In this study, gravlax, a niche Scandinavian delicacy, was comprehensively investigated by producing it with combinations of two different fish species (tub gurnard (Chelidonichthys lucerna Linnaeus, 1758) and garfish (Belone belone Linnaeus, 1761)) and five herbs (dill (Anethum graveolens Linnaeus, 1753), sage (Salvia officinalis Linnaeus, 1753), mint (Mentha piperita Linnaeus, 1753), sweet (Ocimum basilicum Linnaeus, 1754), and purple basil (Ocimum basilicum var. purpurascens Bentham, 1830)). The nutritional composition, amino acids, color parameters, mineral substances, and heavy metal content, as well as physical characteristics, texture profile analysis, and extensive sensory analyses, were conducted, and the results were thoroughly evaluated using multivariate statistical methods. The influence of using different herbs on nutritional composition was found to be significant in gravlax made from both fish species (p < 0.05). Sensory analyses revealed that panelists identified mint as enhancing aroma and umami sensations, while dill improved overall acceptance. Gravlax with sage exhibited softer textures, but lower general acceptance due to perceived high saltiness. Color analyses revealed that purple basil transferred distinct pigments, causing darkening, whereas sweet basil had a brightening effect. Amino acid analyses revealed higher umami and sweet-tasting amino acids in herb-free gravlax, whereas proteolytic activity appeared to slow down in herb-containing gravlax samples. Full article

This study explores the chemical composition and synergistic anti-fungal properties of essential oils from the aerial parts of Satavari (Asparagus racemosus Willd.), Dill (Anethum graveolens L.), and lemongrass (Cymbopogon citratus Stapf), along with the peels of Lime (Citrus aurantifolia (Christm.)) and Kaffir lime (Citrus hystrix DC), as well as the leaves of Citrus hystrix DC, against Malassezia furfur, a yeast linked to dandruff and seborrheic dermatitis. Gas chromatography-mass spectrometry (GC-MS) identified key volatile compounds within these oils. In vitro anti-fungal assays evaluated their efficacy individually and in combinations using checkerboard dilution techniques to assess synergy. Results indicated significant antifungal activity, with lemongrass exhibiting the strongest effect (MIC of 0.125% v/v). Notably, a 1:1 combination of lemongrass and kaffir lime essential oils showed synergism, reducing the MIC to 0.0625% v/v. The antifungal activity was primarily attributed to citral and citronellal, with MICs of 0.03125% v/v and 0.125% v/v, respectively. Molecular orbital analysis revealed that the higher energy levels of the lowest unoccupied molecular orbitals (LUMOs) in citral correlate with greater antifungal efficacy, likely due to its enhanced electrophilicity, facilitating nucleophilic interactions with M. furfur’s cellular components. These findings highlight potential applications of essential oil combinations in antifungal therapies. Full article

This study evaluated the effects of dietary dill weed (DW) on growth, hematological profile, digestive enzyme activities, antioxidative response, heat tolerance, gut microbiota composition, and disease resistance in African catfish (Clarias gariepinus). A control diet (basal diet) was compared to three DW diets (DW5, DW10, and DW15) with increasing DW levels (0.5, 1.0, and 1.5%, respectively). After eight weeks, fish fed DW diets exhibited significantly higher growth performance (p < 0.05) compared to the control group, as evidenced by increased final weight (FW), specific growth rate (SGR), and weight gain (WG). Conversely, the feed conversion ratio (FCR), hepatosomatic index (HSI), and visceral somatic index (VSI) were significantly lower (p < 0.05) in fish fed DW diets compared to the control. Dietary DW supplementation significantly enhanced (p < 0.05) hematological profiles, including red blood cell (RBC), white blood cell (WBC), hematocrit (HCT), and hemoglobin (HBG), compared to the control group. Similarly, antioxidant responses, including superoxide dismutase (SOD), glutathione peroxidase (GPx), and catalase (CAT) activity, significantly increased (p < 0.05) in fish fed DW diets before or after the heat tolerance assay. Fish fed DW diets displayed a higher relative abundance of beneficial gut microbiota, including Cetobacterium spp., Akkermansia muciniphila, Phocaeicola spp., and Niameybacter massiliensis. Furthermore, dietary DW supplementation stimulated disease resistance against Edwardsiella tarda infection in African catfish. Regression analysis indicated that the optimal DW inclusion level for promoting growth performance and health status in African catfish ranged from 0.229 to 0.433%. Full article

