Background: Cultured meat (CM) has emerged as a promising, albeit controversial, alternative to conventional livestock production, offering potential benefits in terms of sustainability, animal welfare, and resource efficiency. Despite these potential advantages, consumer acceptance remains uncertain, particularly in countries where CM is not yet commercially available. Objectives: this study investigates the determinants of willingness to try (WTT) cultured meat among Italian university students (n = 335), with particular attention to the role of product-related perceptions and personal values and motivations. Methods: data were collected through an online survey and analyzed using binary logistic regression to identify the main drivers of respondents’ willingness to try CM. Results: the findings suggest that acceptance of CM among university students is driven primarily by familiarity, perceived safety, and ethical considerations, particularly those related to animal welfare, rather than by demographic characteristics or resistance to novel food technologies. Conclusions: these findings offer practical implications for policymakers and industry stakeholders, highlighting the importance of transparent communication strategies emphasizing product safety and animal welfare benefits as a means of increasing familiarity with and acceptance of CM among younger consumers. Background: Children with food allergy (FA) may develop eating difficulties that extend beyond medically required allergen avoidance, including food neophobia, selective eating, and avoidant/restrictive food intake disorder (ARFID)-related symptoms. This mixed-methods study aimed to assess ARFID symptoms, food neophobia, diet quality, and food-related psychological experiences in children with FA. Methods: Seventy children with confirmed FA were enrolled in an observational cross-sectional mixed-methods study conducted at a tertiary pediatric allergy center. Quantitative assessment included the Eating Disorders in Youth-Questionnaire (EDY-Q), the Italian Child Food Neophobia Scale (ICFNS), and the Mediterranean Diet Quality Index for Children and Adolescents (KIDMED). Qualitative data were collected from a purposive subsample of 26 children through semi-structured child-friendly interviews and drawing-based elicitation activities and were analyzed using inductive thematic analysis. Results: A positive EDY-Q screening result for ARFID-related symptoms was observed in 3 children (4.3%). Selective Eating showed the highest median EDY-Q domain score (median 1.50, IQR 0.67–4.00), followed by Food Avoidance Emotional Disorder (median 1.00, IQR 0.00–2.00) and Functional Dysphagia (median 0.00, IQR 0.00–2.00). Moderate food neophobia was observed in 45 children (64.3%), while 24 children (34.3%) were classified within the high food-neophobia category. KIDMED score was negatively correlated with EDY-Q total score (Spearman’s ρ = −0.302; p = 0.011), Selective Eating (ρ = −0.356; p = 0.002), and Functional Dysphagia (ρ = −0.238; p = 0.048). In an exploratory hierarchical regression, Selective Eating remained inversely associated with KIDMED after adjustment for demographic and FA-related covariates (β = −0.386; p = 0.002); however, the overall model did not reach statistical significance (p = 0.081), and the additional clinical covariates did not significantly improve model fit. Accordingly, the fully adjusted findings should be interpreted as exploratory. Qualitative analysis identified five themes: anticipatory fear of food and tasting, emotional memory of allergic reactions and generalization of risk, selective avoidance and food rigidity, reassurance-seeking and decision-making dependence, and ambivalent parental dynamics. Conclusions: Within this tertiary-care sample, positive EDY-Q screening results were uncommon, whereas broader food-related difficulties were identified. Pediatric FA assessment may benefit from attention to eating behavior, diet quality, and avoidance extending beyond confirmed allergens. Full article

Edible insects are a promising source for sustainable protein transformation due to their low environmental impact, high nutrient density, and suitability for circular food systems; however, despite their high technical potential, culinary and societal acceptance remains low. While the literature has largely focused on consumer acceptance, culinary professionals’ intention to incorporate edible insects into recipes has been understudied. This study examines the direct and indirect associations of perceived future food insecurity with the intention to incorporate edible insects into recipes, mediated by food neophobia and food interest. Protection Motivation Theory was used as a guiding theoretical lens to conceptualize perceived future food insecurity as a threat-related contextual perception, rather than as a full test of the theory. Data were collected from 400 culinary students across seven regions of Turkey; confirmatory factor analysis and structural equation modeling were applied. The direct effect of perceived future food insecurity on recipe incorporation intention was not significant (β = −0.015). However, perceived future food insecurity was negatively associated with food neophobia (β = −0.212) and positively associated with food interest (β = 0.138); food neophobia was negatively associated with recipe incorporation intention (β = −0.225), whereas food interest was positively associated with it (β = 0.715). Both indirect effects were statistically significant, indicating indirect-only mediation. The findings provide context-specific evidence extending the edible-insect literature from personal consumption intention toward professional recipe incorporation intention. Full article

