The demeanour of a human during an interaction with an animal may influence the animal’s emotional response. We investigated whether the emotional responses of laying hens to a threatening or neutral human and a novel environment were lateralised, from which their emotional state can be inferred. Twenty-five DeKalb white laying hens reared in furnished cages under environmentally controlled conditions were individually assessed for their responses to these stimuli. They were contained in a box before emerging into an arena with a threatening human, who attempted direct eye contact with the bird and had their hands raised towards it, or a neutral person, who had no eye contact and sat with their hands on their knees. When initially placed in the box adjacent to the test arena, birds that remained in the box used their left eye more than their right eye, and they showed evidence of nervousness, with many head changes, neck stretching, and vocalisation. Birds showed lateralised behaviour in both the box and arena. Birds entering the arena with the threatening person used their left eye (connected to the right brain hemisphere) more than their right eye, usually with their body less vertical, and were more likely to be standing than sitting, compared with those viewing the neutral person. This confirms the bird’s interpretation of the person as threatening, with left eye/right brain hemisphere processing of flight or fight situations. We conclude that lateralised responses of chickens suggest that a threatening person is viewed more fearfully than a neutral person. However, further investigation is required with a larger sample of birds to strengthen these findings and enhance the generalisability of behavioural responses. Full article

Outdoor ranges in free-range laying hen systems are often underutilised, likely due to their open, uncovered nature. Given that the domestic chicken’s ancestor inhabits forests with high canopy cover, similar habitat preferences can be expected. To assess the impact of vegetation cover, range use was recorded on two outdoor ranges before and one and two years after planting bushes. A barrier tape grid was placed on each outdoor range, images were taken every 10 min over three days and hens per quadrant were counted. Data were analysed using general additive models. On both outdoor ranges, the number of hens increased in quadrants with newly planted bushes. While hen numbers declined with increasing distance from the shed in all three years, this effect diminished in the two years after planting. Furthermore, hens on both outdoor ranges in all three years showed diurnal patterns in range use, resembling the natural behaviour of their ancestor. The findings support the hypothesis that vegetation cover plays a crucial role in promoting more even range use, including in parts further away from the shed. To encourage natural behaviour and mitigate the negative effects of poor range utilisation, outdoor ranges should incorporate evenly distributed vegetation cover. Full article

Background/Objectives: The Changshun green-shell laying hen with a strong broodiness is a Chinese indigenous chicken breed. Little is known about the mechanisms responsible for the ovary development of Changshun green-shell laying hens from the egg-laying period (LP) to the incubation period (BP). Methods: A total of six hens were selected from LP (n = three) and BP (n = three) at 28 weeks old. The RNA sequencing (RNA-seq) of ovaries from hens in LP and BP groups was performed to identify candidate genes and pathways associated with broodiness. Results: We identified 1650 differently expressed genes (DEGs), including 429 up-regulated and 1221 down-regulated DEGs, in chicken ovaries between LP and BP groups. Gene ontology term (GO) and Kyoto Encyclopedia of Genes and Genomes (KEGG) analysis revealed that these DEGs were mainly involved in the pathways related to follicle development in chicken ovaries, including focal adhesion, the MAPK signaling pathway, and the FoxO signaling pathway, and vascular smooth muscle contraction, ECM–receptor interaction, and the GnRH signaling pathway were down-regulated in incubating ovaries. Eight candidate genes (EGFR, VEGFRKDRL, FLT1, KDR, PDGFRA, TEK, KIT and FGFR3) related to angiogenesis, folliculogenesis, steroidogenesis and oogenesis in ovaries were suggested to play important roles in the ovarian development of Changshun hens during the transition from LP to BP. Conclusions: This study identified a range of genes and several pathways that may be involved in regulating the broodiness of Changshun green-shell laying hens. These data are helpful to further enrich our understanding of the mechanism of incubation behaviour in chickens. Full article