This study estimated the preservative potential of Dill essential oil (DEO, Anethum graveolens) in terms of the quality and shelf life of Pangasius bocourti (basa fish) fillets during cold storage. GC-MS analysis of DEO’s chemical composition identified monoterpenes, including α-phellandrene (21.81%), d-limonene (18.54%), carvone (17.42%), and Dill ether (14.82%). DEO showed concentration-dependent antioxidant properties in the DPPH assay, with an IC50 of 48.3 ± 0.9 µg/mL (mean ± SE). Its antibacterial efficacy against various foodborne pathogens was evaluated using the resazurin turbidimetric microdilution method. Fish fillets were treated with DEO at 200, 2000, and 4000 ppm, and compared to the untreated control and 200 ppm butylhydroxytoluene (BHT)-treated groups. Physicochemical parameters, microbial growth, and sensory characteristics were assessed over a 15-day period at 2.5 °C ± 0.5 °C. Higher concentrations of DEO effectively preserved the pH, water-holding capacity, and color stability of the fillets. Microbial analysis showed that DEO, particularly at 4000 ppm, significantly inhibited the growth of aerobic bacteria, lactic acid bacteria, coliforms, and staphylococci compared with the control. Sensory evaluation revealed that DEO treatment, especially at 4000 ppm, maintained the odor, color, texture, and overall acceptability of fish fillets throughout storage. These results suggest that Anethum graveolens L. essential oil can serve as an effective natural preservative to enhance the quality and prolong the shelf life of refrigerated fish fillets. This study focused on optimizing key extraction parameters (ethanol concentration, temperature, and time) to enhance the extraction of hydroxycinnamic acids from A. graveolens leaves, applying a replicated 23 full factorial design. The experimental results demonstrated that extraction conditions significantly influenced the yield of hydroxycinnamic acids. The optimum conditions were 50% ethanol for 80 min at 50 °C, yielding 103.75 µg/g of chlorogenic acid (ChA), 6.05 µg/g of ferulic acid (FA), and 2.19 µg/g of sinapic acid (SA). Therefore, the extract obtained with 50% ethanol showed the highest levels of polyphenols, flavonoids, and antioxidant potential, highlighting its suitability for use in both food-related products and pharmaceutical formulations. Additionally, the applicability of different mathematical models (unsteady-state diffusion, parabolic diffusion, and power law models, as well as Ponomaryov’s and Elovich’s equations) to describe and better understand the kinetics of hydroxycinnamic acid extraction from dill leaves was evaluated. The fit of each kinetic model to the experimental data was assessed using the root mean square error and the coefficient of determination. Among the five kinetic models, the unsteady-state diffusion model and Ponomaryov’s equation provided the best fit, exhibiting the highest accuracy. The activation energy for the extraction process was determined to be 5.85, 6.46, and 7.59 kJ/mol for ChA, FA, and SA, respectively. The extraction of hydroxycinnamic acids from dill leaves was found to be endothermic, irreversible, and spontaneous. Full article

To contribute to the search for effective substances in pest control, this study describes the fumigant and contact toxicity against Tribolium castaneum and Sitophilus zeamais of four essential oils (EOs) and some of their major chemical constituents. The EOs from Tagetes zypaquirensis, Anethum graveolens, Satureja viminea and Minthostachys mollis were obtained by steam distillation and chemically characterized using GC–MS. In the development of research, some monoterpenoids were isolated from the EOs, others were purchased commercially, and some were synthesized from the most active monoterpenoids present in EOs. The main components in the EOs were dill ether (28.56%), α-phellandrene (25.78%) and carvone (23.67%) for