The accelerating urgency of global public health challenges, biodiversity loss, and climate change has driven rapid innovation in novel foods and alternative proteins, including cultured cells, fermentation-derived components, plant-based meats, insects, and algae, which promise nutritious, sustainable, and ethical dietary choices with lower environmental footprints. Although technologies have advanced, consumer perception and preferences remain key hindrances due to perceptual, cultural, and sensory challenges. This semi-systematic narrative literature review aims to incorporate interdisciplinary studies (2020–2025) that span sensory science, AI-driven marketing, behavioral economics, and policy analysis to explore consumer incentives, barriers, and intervention approaches associated with novel food categories. Of 1260 initial records, 310 duplicates were removed, 530 were excluded at title/abstract screening, 233 were excluded at full-text review, leaving 197 studies for the final synthesis. The focus is on understanding cultural contexts, cognitive biases, digital and social influences, and the global framing impacts that shape consumer adoption. Consumer perceptions and preferences are primarily influenced by health benefits, ethical concerns, and environmental sustainability; however, neophobia, sensory unfamiliarity, trust deficits, and price temper these factors. Preliminary evidence suggests that AI-generated personalization, transparent labeling, behavioral nudges, and social norms may be useful tools for overcoming resistance to change, though the effectiveness of AI-driven personalization in actual purchasing behavior is not yet firmly established. Cultural diversity affects acceptance routes, with culturally established insect consumption differing from Western neophobia. Future studies should integrate interdisciplinary methodologies, longitudinal cross-cultural analyses, and innovative technologies to enhance communication and product design. Full article

This paper examines how technological innovation in next-generation probiotics shapes consumer trust through the lens of perceived safety. Rapid advances—spanning conventional cultures (Tier 1), postbiotics (Tier 2), and engineered microbial strains (Tier 3)—are transforming functional food architectures, yet consumer trust remains a critical determinant of their successful development, application, and adoption. Drawing on interdisciplinary evidence from food microbiology, consumer perception research, and regulatory analysis, this study examines and evaluates how these distinct technological innovation tiers alter public risk dynamics. Findings indicate that processing methodologies, media framing, and the spread of misinformation significantly influence public perceptions of microbial legitimacy, while the “Animation Gap” and “Contamination Anxiety” introduce qualitatively new cognitive friction points. Furthermore, regulatory inconsistencies across jurisdictions and variability in health claim substantiation further complicate market uptake. Streamlined case-based evidence highlights physical stability, sensory performance, and explicit value metrics that determine whether technological innovations are trusted or rejected by consumers. The paper argues that bridging the gap between scientific innovation and public acceptance requires proactive communication strategies, ethical marketing practices, and participatory engagement strategies grounded in empirical integrity. In addition, digital ecosystems, including social media and algorithm-driven content exposure, play an increasingly influential role in amplifying technology neophobia, underscoring the need for robust, targeted, evidence-based public communication in the evolving landscape of probiotic and functional food innovation. Background: Meat-based and meat analogue products are commonly consumed foods for protein nourishment across the globe. These food products are promising carrier media that can be targeted for the delivery of edible insect products as a strategy to overcome food neophobia. This systematic review aimed to evaluate the effect of edible insect enrichment on the nutritional, physicochemical, techno-functional, and acceptability of meat-based and meat analogue products for consumers. Methods: A systematic search for relevant articles was conducted on the databases PubMed, ScienceDirect, and Scopus on 5 November 2025. A total of 25 papers were included. Results: Edible insects and larvae from mealworms, crickets, grasshoppers, silkworm pupae, and superworms were commonly used to enrich meat-based and meat analogue products. Commonly reported meat products were sausages from pork and beef, pork patties, meat emulsion, and frankfurters. Soya flour was commonly used for meat analogue formulation. Conclusions: Acceptable edible insect incorporation is matrix-dependent, with conventional meat products generally tolerating low substitution levels (≈2.5–10%) before sensory and structural quality declines, whereas meat analogue systems can accommodate substantially higher inclusion (≈10–40% and, in some cases, up to ~60%). However, heterogeneity in formulations and sensory evaluation methods restricts direct comparison across studies. Full article

