Eminium rauwolffii (Blume) Schott var. rauwolffii is a member of the Araceae a large and mainly tropical family distributed worldwide. The Eminium species are utilized for various purposes including therapeutic uses in traditional medicine and as food. To analyze the antioxidant properties of water extract of E. rauwolffii (WEER) and ethanol extract of E. rauwolffii (EEER), 2,2’-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS•+) radical and 1,1-diphenyl-2-picrylhydrazyl (DPPH.) free radical scavenging, Fe3+-2,4,6-tris(2-pyridyl)-S-triazine (TPTZ) and Cu2+ reducing assays were studied. Antioxidant activities and reducing properties of both extracts were compared to standard antioxidants: BHT, BHA, α-Tocopherol, and Trolox. The IC50 values of EEER for radical scavenging were higher than those of standard antioxidants (25.35 ± 1.42 μg/mL for ABTS•+ and 106.80 ± 1.88 μg/mL for DPPH). The total phenolic and flavonoid quantities in WEER and EEER were measured in the range of 189.78 ± 0.01 to 298.54 ± 0.01 mg GAE/g and 89.37 ± 0.01 to 178.95 ± 0.01 mg QE/g, respectively. The IC50 values for EEER and WEER against α-glycosidase, acetylcholinesterase (AChE), butyrylcholinesterase (BChE) and carbonic anhydrase I and II (hCA I and II) enzymes were 10.79 ± 5.61 to 13.18 ± 5.77, 36.14 ± 4.61 to 62.63 ± 1.67, 69.37 ± 7.36 to 37.48 ± 0.27, 81.30 ± 5.95 to 62.35 ± 8.03, and 29.34 ± 1.38 to 115.90 ± 3.3 µg/mL respectively. The antioxidant activity and enzymes inhibitory capacity of WEER were close, and comparable to the capacity demonstrated by the standards. The amount of sixteen compounds was identified from EEER. Numerous phytochemicals, including cynaroside, p-coumaric acid, cosmosiin, caffeic acid, and quinic acid, were quantitatively determined using the LC-MS/MS method. This clearly indicates that phenolic- and flavonoid-rich E. rauwolffii may have potential in the management of glaucoma, Alzheimer’s disease, diabetes, cardiovascular, and cancer disorders. This study investigates the antioxidant properties of several synthetic peptides derived from milk proteins previously identified in milk permeate, a by-product of the dairy industry. The aim of the research is to identify which peptides present in milk permeate are responsible for its antioxidant activity. A comprehensive experimental strategy was employed to evaluate their antioxidant potential, including in silico selection, in vitro free radical scavenging assays and cellular models using Caco-2 and HCT116 cell lines. The peptides were screened using a molecular docking approach for their potential interaction with the Kelch-like ECH-associated protein 1/nuclear factor erythroid 2-related factor 2 (Keap1/Nrf2) pathway, and eight out of twenty-eight were selected and synthesized for further analyses. In vitro, six of the selected peptides demonstrated significant direct antioxidant activity in the DPPH scavenging assay, and two in the ABTS scavenging test. In cellular environments, three peptides (LPAPELGPRQA, LPIIQKLEPQI and NGQVWEESLKRL) effectively protect cells from oxidative stress induced by tert-butyl hydroperoxide, reducing reactive oxygen species production and partially mitigating lipid peroxidation. Further investigation showed that two of them (LPAPELGPRQA and LPIIQKLEPQI) effectively induce the Keap1/Nrf2 pathway, as evidenced by a ∼1.5-fold increase in Nrf2 levels and overexpression of downstream proteins. Permeability studies revealed that these peptides can cross the intestinal monolayer (2–3% in 2 h), suggesting potential systemic effects. Overall, these findings highlight the multifunctional antioxidant properties of the investigated peptides and support their potential application as nutraceuticals or therapeutic agents for oxidative stress-related conditions. Growing concerns over food waste and the increasing demand for gluten-free products highlight the need for sustainable food innovations. This study investigated the valorization of tomato processing by-products as functional ingredients in gluten-free crackers. Tomato by-products were dehydrated, milled into powder, and incorporated into cracker formulations at 10%, 20%, and 30% (w/w). The crackers were evaluated for bioactive compound content (lycopene, total carotenoids, and total phenolics), antioxidant activity (DPPH radical scavenging), and sensory acceptability using a 5-point hedonic test with 50 consumers. Increasing the level of tomato by-product incorporation significantly enhanced the nutritional profile of the crackers. Lycopene content increased from 0.65 mg/100 g in the control to 9.43 mg/100 g at 30% enrichment, while total phenolic content