A. graveolens, piperitone oxide (30.40%) and pulegone (25.91%) in M. mollis, pulegone (37.40%) and p-menth-3-en-8-ol (11.83%) for S. viminea, and dihydrotagetone (32.13%), myrcene epoxide (19.64%) and β-myrcene (5.30%) for T. zypaquirensis. The results highlight the fumigant action (LC50) and contact toxicity (LD50) of EO from M. mollis against T. castaneum (LC50 of 4.8 µL/L air and LD50 of 6.5 µg/insect) and S. zeamais (LC50 of 7.0 µL/L air and LD50 of 5.81 µg/insect). Among the chemical constituents evaluated, R-carvone 2, piperitone oxide 5 and R-pulegone 6 stand out for their insecticidal potential against S. zeamais (LC50 between 3.0 and 42.4 µL/L, while LD50 between 14.9 and 24.6 µg/insect) and T. castaneum (LC50 between 2.2 and 4.8 µL/L, while LD50 between 4.8 and 13.1 µg/insect). Preliminary structure–activity analysis suggests that the presence of the carbonyl group with conjugated double bonds in cyclic monoterpenes is important for the insecticidal potential exhibited. Dill is a fragrant vegetable containing various beneficial compounds for health. This research aims to evaluate the impact of various spectra of LED light on essential oil composition and morphological and physiological characteristics of three dill cultivars. LED light treatments included greenhouse light as control (C), blue (B), red (R), red + blue (RB), and white (W). RB light enhanced most physiological indicators investigated in this study, including photosynthetic pigments, phenols, flavonoids, and antioxidant capacity. Furthermore, electrolyte leakage in the three cultivars of Khomein, Isfahan, and Varamin decreased when exposed to RB light compared with C light. Under RB light, the essential oil contained more dill ether and α-phellandrene than in other light conditions. In general, light treatment with 75% R light and 25% B light had a noticeable impact on enhancing physiological features compared with other light spectrums. α-phellandrene levels increased in the Isfahan and Varamin cultivars under RB and B light conditions. Finally, the RB light and Khomein cultivars improved physiological features, whereas RB and R light in the Varamin and Isfahan cultivars are recommended for more essential oil compositions in functional food production. Anethum graveolens is an aromatic plant traditionally used as an antispasmodic and carminative. The objective of this study is to analyze the chemical composition of the essential oils and extracts obtained from seeds gathered in Errachidia, southern Morocco. Additionally, the antioxidant and antimicrobial properties of these oils and extracts will be evaluated. GC-MS analysis of the EO isolated by hydrodistillation revealed that its main compounds were E-anethole (38.13%), estragole (29.32%), fenchone (17.21%), and α-pinene (7.37%). The phenolic components were extracted using the methods of decoction and Soxhlet. The assay of the phenolic compounds showed that A. graveolens seeds contained considerable amounts of polyphenols, flavonoids, and condensed tannins, with variable levels depending on the extract analyzed. HPLC/UV-ESI-MS analyses performed on the decoction revealed a structural diversity of the molecules present in this extract, the most important of which were umbelliferone (12.35%), 3-hydroxyflavone (11.23%), rosmanol (8.95%), biotin (8.36%), emmotin H (4.91%), and coumarin (4.21%). The antioxidant activity, as determined by three techniques (DPPH•, FRAP, and CAT), demonstrated that the essential oils (EOs) and extracts had a potent capacity to counteract detrimental free radicals, control the generation of reactive oxygen species, and mitigate oxidative damages. The antimicrobial activity of the Eos and extracts was carried out in a liquid medium against five strains (E. cloacae, K. pneumoniae, E. coli, S. aureus, and S. epidermidis) and four candidiasis (C. albicans, C. dubliniensis, C. tropicalis, and C. parapsilosis) and Aspergillus niger. The results showed the effectiveness of the EOs compared to the aqueous, ethanolic, and decoction extracts against most of the microorganisms tested. In addition, the ethanolic extract showed antifungal activity that was distinguished from that of the other extracts. The antimicrobial efficacy of the essential oils under study can primarily be attributed to the synergistic interactions