Under intensive farming systems, weaned piglets often face welfare challenges including food neophobia, reduced feed intake, and diarrhea. To address these issues, this study leverages the sow’s natural feeding behavior to guide piglets, enhancing their ability to learn to eat solid feed during lactation and improving digestive function. A total of 12 sows and 99 piglets were assigned to two groups: a Sow-Learning group (SL, n = 6), where piglets observed and learned feeding behavior from sows, and a Separate-Feeding group (SF, n = 6), where sows and piglets fed independently. Results showed that the SL group’s feed intake at 36–39 days of age was significantly higher than that of the SF group (p < 0.05). For weaned piglets, the diarrhea rate of the SL group was significantly lower than that of the SF group (p < 0.05). The SL group’s manipulation behavior (towards feed) during suckling and weaning was significantly higher than that of the SF group (p < 0.05). Compared with the SF group, weaned piglets in the SL group demonstrated stronger immune capacity, longer jejunal villi, a higher villus-to-crypt ratio, shallower crypt depth, and greater antioxidant capacity (p < 0.05). In summary, learning feeding behavior from sows improved piglet welfare and promoted jejunal development. Full article

This study investigates consumer acceptance of insect-based foods, focusing on changes in visual evaluation after information disclosure and the influence of sociodemographic, attitudinal, and knowledge-related factors. An online survey among Italian consumers (n = 350) assessed the visual attractiveness of a cupcake containing 10% w/w Tenebrio molitor flour before (PRE) and after (POST) disclosure of the insect ingredient. Attractiveness decreased from 2.6 to 2.0, with 79% of POST evaluations in the lowest appeal categories. Women expressed more negative POST ratings and experienced a larger decline in attractiveness (Δ = POST − PRE), indicating greater sensitivity to information disclosure than men. The change in attractiveness (Δ) was linked to psychological variables: negative attitudes showed moderate negative correlations with Δ (r ≈ −0.3 to −0.6), whereas higher knowledge of regulatory, nutritional, and environmental aspects showed positive correlations (r ≈ +0.3 to +0.7), mitigating the decrease. Principal Component Analysis revealed two latent dimensions: PC1 (61.6%), representing an attitudinal continuum from aversion to acceptance, and PC2 (33.3%), reflecting differences in awareness. Respondents with higher PC1 and PC2 scores showed attenuated Δ values, indicating greater resilience to the disclosure effect. Overall, findings highlight a gap between visual familiarity and acceptance, shaped by emotions, knowledge, and gender-specific sensitivities. Full article

Flavor perception is a multisensory process shaped not only by foods’ physicochemical properties but also by contextual cues that influence consumer expectations. Plate color is one such cue, yet evidence remains limited for desserts rooted in Latin American culinary traditions. This study examined whether plate color (red vs. black) alters perceived sweetness and bitterness in cacao- and passion fruit-based desserts. Using a randomized within-subject crossover design, adult consumers evaluated products served on both red and black plates and rated sweetness and bitterness on 100-point visual analog scales. Sourness, overall liking, and consumption intention were also collected for complementary purposes but were not included as primary outcomes in this analysis. Data were analyzed using linear mixed-effects models to account for repeated measures and individual-level variability. Results revealed a significant plate color × product interaction: red plates increased perceived sweetness in the passion fruit-based dessert, whereas black plates intensified perceived bitterness in the cacao-based dessert. Food neophobia did not significantly moderate these effects. Overall, the findings demonstrate that plate color systematically modulates reported taste intensity in a product-dependent manner. These results extend evidence on color–taste crossmodal correspondences and provide practical insights for sensory-driven food presentation and product design. Full article