A social network is a group of individuals forming a non-random social structure where the number of interactions systematically vary among individuals. The Red Junglefowl, the ancestor of all domesticated chickens, has been shown to form social structures within a larger group; however, how poultry in egg production are socially organised is poorly understood. Egg layers in groups of thousands of individuals are suggested to either, just as Red Junglefowl, form subgroups or to lose social affiliations and replace these with a system of social tolerance. In this case study, a stable group of 20 laying hens with known genetic relationships housed in an outdoor aviary were observed for 3 h per day, during 20 days, in order to determine the social structure in the group. Social affiliations and centralisation measurements were assessed by proximity. The results show that some individuals were consistently more centralised compared to others, which indicates a stable individual variation in sociality. Furthermore, no individual spent more than 10% of her total number of interactions with a particular individual, i.e., little consistency in social affiliations could be found. The results of this case study support the theory of a higher social tolerance rather than a consistent social organisation in domesticated egg layers. Full article

Behavioural states such as walking, sitting and standing are important in indicating welfare, including lameness in broiler chickens. However, manual behavioural observations of individuals are often limited by time constraints and small sample sizes. Three-dimensional accelerometers have the potential to collect information on animal behaviour. We applied a random forest algorithm to process accelerometer data from broiler chickens. Data from three broiler strains at a range of ages (from 25 to 49 days old) were used to train and test the algorithm, and unlike other studies, the algorithm was further tested on an unseen broiler strain. When tested on unseen birds from the three training broiler strains, the random forest model classified behaviours with very good accuracy (92%) and specificity (94%) and good sensitivity (88%) and precision (88%). With the new, unseen strain, the model classified behaviours with very good accuracy (94%), sensitivity (91%), specificity (96%) and precision (91%). We therefore successfully used a random forest model to automatically detect three broiler behaviours across four different strains and different ages using accelerometers. These findings demonstrated that accelerometers can be used to automatically record behaviours to supplement biomechanical and behavioural research and support in the reduction principle of the 3Rs. Due to substantial differences between studies, the understanding of avian taste perception remains incomplete. Also, studies on chicken taste preferences have mainly focused on measuring consumption differences, neglecting consumption behaviour patterns. This study investigated how age, the compound delivery matrix, and the number of birds per pen affect broiler chicken preferences and consumption behaviour, and established their preference values for four taste compounds. Ninety-six one-day-old male broiler chickens (Ross 308) were divided into two age groups (initial: days 7–23; final: days 26–42), with two compound delivery matrices (water or ground wheat) and two numbers of birds (one or two chickens per pen), following a 2 × 2 × 2 factorial design. Four taste compounds (sucrose, monosodium glutamate (MSG), L-lysine, and calcium carbonate) were tested at different concentrations. Preferences were assessed at 2, 4, and 8 h post-test, along with recording various behavioural parameters. Initial-stage birds showed higher (p < 0.001) preference values, time of approach (TA), number of bouts (NB), duration of bouts (DB), and number of pecks (NP) than final-stage birds. Birds exposed to a water matrix also exhibited higher (p < 0.001) preference and NB, while those exposed to a ground wheat matrix showed a higher (p < 0.001) NP. Pens with a pair of birds had a higher (p < 0.003) 2 h preference, TA, NB, DB, and NP, than pens with a single chicken. Chickens showed significant preference values for 100 mM sucrose at 2 h (p = 0.025), 150 mM MSG at 4 h (p = 0.026) and 8 h (p = 0.013), and 300 mM MSG at 2 h (p = 0.013). We concluded that all the variables evaluated influence broilers’ taste preferences and consumption behaviour during selection tests. Future studies should prioritize including chickens in the initial stage of the production cycle, testing them in pairs or groups, and delivering compounds via a liquid matrix. Full article