increased from 52.60 to 154.76 mg GAE/100 g. Sensory evaluation indicated that the 10% enrichment achieved the highest overall acceptability score, whereas higher enrichment levels resulted in slightly reduced taste preference. These findings demonstrate that tomato by-products can be effectively used to improve the nutritional quality of gluten-free crackers while maintaining acceptable sensory properties at moderate enrichment levels, supporting the sustainable valorization of tomato processing residues. This study focuses on the production and characterization of polyvinyl alcohol (PVA)-chitosan (CS)-based nanoparticles loaded with vitamin E (VitE) and ephedrine (Ep) via electrospraying for intranasal drug delivery in narcolepsy treatment. The nanoparticles were successfully synthesized using optimized parameters (15.5 kV voltage, 0.3 mL/h flow rate, 25 G needle size, and 14 cm distance). Scanning electron microscopy (SEM) analysis confirmed the formation of spherical particles with an average size of 350–500 nm, while energy-dispersive X-ray spectroscopy (EDS) mapping revealed a homogeneous elemental distribution with oxygen (51.74%), silicon (24.48%), carbon (6.47%), zinc (6.08%), and aluminum (3.82%). Fourier-transform infrared (FTIR) spectra demonstrated the successful encapsulation of VitE and Ep through characteristic peaks at 3285 cm−1 (OH stretching), 1731 cm−1 (C=O stretching), and 1086 cm−1 (C-O-C stretching). In vitro drug release analysis indicated a controlled and sustained release profile, with cumulative VitE and Ep release reaching 78.6% and 84.3%, respectively, over 48 h in phosphate-buffered saline (PBS, pH 7.4). Antioxidant activity assessment using the DPPH assay confirmed an R2 value of 18.84 µg/mL, demonstrating significant free radical scavenging potential. The antibacterial activity, tested via the disk diffusion method, exhibited inhibition zones of 18.31 ± 5.8 mm (E. coli) and 21.51 ± 1.57 mm (S. aureus), confirming strong antimicrobial properties. These findings suggest that the developed electrosprayed PVA/CS nanoparticles loaded with VitE and Ep offer a promising intranasal delivery system with enhanced bioavailability, controlled release, antioxidant capacity, and antibacterial properties, making them a viable candidate for narcolepsy treatment. The differential effects of thermolysin and four commercial proteases on soy protein isolate (SPI) were investigated under enzyme-specific hydrolysis conditions to comparatively assess the structural, functional, and instrumental taste differences among the resulting hydrolysates. Under the enzyme-specific hydrolysis conditions, among the enzymes tested, thermolysin induced substantial fragmentation of SPI, with products mainly distributed below 25 kDa and accompanied by marked conformational rearrangement. Thermolysin-treated SPI exhibited the highest total free amino acid content (14.805 mg/g), especially Tyr and Phe, together with the highest solubility (80.52 ± 4.40%), the highest emulsifying activity index (36.11 m2/g), and the strongest antioxidant capacities in 2,2′-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), 2,2-diphenyl-1-picrylhydrazyl radical scavenging assay (DPPH), and hydroxyl radical scavenging assays. Electronic tongue analysis further showed that enzymatic hydrolysis generally enhanced umami and richness while reducing astringency relative to native SPI. Notably, SPI-Ther exhibited the most pronounced instrumental taste reconfiguration, characterized by increased umami (9.57) and richness (7.57), but also the highest bitterness (4.75) and aftertaste-B (3.46), indicating a distinct functionality–taste trade-off rather than simple debittering. In contrast, papain generated the highest umami response, whereas trypsin produced the mildest taste profile with the lowest bitterness. Overall, under the enzyme-specific hydrolysis conditions used in this study, thermolysin yielded the most pronounced improvement in the measured functional indices of SPI. However, these findings should be interpreted as a comparative, condition-specific assessment rather than a direct ranking of intrinsic protease specificity, and additional peptide characterization and sensory validation would be needed before taste-oriented applications can be recommended. Background: Cysteinyl leukotrienes are components of slow-reacting substances of anaphylactic shock (SRS-A) and play a key role in asthma and inflammatory responses. Although chromone-2-carboxylic acids and substituted (aryloxy)alkanoic acids have the potential to be SRS-A antagonists, their comprehensive structure–activity relationships and pharmacokinetic