Increasing the adoption of protein alternatives could be one of the solutions for improving the sustainability of our current food system. A convenience sample of 574 UK meat eaters completed an online survey incorporating a written shopping scenario (71% female, mean age: 31.8 years). A subset of participants (n = 297) also viewed a video describing the environmental impacts of protein sources and the lab-grown meat production process. Participants imagined selecting burger patties (plant-based, edible insect, lab-grown beef, or conventional beef) from a supermarket shelf and completed measures of expected liking, emotional responses, choice, and food-avoidance traits (food neophobia, food technology neophobia, and food disgust). The beef burger patty was selected the most frequently (63%), associated with positive emotions, and most liked. Plant-based (19%) and lab-grown beef patties (15%) were chosen more often than edible insect patties (2%), reflecting differences in expected liking and an increasing tendency for them to be associated with negative emotions. Trait-based clustering identified four groups (food explorers, novel/disgust fearers, food tech fearers, and everything fearers), each with distinct liking, emotion, and choice patterns for the products. Food explorers appeared to be the most likely early adopters of protein alternatives, especially when compared to everything fearers. Participants who viewed the informational video were more likely to select a protein alternative, although the effect on liking was limited. These findings demonstrate that emotional responses and food-related personal traits play a central role in shaping consumer acceptance of protein alternatives, suggesting that strategies to promote sustainable protein consumption should be tailored to specific consumer segments and product types. Edible insects (EIs) have been suggested as a sustainable alternative to meat from traditional sources. However, despite EIs being consumed by humans since time immemorial, it is also true that, in many areas, especially in Western countries, there is some resistance and even neophobia to their acceptance as food. This work aimed to investigate the perceptions about EIs and validate a corresponding scale. This descriptive cross-sectional study was carried out by means of a questionnaire survey on a sample of 3711 participants in six countries (Croatia, Lebanon, Lithuania, Mexico, Portugal and Romania). Data were analysed by factor and cluster analyses, as well as other statistical tools. The results showed that, out of the initial 36 items in the questionnaire, 24 were validated in the scale of perceptions, distributed across six factors. Cluster analysis showed that the participants could be grouped according to three clusters (Traditionalists, Shoppers and Innovators). Statistical tests revealed significant differences (p < 0.05) between the clusters in practically all sociodemographic and consumption variables studied. Finally, a word analysis of the 2263 words indicated by the participants when thinking about EIs revealed that the most frequent words were ‘disgusting’, ‘protein’, and ‘nutritive’ in all three clusters. However, differences were observed after the fourth position in the list of most frequent words. In conclusion, these results indicate that perceptions of EIs were highly variable across countries of origin and other sociodemographic groups, and that, globally, participants exhibited some neophobia towards EIs. However, they recognised their value in terms of nutrition, particularly protein. This work evidences some relevant aspects that can be useful to adapt and define targeted policies to demystify the negative perceptions about EIs and improve consumer acceptance, thus contributing to more sustainable food systems. Edible insects are increasingly recognized as sustainable and nutrient-dense ingredients with potential applications across diverse food systems. While their use in solid foods has been widely explored, the incorporation of insect-derived ingredients into beverages remains fragmented and insufficiently conceptualized. This narrative review critically examines the current state of insect-based beverages, integrating technological, nutritional, cultural, and market-oriented perspectives. Rather than adopting a fully systematic review methodology, this article synthesizes representative scientific literature, traditional practices, and emerging commercial examples to explore how edible insects are being positioned within two distinct yet complementary pathways: (i) functional beverages targeting nutrition, gut health, sports performance, immunity, and meal replacement, and (ii) experiential beverages driven by culinary storytelling, tradition, ritual, and sensory innovation, such as insect-infused beers and spirits. Relevant sources were identified through searches of major scientific databases using combinations of keywords such as edible insects, entomophagy, insect-based beverages, functional beverages, and insect protein, with emphasis on peer-reviewed literature published mainly over the past two decades, complemented by representative examples of traditional practices and emerging commercial products. The review discusses the nutritional and biofunctional potential of insect-derived proteins, lipids, and chitin-related components, with particular emphasis on their behavior in liquid matrices, including solubility, stability, flavor impact, and processing constraints. Technological challenges associated with beverage formulations are critically assessed. In parallel, consumer perception is examined through the lens of neophobia, sensory expectations, and the role of cultural framing and gastronomy in facilitating acceptance. By bridging food science, beverage technology, and food culture, this review identifies key knowledge gaps and research priorities for advancing insect-based beverages beyond niche applications. It argues that future development in this field will depend not only on technological optimization and a regulatory framework, but also on the deliberate design of products that integrate functionality with meaningful culinary and cultural narratives. Dietary antioxidants are widely valued for their potential health benefits, but incorporating them into functional foods is not straightforward. Polyphenols are among the most abundant and important antioxidants in foods, and this review focuses on them because the same structural features linked to their health-promoting effects can also cause pronounced bitterness and astringency, ultimately limiting consumer acceptance. This review examines how these challenges are interconnected across three levels: food matrix interactions, bioavailability, and consumer psychobiology. We describe how non-covalent interactions between polyphenols, proteins, and polysaccharides can have both positive and negative effects. While these interactions may alter oral lubrication and flavour release, they also protect highly reactive bioactive compounds from gastric degradation. Furthermore, we broaden the concept of bioavailability by exploring the microbiota-mediated “colonic rescue” of polyphenols that are not released during earlier digestion. We also highlight the role of extraoral bitter taste receptors (TAS2Rs) along the gastrointestinal (GI) tract. Activation of these receptors during digestion can trigger relevant metabolic and endocrine responses, indicating that systemic absorption is not the only pathway to bioactivity. Finally, we connect these mechanisms to individual differences in food acceptance, showing that genetic factors (e.g., TAS2R38 and the salivary proteome) and psychological traits (such as neophobia and reward sensitivity) can shape rejection or flavour-nutrient learning. Overall, the successful development of functional foods will require a “sensory-by-design” approach. This strategy utilises matrix interactions strategically to improve both consumer acceptance and physiological efficacy. Full article