among its three principal constituents (E-anethole, estragole, and fenchone). Furthermore, molecular docking and molecular dynamics simulation results reveal significant interactions and stability between the selected bioactive compounds and different target proteins involved in antimicrobial and antioxidant activities. Compounds like 3-hydroxyflavone, emmotin H, trans-caftaric acid, methyl rosmarinate, 1-caffeoyl-beta-D-glucose, and kaempferol exhibited better binding energies with the explored proteins, indicating their potential as antimicrobial and antioxidant agents. Finally, our findings emphasize the significance of A. graveolens seeds as a promising reservoir of advantageous health compounds that can serve as organic substitutes for the presently employed synthetic preservatives. Neurodegeneration diseases (NDs) are a group of complex diseases primarily characterized by progressive loss of neurons affecting mental function and movement. Oxidative stress is one of the factors contributing to the pathogenesis of NDs, including Alzheimer’s disease (AD). These reactive species disturb mitochondrial function and accelerate other undesirable conditions including tau phosphorylation, inflammation, and cell death. Therefore, preventing oxidative stress is one of the imperative methods in the treatment of NDs. To accomplish this, we prepared hexane and ethyl acetate extracts of Anethum graveolens (dill) and identified the major phyto-components (apiol, carvone, and dihydrocarvone) by GC-MS. The extracts and major bioactives were assessed for neuroprotective potential and mechanism in hydrogen peroxide-induced oxidative stress in the SH-SY5Y neuroblastoma cell model and other biochemical assays. The dill (extracts and bioactives) provided statistically significant neuroprotection from 0.1 to 30 µg/mL by mitigating ROS levels, restoring mitochondrial membrane potential, reducing lipid peroxidation, and reviving the glutathione ratio. They moderately inhibited acetylcholine esterase (IC50 dill extracts 400–500 µg/mL; carvone 275.7 µg/mL; apiole 388.3 µg/mL), displayed mild anti-Aβ1–42 fibrilization (DHC 26.6%) and good anti-oligomerization activity (>40% by dill-EA, carvone, and apiole). Such multifactorial neuroprotective displayed by dill and bioactives would help develop a safe, low-cost, and small-molecule drug for NDs. Full article

Infections with phytoplasma present one of the most significant biotic stresses influencing plant health, growth, and production. The phytoplasma ‘Candidatus Phytoplasma solani’ infects a variety of plant species. This pathogen impacts the physiological and morphological characteristics of plants causing stunting, yellowing, leaf curling, and other symptoms that can lead to significant economic losses. The aim of this study was to determine biochemical changes in peony (Paeonia tenuifolia L.), mint (Mentha × piperita L.), and dill (Anethum graveolens L.) induced by ‘Ca. Phytoplasma solani’ in Serbia as well as to predict the impact of the biotic stress using artificial neural network (ANN) modeling. The phylogenetic position of the Serbian ‘Ca. Phytoplasma solani’ strains originated from the tested hosts using 16S rRNA (peony and carrot strains) and plsC (mint and dill strains) sequences indicated by their genetic homogeneity despite the host of origin. Biochemical parameters significantly differed in asymptomatic and symptomatic plants, except for total anthocyanidins contents in dill and the capacity of peony and mint extracts to neutralize superoxide anions and hydroxyl radicals, respectively. Principal Component Analysis (PCA) showed a correlation between different chemical parameters and revealed a clear separation among the samples. Based on the ANN performance, the optimal number of hidden neurons for the calculation of TS, RG, PAL, LP, NBT, OH, TP, TT, Tflav, Tpro, Tant, DPPH, and Car was nine (using MLP 8-9-13), as it produced high r2 values (1.000 during the training period) and low SOS values. Developing an effective early warning system for the detection of plant diseases in different plant species is critical for improving crop yield and quality. Full article