Ovarian cancer poses a significant threat to patients in its advanced stages, often with limited treatment options available. In such cases, palliative management becomes the primary approach to maintaining a reasonable quality of life. Therefore, the administration of any medication that can benefit patients without a curative option holds potential. Resveratrol, a natural compound known for its in vitro anticancer activities, has generated contrasting results in vivo and human studies. In this study, we aimed to assess the anticancer effects of resveratrol on ovarian cancer cells grown on the chorioallantoic membrane (CAM) of chicken embryos. Two ovarian cancer cell lines, OVCAR-8 and SKOV-3, were cultured in collagen scaffolds for four days before being implanted on the CAM of chicken embryos on day 7. Different doses of resveratrol were applied to the CAM every two days for six days. Subsequently, CAM tissues were excised, fixed, and subjected to histological analysis. Some CAM tumours were extracted to analyse proteins through Western blotting. Our findings indicate that specific doses of resveratrol significantly reduce angiogenic activities, pNF-κB levels, and SLUG protein levels by using immunohistochemistry. These results suggest that resveratrol may have the potential to impact the behaviour of ovarian cancer CAM tumours, thereby warranting further consideration as a complementary treatment option for women with incurable ovarian cancer. This study evaluated the exposure to gas mixtures of carbon dioxide (CO2) associated with nitrogen (N2) as alternatives to CO2 in two phases to improve the welfare of broiler chickens at slaughter. Broilers were exposed to one of three treatments: 40C90C (1st phase: <40% CO2 for 2 min; 2nd phase: >90% CO2 and <2% O2 for 2 min, n = 92), 40C60N (40% CO2, 60% N2, and <2% O2 for 4 min, n = 79), or 20C80N (20% CO2, 80% N2, and <2% O2 for 4 min, n = 72). Brain activity (EEG) was assessed to determine the onset of loss of consciousness (LOC) and death. Behavioural assessment allowed for characterisation of an aversive response to the treatments and confirmed loss of posture (LOP) and motionlessness as behavioural proxies of LOC and brain death in 40C60N and 20N80C. However, the lack of quality of the EEG traces obtained in 40C90C did not allow us to determine the onset of LOC and brain death for this treatment. The onset of LOC in 40C60N was found at 19 s [14–30 s] and in 20C80N at 21 s [16–37 s], whereas a LOP was seen at 53 s [26–156 s] in 40C90C. Birds showed brain death in 40C60N at 64 s [43–108 s] and in 20C80N at 70 s [45–88 s]), while they became motionless in 40C90C at 177 s [89–212 s]. The 40C90C birds not only experienced more events of aversive behaviours related to mucosal irritation, dyspnoea, and breathlessness during induction to unconsciousness but were at risk of remaining conscious when the CO2 concentration was increased in the 2nd phase (known to cause severe pain). From an animal welfare point of view, 40C60N proved to be the least aversive of the three treatments tested, followed by 20C80N and 40C90C. Full article

This study evaluated the nutritional effect of dried olive pulp (OP), on broilers’ thermal comfort, growth parameters and welfare in a commercial poultry farm during the hot season. A number of 108 Cobb male broilers, 19 d olds were allocated into three dietary groups: controls (CON), OP3 and OP6, based on the level of OP added to their diet (0%, 3% and 6%). The thermal comfort of broilers was assessed using the temperature–humidity index (THI). Broilers’ body temperature (BT) was determined weekly. OP beneficially affected the growth performance of broilers undergoing very severe heat stress, as indicated by the increased body weight gain (BWG) recorded in OP groups compared to CON during the first week of the experiment and the higher body weight (BW) of OP fed chickens at 26 d of age (p < 0.05). At 26 d of age, OP6 broilers had lower BT (40.55 ± 0.06 °C) than CON (40.78 ± 0.09 °C) (p < 0.05). A positive dietary effect of OP in welfare parameters like feather cleanliness and panting behaviour of chickens fed 6% OP was also recorded. Using OP as feedstuff is a promising feeding strategy for alleviating the adverse effects of heat stress; it also offers the potential to recycle olive by-products, leading to an efficient waste-based circular economy. Healthy eating behaviour of women is critical not only for their health but also for their children’s health and well-being. The present study examined the dietary pattern, nutrition-related knowledge, and attitudes of working women in Western Province, Sri Lanka. In addition, this study identified the factors associated with dietary diversity score (DDS). A cross-sectional study was conducted among 300 working women, aged 20–60 years, in Western Province, Sri Lanka. The data on socio-demography, dietary patterns, and nutrition-related knowledge and attitudes were collected. Overall, 38% of the women were overweight and 13% were obese. The median frequency of intake of chicken, fish, eggs, milk and milk products, green leafy vegetables, and fruits were 2, 5, 2, 9, 5, and 10 respectively, per week. A large majority of the women (70%) had tea/coffee with sugar and snacks (60%) at