Dear Colleagues,
Microbial fermentation, as a vital biotechnology in the food industry, is reshaping the food industry with unprecedented depth and breadth. This Special Issue focuses on the exploration of fermentation microbial resources, metabolic regulation mechanisms, and industrial applications, with a particular emphasis on the following topics:
① The targeted breeding of new fermentation strains (application of genome editing and adaptive evolution techniques in probiotic and yeast modification);
② The accurate regulation of the fermentation process (multi omics technology analysis of metabolic network, AI model optimization of fermentation process);
③ The development of high value-added products (microbial synthesis of functional proteins, vitamins, natural pigments, and flavor compounds);
④ Sustainable food system construction (upgrading fermentation technology to create substitutes for proteins, such as plant protein and insect protein, reducing carbon emissions from food processing).
Through interdisciplinary research, we aim to promote the transformation of food fermentation from experience-based to precise design, and provide technological support for the development of healthy diets and green manufacturing.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Fermentation is an international peer-reviewed open access monthly journal published by MDPI.