characteristics remain understudied. Objective: This study integrated computational and experimental approaches, including QSAR modeling, molecular docking, ADMET analysis, molecular dynamics (MD) simulations, and antioxidant evaluation to identify and prioritize bifunctional compounds with anti-inflammatory and free radical-scavenging properties. Methods: A set of 68 compounds was analyzed using 2D and 3D quantitative structure–activity relationships (QSAR) (MLR, MNLR, SVR, ANN, and atom-based partial least squares). Molecular docking and 100 ns MD simulations were performed against the CysLT1 receptor (PDB ID: 6RZ5). ADMET and drug-like properties of the compounds were predicted using ADMETlab 2.0 and SwissADME, and the in vitro antioxidant activity of the top-ranked compounds was evaluated using the DPPH method. Results: The atom-based 3D-QSAR model showed strong predictive power (R2 = 0.9524, Q2 = 0.5382). Compounds 25, 41, and 47 stood out with the most significant binding energies: −9.5 kcal/mol for 25, −10.0 kcal/mol for 41, and −9.4 kcal/mol for 47. MD simulations confirmed the structural stability and consistent interactions of the protein-compound 47 complex. ADMET analysis showed that compounds 25 and 41 had good pharmacokinetic properties, and in vitro antioxidant assays verified their free radical-scavenging efficacy. Conclusion: Our results highlight the utility of an integrated computational–experimental strategy for the discovery of dual-acting SRS-A antagonists. Compound 25 is highlighted as a promising lead compound for further preclinical development, which effectively combines leukotriene receptor antagonism and antioxidant activity. This framework provides an effective strategy for prioritizing lead compounds in anti-inflammatory drug development. Full article

Sorghum (Sorghum bicolor L.) is an environmentally friendly crop known for its nutritional and bioactive properties. This study investigated the effects of sorghum on the antioxidant properties and consumer acceptance of nurungji, a traditional Korean snack. To understand the antioxidant contribution of ferulic acid in sorghum during non-enzymatic browning, the antioxidant activity of ferulic acid was evaluated using a sugar (glucose or fructose)–lysine Maillard reaction model system. Nurungji samples were prepared with varying sorghum blending ratios (SN0, SN25, SN50, SN75, and SN100) and heating durations (0, 1, 3, and 5 min). The total polyphenol and total flavonoid contents of nurungji increased significantly in a sorghum concentration- and heating duration-dependent manner. Antioxidant activities, including DPPH and ABTS radical scavenging activities, ferric reducing antioxidant power (FRAP), and reducing power, exhibited trends similar to those of the antioxidant components. In the isolated model system, the addition of ferulic acid significantly enhanced the antioxidant capacity of the Maillard reaction products (MRPs), with the fructose–lysine–ferulic acid solution exhibiting the highest activity. These results support the proposed mechanism that during the thermal processing of nurungji, complex polymeric phenolic compounds within the sorghum are degraded, releasing free ferulic acid that actively boosts the overall antioxidant properties of the resulting MRPs. Although the antioxidant properties of nurungji increased with higher sorghum concentration, the consumer acceptance evaluations indicated that SN0 and SN25 received significantly higher scores for overall acceptance, taste acceptance, and purchase intention (p < 0.05). The growing demand for sustainable food preservation drives interest in edible nanoemulsions encapsulating bioactive compounds. This study developed casein–lecithin-based nanoemulsions combining carvacrol (CV)—a compound with potent antimicrobial and moderate antioxidant activity—with vitamin E (VitE)—a powerful antioxidant—as multifunctional food coatings. Three formulations were prepared via homogenization: NE-CV (2% CV), NE-VitE (2% VitE), and NE-CV/VitE (1% each). Physicochemical characterization revealed monomodal size distributions (22.7–57.7 nm), with successful encapsulation confirmed by FTIR. NE-CV/VitE exhibited intermediate particle size (34.4 nm) and zeta potential (−19.8 mV). Antioxidant activity followed NE-VitE > NE-CV/VitE > NE-CV, with the co-encapsulated system preserving VitE’s radical scavenging (EC50 10.76 µL/mL, DPPH). Remarkably, NE-CV/VitE demonstrated enhanced antibacterial activity against E. coli, requiring half the CV concentration (0.07 mg/mL) versus NE-CV alone (0.15 mg/mL), while maintaining CV dose-dependent activity against S. aureus (0.30 