least four times a week. Only a third of the women met the minimum DDS, while more than half of the women had good nutrition-related knowledge and attitudes. Women with good nutrition-related knowledge were more frequent consumers of roots/tubers, shellfish, vegetables, fruit, fruit juice, nuts and oils, and fast food. Women with good nutrition-related attitudes had a significantly lower frequency of consumption of soya meat, while having a higher frequency of consumption of fast food. Multiple regression analysis showed that age and household income were significantly independently related to DDS, while attitudes were negatively associated. While there was a trend, the association of nutrition-related knowledge with DDS was not statistically significant (p = 0.057). The overall F ratio (8.46) was highly significant (p = 0.001) and the adjusted R2 was 0.093. The results demonstrate that a significant proportion of working women have good basic nutrition-related knowledge and attitudes, while two-thirds of them do not meet the minimum DDS. Furthermore, age, family income, and knowledge were positively associated with DDS, while attitudes were negatively associated. Before designing any intervention, further research is needed using a qualitative approach to understand how nutrition knowledge and eating behaviour are related in this population group. The rapid growth of the Malaysian poultry and palm oil industries has led biomass waste generation in abundance specifically chicken manure and empty fruit bunch (EFB). Anaerobic digestion (AD) is a circular economy-based approach which converts chicken manure and EFB into biogas which can be utilized for heating and power generation. Operating temperature is an imperative consideration for AD hence the objective of the study is to evaluate the effect of different temperature profiles namely, psychrophilic (20 °C), mesophilic (35 °C) and thermophilic (50 °C) on AD of chicken manure and EFB. The kinetic parameters are also evaluated using five kinetic models to enable readers to comprehend the kinetic behaviours of the systems. The volume and composition of biogas is measured every five days for a 50-day retention time. The findings observed that mesophilic condition is the most favourable with cumulative methane, CH4 composition of up to 17.07%, almost two folds that of thermophilic (9.12%) and five folds that of psychrophilic (3.49%). The CH4 generation rate, Rb based on the modified Gompertz model which is deemed the best fit further supports these findings as the Rb under mesophilic condition is significantly higher (0.330 mL/gvs day) compared to psychrophilic (0.088 mL/gvs day) and thermophilic (0.120 mL/gvs day) conditions. There is growing pressure to find a way to eradicate or reduce the levels of foodborne pathogens such as Campylobacter in broiler chickens, whilst limiting the use of antimicrobials. For Campylobacter, there is currently no vaccine and on-farm biosecurity alone is insufficient to prevent colonization of broiler chicken flocks. Dipteran flies are proven carriers of Campylobacter and their entry into broiler houses may contribute to its transmission to broiler chickens. As there is currently no experimental vector transmission model for Campylobacter and chickens, we decided to examine experimentally whether Galleria mellonella could be used as vector to transmit Campylobacter to broiler chickens. More recently, the use of live insect feed has been proposed both for its nutritional qualities and improving bird welfare through the encouragement of natural foraging behaviours and it is unclear any risk this poses in terms of pathogen transmission. In this study, day-old chicks (n = 29) were obtained from a commercial hatchery. At three weeks of age, birds were split into 4 This groups; Group 1 was infected via oral gavage with 106 cells of C. jejuni-M1, Group 2 was fed Galleria mellonella infected with 106 cells of C. jejuni-M1, Group 3 was fed uninfected Galleria mellonella, whilst the remaining group was unchallenged. Cloacal swabs were taken at 2, 4, and 6 days post-infection (dpi) to follow transmission and at 8 dpi birds culled and C. jejuni load quantified in the caeca and liver. At 8 dpi, all birds in both the Campylobacter gavage group and those in the group fed the Campylobacter infected Galleria mellonella were Campylobacter positive, whereas those fed uninfected Galleria mellonella and the control group were all Campylobacter negative. The mean caecal Campylobacter load in the Campylobacter gavage group was 1.7 × 1010 per gram compared with 8.6 × 109 in the group fed the Campylobacter-infected Galleria mellonella. No liver positives were found in any of the groups. Our findings indicate that feeding broiler chickens with the vector Galleria mellonella infected with C. jejuni-M1 is sufficient to establish colonisation with C. jejuni. We propose that Galleria can be used as an easy and flexible model for vector transmission of foodborne pathogens in chicken. Full article

