably susceptible to oil migration. The current study was designed to test the assumption that a targeted crystallization of nougat with cocoa butter seed crystals is an appropriate technological tool to reduce filling oil transfer to the outside of the praline and, hence, to counteract chocolate shell weakening and the development of fat bloom. For this purpose, the hardness of nougat/chocolate layer models and the thermal properties of chocolate on top of nougat were analyzed during storage at 23 °C for up to 84 days. Pronounced differences between layer models with seeded nougat and with control nougat that was traditionally tempered were observed. The facts that chocolate hardness increased rather than decreased during storage, that the cocoa butter melting peak was shifted towards a lower temperature, and that the hazelnut oil content in the chocolate was reduced can be taken as explicit indicators for the contribution of seeded nougat to the fat bloom stability of filled chocolate. The continual miniaturization of mass-market sensors built in mobile intelligent terminals has inspired the development of accurate and continuous navigation solution for portable devices. With the release of Global Navigation Satellite System (GNSS) observations from the Android Nougat system, smartphones can provide pseudorange, Doppler, and carrier phase observations of GNSS. However, it is still a challenge to achieve the seamless positioning of consumer applications, especially in environments where GNSS signals suffer from a low signal-to-noise ratio and severe multipath. This paper introduces a dedicated android smartphone application called Walker that integrates the GNSS navigation solution and MEMS (micro-electromechanical systems) sensors to enable continuous and precise pedestrian navigation. Firstly, we introduce the generation of GNSS and MEMS observations, in addition to the architecture of Walker application. Then the core algorithm in Walker is given, including the time-differenced carrier phase improved GNSS single-point positioning and the integration of GNSS and Pedestrian Dead Reckoning (PDR). Finally, the Walker application is tested and the observations of GNSS and MEMS are assessed. The static experiment shows that, with GNSS observations, the RMS (root mean square) values of east, north, and up positioning error are 0.49 m, 0.37 m, and 1.01 m, respectively. Furthermore, the kinematic experiment verifies that the proposed method is capable of obtaining accuracy within 1–3 m for smooth and continuous navigation. Full article
