  • In Figure 3 there's no statistics performed with the data.

We added statistical analysis, by comparing yeast count of strain with similar inoculum level. In details, we compared count of EC1118 and ND1 strains in both the mixed starter fermentations.

  • Figure 6 lacks the error bars and statistics:

The error bars were already present in the figure, but in consequence of the low standard deviation, they were not visible. In the revised version, we reduced the line thickness.

  • the figures don't have enough quality

We improved the quality of all the figures.

In this manuscript investigated what would happen when Hanseniaspora osmophila is encapsulted and how it would affect a wine fermentations in a multistarter fermentation.

Overall, the manuscript is interesting and the data presented is worthy of publication. However the WAY the data is presented is at times quite disappointing and a better job needs to be done with the graphics and some sections of the text. I would suggest to the authors that the manuscript should go through a language editor and let someone with better graphic design skill redo the figures. It would be preferable that the graphs not be drawn by excel.

In some of the comments below I will point out some language errors but there are definitely more thus my suggestion of recruiting a language editor.

line 74: In "the" microencapsulation...there are numerous cases like this where the article was omitted

line 80: sentence construction...In this study, the fermentative.... was evaluated

line 191: unsure what is meant with "and a volume"

line 193: are you not certain of the variety of must?

line 221 and 223: species names not in cursive

Figure 2: x and y axis titles are not well placed and does "19" mean "end" on x-axis?

Regarding x and y axis titles, some problems occurred during journal management, whereas we have clarified in the figure caption the meaning of “end”, this corresponded to the final fermentation day, which was variable in function of the starter.

We used alternative expression

line 269 and 351: try to avoid using "very" in scientific writing

We eliminated “very” in all the manuscript.