Salmonella is the main relevant pathogen in chicken dry-fermented sausages (DFS). The safety of shelf-stable DFS must rely on the production process, which should not only prevent growth but promote inactivation of Salmonella. The aim of the study was to assess the behaviour of Salmonella during the production process of two types of low-acid chicken DFS. The impact of the use of starter culture, corrective storage and high-pressure processing (HPP) at different processing times was assessed through challenge testing, i.e., inoculating a cocktail of Salmonella into the meat batter (at 6 Log10 cfu/g) used for sausage manufacture. Sausages of medium (fuet-type, FT) and small (snack-type, ST) calibre were elaborated through ripening (10–15 °C/16 d) and fermentation plus ripening (22 °C/3 d + 14 °C/7 d). Physico-chemical parameters were analysed and Salmonella was enumerated throughout the study. The observed results were compared with the simulations provided by predictive models available in the literature. In FT, a slight decrease in Salmonella was observed during the production process while in ST, a 0.9–1.4 Log10 increase occurred during the fermentation at 22 °C. Accordingly, DFS safety has to be based on the process temperature and water activity decrease, these factors can be used as inputs of predictive models based on the gamma-concept, as useful decision support tool for producers. Salmonella lethality was enhanced by combining HPP and corrective storage strategies, achieving >1 and 4 Log10 reductions for FT and ST, respectively. Full article

Farm to fork strategy, advocated by the European Commission, aims for a ‘fair, healthy, and environmentally healthy food system. It requires a renewed mindset and an in-depth analysis of the intricate agricultural-based value- chain that forms the food system. Indigenous chicken micro-farming, the focus of this study, for example, is a highly potential candidate for the Farm to Fork strategy but requires a deep analysis of its disintegrated value chain to achieve the strategy. Indigenous chicken farming provides opportunities for the poor and marginal people for a steady income while at the same time being more environmentally friendly and a source of healthy food. These have motivated this study to analyse the indigenous chicken micro-farming value chain in Malaysia, with the objectives to evaluate the present status of the indigenous chicken farm value chain and develop an initial integrated model for indigenous chicken farms. This study uses qualitative system dynamics in data collection and analysis and model development to achieve the objectives. The proposed model is simulated to understand the dynamics of interaction and behaviour among the sub-systems. The findings lead to two outcomes of the study- the first is the dynamics model of the typical indigenous chicken value chain, and the second is the potential integrated value chain model for indigenous chicken farming. These findings are imperative for future research to enhance further the integrated model to be able to realise the farm-to-fork strategy and to contribute to the sustainable development goals. There is growing interest in keeping meat chickens in modern colony cages (CCs) rather than conventional litter-floor barns. Suggested welfare improvements for chickens in such systems include reduced bodily lesions due to lower contact with flooring contaminated with faeces and urine, due to slatted flooring and automated faeces removal. This systematic review sought to determine the animal welfare impacts of CCs using slatted flooring, in comparison to litter-based non-cage systems. Overall, 23 relevant studies were retrieved. From one perspective, the extant research appeared mixed. Fifteen (65%) of these 23 studies identified some form of welfare concern about slatted floors, and thus CCs. Yet, when considering actual welfare indicators assessed, the tallies generated in favour of each housing system were similar. Crucially however, there were incomplete behavioural welfare measures in 100% of the empirical studies reviewed. Accordingly, significant welfare concerns exist about CCs, centring around behavioural deprivation. Given that over 70 billion chickens are farmed then slaughtered each year globally, widespread implementation of CCs would create a major animal welfare concern. Instead of implementing such CC systems, research and development is recommended into improving welfare outcomes of conventional litter barns using different forms of commercially feasible enrichment. As a minimum, a full behavioural analysis, as detailed in the Welfare Quality Assessment protocols, should form a mandatory part of any future studies aimed at assessing the welfare impacts of housing systems on farmed chickens.