mg/mL). Nanoencapsulation significantly reduced CV cytotoxicity in human lymphocytes at concentrations up to 50 μg/mL (48.8% cytostasis vs. 58.9% for free CV), with no genotoxic effects observed within this range, while preserving full bioactivity. In fresh minced pork over 6-day refrigerated storage, NE-CV/VitE coating maintained pH stability (5.65–5.75), preserved red color (a* values 6.24 vs. 4.99 uncoated), reduced lipid oxidation (TBARS 0.74 vs. 0.82 mg MDA/kg), and achieved a 99% reduction (2-log) in total viable counts versus uncoated controls. The CV/VitE co-encapsulated nanoemulsion represents an integrated, safe, and effective multifunctional preservation technology with synergistic antimicrobial enhancement and uncompromised antioxidant protection, offering a natural alternative for comprehensive food quality preservation. In this study, the Box–Behnken Design (BBD) was adopted to optimize the ultrasound-assisted extraction (UAE) conditions of polyphenols from Hericium erinaceus (H. erinaceus) on the basis of single-factor experiments, with extraction time, solid–liquid ratio and ethanol concentration as the key investigation factors. The optimal extraction parameters were determined as follows: extraction time of 56.85 min, solid–liquid ratio of 1:56.71 g/mL and ethanol concentration of 44.64%, under which the actual yield of the total polyphenol crude extract (TPCE) reached 0.9985 ± 0.03%, which was highly consistent with the theoretical predicted value of 0.9960%, verifying the good fitting degree of the established model. Taking L-ascorbic acid as the positive control, the antioxidant activity of TPCE was evaluated by determining its scavenging capacity against ABTS·+, ·OH and DPPH· free radicals, and the half-maximal effective concentration (EC50) values were measured to be 0.8850, 0.9490 and 4.198 mg/mL, respectively. With acarbose as the reference drug, the inhibitory effects of TPCE on α-amylase and α-glucosidase related to carbohydrate metabolism were assayed, and the corresponding half-maximal inhibitory concentration (IC50) values were 0.0135 and 130.3 mg/mL, respectively. Furthermore, ultra-high performance liquid chromatography-quadrupole time-of-flight mass spectrometry (UHPLC-QTOF-MS) was employed for the tentative identification of bioactive components in TPCE, and a total of 48 and 64 chemical constituents were characterized in negative and positive ion modes, respectively, providing a chemical basis for the biological activities of TPCE. This study confirmed that UAE is an efficient and feasible technology for extracting polyphenols from H. erinaceus, which lays a theoretical foundation for the development and utilization of its polyphenols, and also provides novel insights into the development of natural functional ingredients and potential therapeutic agents for the intervention of type 2 diabetes. Additionally, the findings further validate edible fungi as a valuable reservoir of natural bioactive substances, with promising application prospects in the research and development of functional foods and pharmaceuticals targeting metabolic diseases. Poly(lactic acid) (PLA) films containing two different hemp-derived essential oils (EOs), Carmagnola CS (Carm) and Futura 75 (Fut), at 1, 5, and 10% wt were successfully produced via solvent casting for packaging applications. The influence of EO presence, type, and concentration on the chemical, morphological, and thermal properties of the PLA-based films was investigated. In addition, radical-scavenging activity, water transport properties, and antimicrobial performance were evaluated to assess the effect of EOs on the structural and functional characteristics of the resulting packaging materials. FTIR spectroscopy confirmed the successful incorporation of the hemp essential oils Carm and Fut into the polymer matrix, with a concentration-dependent effect that is more pronounced for Fut than for Carm. In the second heating run, evaluated by DSC measurements, both EOs lowered Tg from 60.3 °C (PLA) to 52.0 °C for PLA_10 Carm and 55.1 °C for PLA_10 Fut. The EOs act as plasticizers in the PLA matrix, improving the deformation at break. Gas barrier measurements showed that permeability decreased from 3027 ± 300 Barrer (PLA) to (2499 ± 44) Barrer in PLA_10 Carm and 2623 ± 130 Barrer in PLA_10 Fut, with a corresponding reduction in diffusivity. The barrier improvement factor reached 17% for Carm and 15% for Fut, confirming the enhanced barrier performance of PLA_EOs films. DPPH assays showed that PLA_EOs films retained most of the antioxidant activity of the free oils, with only a 10–15% reduction for PLA_Fut and