Avoidant/Restrictive Food Intake Disorder and Food Neophobia in Adult Patients with Food Allergy: A Preliminary Study

Background/Objectives: Patients with food allergy (FA) may exhibit dysfunctional eating behaviours and/or food aversions that extend beyond the necessary allergen elimination diet and may result in avoidant/restrictive food intake disorder (ARFID) or food neophobia (FN); however, no data are available on adults. This study aimed to explore ARFID, FN, FA anxiety, and eating styles in adults with FA, analysing influences of sociodemographic and clinical factors. Methods: This cross-sectional preliminary study involved 79 adults with FA, who completed the Nine Item ARFID screen (NIAS), Food Neophobia Scale (FNS), Scale of Food Allergy Anxiety (SOFAA), and Dutch Eating Behaviour Questionnaire (DEBQ—brief). Pearson and Spearman correlation coefficients and multiple linear regressions were performed (p < 0.05). Results: In total, 25% and 73% of participants scored positively for ARFID and FN, respectively. A positive correlation was observed between FN and ARFID levels (p < 0.006), and between FN and FA anxiety (p < 0.001). Current psychological problems positively correlated with ARFID (p = 0.004), FN (p = 0.006), and FA anxiety scores (p = 0.03). Restrained eating was positively associated with female gender (p < 0.001), and ARFID (p = 0.002) and FN scores (p = 0.028). External eating was negatively correlated with ARFID (p = 0.004). Adrenaline auto-injector (AAI) prescription was negatively associated with ARFID (p < 001) and restrained eating (p = 0.006), while previous anaphylaxis was negatively associated with ARFID (p = 0.020) and positively associated with external eating (p = 0.021). Multiple logistic regression models confirmed that restrained eating was associated with a higher probability of both ARFID (p = 0.031) and FN (p = 0.074). Conclusions: Clinicians should be aware of the risk of ARFID and FN among adult patients with FA and recommend appropriate psychological and dietary support. Further studies are needed to better understand the protective and precipitating factors of ARFID and FN to develop effective prevention and treatment strategies. Full article

Background: Childhood and adolescence represent a critical period for shaping long-term dietary habits, including whole grain consumption, which remains low despite well-documented health benefits. Objective: This cross-sectional study (November–December 2024) examined Slovenian adolescents’ attitudes toward whole-grain foods in the context of organized school meals. Methods: Participants aged 10–12 years and 14–19 years (N = 501; mean age 15.6 ± 2.6) completed an online questionnaire assessing knowledge, self-reported consumption frequency, preferences, motivational factors, and food neophobia using the translated Italian Child Food Neophobia Scale (ICFNS). Based on ICFNS scores, participants were classified as low (≤17), medium (18–24), or high (≥25) in food neophobia. Results: Older adolescents demonstrated better knowledge of whole-grain health benefits; however, greater knowledge was not associated with higher self-reported consumption. Food neophobia was strongly associated with lower consumption frequency and reduced willingness to try whole-grain foods, including whole-grain bread, oatmeal, buckwheat porridge and brown rice. Across all groups, taste was the most consistent motivator for trying whole-grain foods. Older adolescents prioritized health and appearance as key reasons for eating more whole grain foods. Conclusions: Findings suggest that improving taste, increasing exposure, and leveraging institutional settings such as schools, where availability, preparation, and social cues can be managed, may be effective in promoting whole-grain food consumption.