Vulvovaginal candidiasis (VVC) is a real gynecological problem among women of reproductive age from 15 to 49. A recent analysis showed that 75% of women will have an occurrence at least once per year, while 5% are observed to have recurrent vaginal mycosis—these patients may become unwell four or more times a year. This pathology is caused in 85–90% of cases by fungi of the Candida albicans species. It represents an intractable medical problem for female patients due to pain and pruritus. Due to the observation of an increasing number of strains resistant to standard preparations and an increase in the recurrence of this pathology when using local or oral preferential therapy, such as fluconazole, an analysis was launched to develop alternative methods of treating VVC using herbs such as dill, turmeric, and berberine. An in-depth analysis of databases that include scientific articles from recent years made it possible to draw satisfactory conclusions supporting the validity of herbal therapy for the pathology in question. Although phytotherapy has not yet been approved by the Food and Drug Administration, it appears to be a promising therapeutic solution for strains that are resistant to existing treatments. There is research currently undergoing aimed at comparing classical pharmacotherapy and herbal therapy in the treatment of vaginal candidiasis for the purpose of increasing medical competence and knowledge for the care of the health and long-term comfort of gynecological patients. This study determined the content and composition of dill seed (Anethum graveolens L.) essential oil under varying light conditions: non-shaded plants in open fields and plants covered with pearl shade nets (40% shade index). Essential oil was extracted using Clevenger hydrodistillation. The essential oil content was 4.63% for non-shaded plants and 4.81% for shaded plants. GC/MS analysis revealed twenty-one and twenty-two components in dill seed from non-shaded and shaded plants, respectively. The terpenic fraction of essential oil from non-shaded plants consisted mainly of oxygen-containing monoterpene derivatives (53.6%), with carvone (46.1%) as the primary component, followed by monoterpene hydrocarbons (46.4%), predominantly limonene (43.8%). Essential oil from shaded plants contained a higher content of carvone (49.8%) and a lower content of limonene (37.8%) compared to essential oil from non-shaded plants. Non-shaded plant essential oil exhibited stronger antioxidant activity (EC50 value: 26.04 mg mL−1) than shaded plant essential oil (54.23 mg mL−1). Dill seed essential oil showed the most potent antimicrobial activity (disc diffusion method) against Escherichia coli (inhibition zone: 15–18 mm). Shaded plants demonstrated a positive influence of essential oil against Klebsiella pneumoniae. Carvone and its derivatives, as the main components, hold significant potential in the food industry and alternative medicines. A practical implication of this study could be higher plant densities or intercropping of dill, as it thrives with minimal light. Full article

Dill (Anethum graveolens L.) essential oil (DEO) obtained by hydrodistillation (HD) and lipid extracts (DSE1 and DSE2) obtained by supercritical CO2 extraction (SFE) were used as potential antioxidants and antimicrobial agents in beef burgers at two different concentrations (0.075 and 0.15 µL/g). The chemical profile of the lipid extracts and their in vitro antimicrobial activity against the common pathogens E. coli and L. monocytogenes (MIC and MBC) were determined. The quality and shelf life of the burgers were monitored through (lipid oxidation—TBARS test; protein oxidation—thiol group content and selected biogenic amine content) and microbiological quality (Enterobacteriaceae—EB, aerobic mesophilic bacteria—TAMB, lactic acid bacteria—LAB). Dill lipid extracts (DEO and DSE1) significantly (p < 0.05) reduced lipid oxidation and protein oxidation in beef burgers, while the lipid extract (DSE2) showed pro-oxidative effects. The strongest antimicrobial potential against EB was found in SFE1150 (1.15 log cfu/g). Putrescine, cadaverine, histamine, and tyramine were not detected in any of the analyzed samples during the storage period, while the total content of biogenic amines ranged from 21.4 mg/kg to 285 mg/kg. Generally, it can be concluded that dill essential oil (DEO) and extract DSE1 can be used as novel natural additives in minced-meat products. Full article