no significant loss for PLA_Carm after one week. After one month, the activity of Carm in PLA film decreased by 18%, whereas the performance of its free form remained unchanged, confirming the superior and more stable radical scavenging capacity of Carm compared to Fut. Overall, the study demonstrates that hemp essential oils can be effectively integrated into PLA without compromising structural integrity, while preserving antioxidant performance and enhancing water barrier properties, supporting their potential as sustainable active packaging components. Quercetin, one of the most abundant flavonoids in nature, has attracted the attention of many researchers due to its chemical and biological properties. A series of metal–quercetin complexes (Cu2+, Co2+, Zn2+, Sn2+, Al3+, Cd2+ and Mg2+) were synthesized and systematically characterized by Fourier transform infrared spectroscopy (FTIR), UV-visible spectroscopy (UV–Vis) and nuclear magnetic resonance (NMR). These analyses confirmed that the complexes predominantly form through coordination with the 4-carbonyl group and adjacent phenolic hydroxyls. This induces measurable shifts in the ν(C=O), ν(O–H), and π→π* transition bands relative to free quercetin. The antioxidant capacity of the complexes was evaluated using 2,2-Diphenyl-1-Picrylhydrazyl (DPPH) radical scavenging method, 2,2′-Azinobis(3-Ethylbenzothiazoline-6-Sulfonic Acid) (ABTS)+ radical activity, and Ferric Reducing Antioxidant Power (FRAP) assay. Several complexes exhibited higher radical scavenging efficiency than quercetin, with inhibition percentages exceeding 80% in the DPPH and ABTS•+ assays. Others showed reduced activity due to the masking of redox-active hydroxyl groups during metal coordination. FRAP results corroborated these trends, indicating metal-dependent modulation of reducing power. Antimicrobial evaluation revealed that selected complexes were more active than free quercetin, particularly against Staphylococcus aureus and Candida spp., with minimum inhibitory concentrations (MICs) ranging from 75–250 μg mL−1. Overall, metal complexation significantly alters the electronic structure and biological behavior of quercetin, highlighting the potential of metal–flavonoid complexes as multifunctional antioxidants and antimicrobials. Water-soluble fullerene derivatives such as fullerenol C60(OH)24 are promising candidates for nanomedicine applications, yet their effects on innate immune cells remain poorly characterized. We investigated the interaction of fullerenol with human neutrophils isolated from healthy donors, exposed to concentrations of 0.25–200 μg/mL over 24–72 h. Using multi-parameter flow cytometry, we assessed viability, apoptosis, phagocytic activity, and intracellular reactive oxygen species (ROS) production, complemented by cell-free DPPH radical scavenging assays. Fullerenol was taken up by neutrophils in a concentration- and time-dependent manner. No significant cytotoxicity was observed up to 100 μg/mL, while viability declined at 200 μg/mL. Phagocytosis of opsonized E. coli was preserved at lower concentrations, though a statistically significant negative correlation with fullerenol concentration was detected at higher doses. In cell-free assays, fullerenol scavenged DPPH radicals with an EC50 of 48.90 ± 10.02 μg/mL, exhibiting slower kinetics than Trolox or ascorbic acid. Critically, fullerenol suppressed intracellular ROS production by >33% at 50 μg/mL following PMA stimulation of neutrophils. These findings demonstrate that fullerenol C60(OH)24 combines potent intracellular antioxidant activity with a favorable neutrophil safety profile, supporting its potential application in oxidative stress-related conditions. Grapevine trunk diseases, particularly those caused by Neofusicoccum parvum, represent a major threat to vineyard productivity and are increasingly difficult to control with conventional fungicides. Green synthesis of silver nanoparticles (AgNPs) using biocontrol fungi offers a promising alternative, but the factors governing the efficiency and bioactivity of biogenic nanoparticles remain poorly understood. Here, three Trichoderma species (T. harzianum, T. asperellum and T. virens) were evaluated as biological nanofactories for AgNP production. Cell-free fungal filtrates were used to synthesize AgNPs, which were characterized by UV–visible spectrophotometry, Dynamic Light Scattering (DLS) and transmission electron microscopy, while fungal redox metabolism was assessed using DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging assays and HPLC profiling of extracellular metabolites. AgNPs were tested against two isolates of N. parvum in vitro. The Trichoderma strains differed markedly in nanoparticle yield, size and antifungal activity, with T. harzianum T0 producing the highest amounts of small, well-dispersed AgNPs that exerted a strong fungistatic effect on N. parvum. Nanoparticle production correlated with antioxidant capacity and the abundance of redox-active metabolites. Integration of these parameters into a Fungal Nanofactory Efficiency Index (FNEI) revealed that nanoparticle bioactivity depends on both dose and biological origin. These results demonstrate that fungal metabolism is a key determinant of biogenic nanoparticle performance and identify Trichoderma as a platform for sustainable nanotechnology-based control of grapevine trunk pathogens. The escalating threat of antimicrobial resistance (AMR) and the environmental impact of industrial pollutants, particularly synthetic dyes, emphasize the pressing requirement for novel solutions. This study investigates the green synthesis of ZnO/Fe2O3 nanocomposites using Urtica dioica extract with the aim of achieving dual functionality as both antimicrobial agents and photocatalysts for pollutant degradation. The nanocomposites were synthesized with varying loads of Fe2O3 (5–50%) and characterized using X-ray diffraction (XRD) and diffuse reflectance spectroscopy (DRS). XRD analysis confirmed the presence of both the hexagonal wurtzite ZnO phase and the α-Fe2O3 hematite phase in all the composites, while DRS analysis revealed that the bandgap energy decreased progressively (from 1.89 to 1.72 eV) as the Fe2O3 content increased. The photocatalytic efficiency of the composites was evaluated by degrading methylene blue (MB), Congo Red (CR) and safranin O (SO) dyes under visible light. This demonstrated that the degradation performance depends on the composition, with the best activity being observed at 5% Fe2O3. Antioxidant activity was assessed using a DPPH• free radical scavenging assay. This showed that Urtica dioica extract exhibits superior radical scavenging capacity (maximum inhibition of 38%) compared to ZnO/Fe2O3 nanoparticles (maximum inhibition of 18%). The antibacterial efficacy against Pseudomonas aeruginosa was evaluated using direct confrontation and disk diffusion methods. This revealed that the activity was dose- and light-dependent, with enhanced performance under light exposure (10 mm inhibition zone) compared to dark conditions (1 mm). This study demonstrates the successful green synthesis of biphasic ZnO/Fe2O3 nanocomposites with promising photocatalytic and antimicrobial properties. While the results suggest possible synergistic interactions between the oxides, the underlying mechanisms, including potential charge transfer effects, require further investigation using advanced characterization techniques. Using Urtica dioica extract as a biogenic source provides a promising eco-friendly approach to synthesizing nanomaterials, with potential applications in wastewater treatment and the biomedical field. The purpose of this work is to investigate the binding state of inorganic elements to flavonoid components in aqueous extract of Silybum marianum (SM) seeds, as well as the antioxidant activity of the extract. This study employed reversed-phase high-performance liquid chromatography (RP-HPLC) to separate silymarin flavonoids in boiling water decoction of SM seeds, and collected the post-column effluent in the segments according to the retention time of seven main silymarin flavonoid components. Inductively coupled plasma mass spectrometry (ICP-MS) was subsequently utilized to quantify nine inorganic elements (As, Cd, Co, Cr, Cu, Fe, Mn, Mo, Zn) in the collected HPLC fractions of the decoction. Meanwhile, electron paramagnetic resonance spectroscopy (EPR) was employed to assess the free radical scavenging activity of aqueous extract of SM seeds, using the signal intensity changes of 2,2-diphenyl-1-picrylhydrazyl (DPPH) and DMPO-OH• adducts as quantitative metrics. The results showed that essential trace elements (Cu, Fe, Mn, Zn) mainly existed as inorganic ions or strong polar forms in the tea-like infusion, with weak binding to flavonoid compounds. On the other hand, the aqueous extract exhibited significant •OH scavenging capacity, with a scavenging rate of 95% against •OH generated by continuous 5 min ultraviolet irradiation of H2O2 aqueous solution. This study provides experimental evidence for the development of SM as a food–medicine dual-purpose resource, proposing that consumption of SM seed tea represents a facile and effective approach to supplement trace elements and intake silymarin for enhancing endogenous antioxidant defense.