The spotted wing drosophila (SWD), Drosophila suzukii Matsumura (Diptera: Drosophilidae), is an invasive polyphagous pest of soft-skinned fruit that has started to threaten small fruit production in Europe since 2008. High reproductive capacity, short generation time, and difficulties in visualizing early damage contribute to its rapid spread. Currently, the control strategy against D. suzukii mostly relies on treatment with synthetic insecticides. Keeping in mind that this pest causes the greatest damage during the harvesting period, control using chemicals is not recommended due to the increased risk of high pesticide residue levels in the fruit. With the aim of reducing the use of insecticides, there is a need for developing an environmentally safer way of control. Alternative solutions could rely on the use of essential oils (EOs), which can be used in conventional and organic production systems. Four essential oils, geranium (Pelargonium graveolens), dill (Anethum graveolens), Scots pine (Pinus sylvestris), and bergamot (Citrus bergamia), were assessed for their insecticidal effects using four different tests (contact toxicity, fumigant-contact toxicity, repellent effect, and multiple-choice tests). The EOs applied were dissolved in acetone at three different concentrations. The most promising one was the geranium essential oil, which had the best effect in all conducted tests, even at the lowest applied concentration. Geranium oil caused very high mortality (95%), even at the lowest concentration applied, after 24 h in the fumigant-contact test, and it caused a mortality of over 85% in the contact test. It was also noticed that geranium demonstrated a deterrent effect by repelling females from laying eggs for four days after at the lowest applied concentration. Scots pine and dill EOs have moderate to strong effects in most tests. The mortality of 100% was achieved for the highest applied concentration in the fumigant-contact and contact tests. Bergamot EO did not have any significant insecticidal activity. Geranium, Scots pine, and dill have great potential to be used as an environmentally friendly way of controlling D. suzukii as they exhibit deterrent, repellent, and insecticidal effects. Traditionally, Middle Eastern herbal medicines, especially traditional Iranian medicines (TIM), have been used by cancer patients both during and after active cancer treatments. Medicinal plants and herbs which are common in traditional Iranian medicine are considered to be less toxic and less expensive than chemical drugs. Alkaloid anti-cancer compounds are pyrrolidine, tropane, pyridine, piperidine, quinolizidine, pyrrolizidine, isoquinoline, indolizidine, isoxazaole, oxazole, quinoline, quinazoline, purine, indole serin, colchicine, β-phenylethylamine, abornin, benzylamine, narciclasine, and pancratistatin. Anticancer terpenoids compounds from medicinal plants and herbs are alpha-hederin, isoprene, galanal A, galanal B, oleanane, carnosol, and xanthorrhizol. Anticancer phenolic compounds from medicinal plants are kaempferol, flavones, flavonol, curcumin, luteoline, chalcone, apigenin, and cafesterol. All relevant papers in the English language from different research using the keywords traditional Persian medicine, traditional Iranian medicine, natural products, and cancer were collected from PubMed, Google Scholar, and Science Direct. Some of the most important medicinal plants and herbs in the middle east, especially in Iran, with anti-caner activities are Acorus calamus, Aracia seyal, Allium ascalonicum, Allium cepa, Agaricus campestris, Aloe vera, Allium sativum, Apium graveolens, Anethum graveolens, Arum palaestinum, Artemisia absinthium, Beta vulgaris, Astoma seselifolium, Brassica oleraceae, Brassica nigra, Boswellia carterii, Capparis spinosa, Bryonia syriaca, Ceterach officinarum, Cassia senna, Cichorium intybus, Chrysanthemum coronarium, Citrullus colocynthis, Cinnamomum camphora, Crataegus azarolus, Crocus sativus, Cucumis melo, Nigella sativa, Olea europaea, Peganum harmala, Punica granatum, Pistacia lentiscus, Zingiber officinale, Thymus vulgaris, Vitis vinifera, Viscum cruciatum, and Urtica pilulifera. Iranian medicinal plants and herbs should be considered more as a notable and great potential source of novel chemical ingredients with anti-cancer activities. Full article
