Influence of Microencapsulation on Fermentative Behavior of Hanseniaspora osmophila in Wine Mixed Starter Fermentation
Round 1
Reviewer 1 Report
- In Figure 3 there's no statistics performed with the data.
- Figure 6 lacks the error bars and statistics
- the figures don't have enough quality
Author Response
We are thankful to the reviewer for the valuable suggestions, very useful for improving our paper.
- In Figure 3 there's no statistics performed with the data.
We added statistical analysis, by comparing yeast count of strain with similar inoculum level. In details, we compared count of EC1118 and ND1 strains in both the mixed starter fermentations.
- Figure 6 lacks the error bars and statistics:
The error bars were already present in the figure, but in consequence of the low standard deviation, they were not visible. In the revised version, we reduced the line thickness.
- the figures don't have enough quality
We improved the quality of all the figures.
Reviewer 2 Report
In this manuscript investigated what would happen when Hanseniaspora osmophila is encapsulted and how it would affect a wine fermentations in a multistarter fermentation.
Overall, the manuscript is interesting and the data presented is worthy of publication. However the WAY the data is presented is at times quite disappointing and a better job needs to be done with the graphics and some sections of the text. I would suggest to the authors that the manuscript should go through a language editor and let someone with better graphic design skill redo the figures. It would be preferable that the graphs not be drawn by excel.
In some of the comments below I will point out some language errors but there are definitely more thus my suggestion of recruiting a language editor.
line 74: In "the" microencapsulation...there are numerous cases like this where the article was omitted
line 80: sentence construction...In this study, the fermentative.... was evaluated
line 191: unsure what is meant with "and a volume"
line 193: are you not certain of the variety of must?
line 221 and 223: species names not in cursive
Figure 2: x and y axis titles are not well placed and does "19" mean "end" on x-axis?
line 264: "with" respect
line 268: "As regards" not standard English
line 269 and 351: try to avoid using "very" in scientific writing
line 272: in "the" fermentation
fig 3: resolution not that good
line 297: bad proofreading as the subtitle of the results is in the caption
line 302: with "the" exception
table 1 and 2 unsure why some parts of the caption are in boldface
line 337: with "the" exception
line 358: As regard is not standard English
line 390: far "from" each other
fig 5: figure is quite bad and actually not interpretable. should definitable be reworked
Line 463: avoid contractions

The authors are thankful to the reviewer for the valuable suggestions, very useful for improving our paper.
We revised accurately all the manuscript for English language and we improved the quality of all the figures.
line 74: In "the" microencapsulation...there are numerous cases like this where the article was omitted
We added the article in all the manuscript.
line 80: sentence construction...In this study, the fermentative.... was evaluated.
We modified according to reviewer’s suggestion.
line 191: unsure what is meant with "and a volume":
We change “and a volume” with “an aliquot”
line 193: are you not certain of the variety of must?
We added the grape must variety, which was the same used for mixed fermentations (Aglianico del Vulture).
line 221 and 223: species names not in cursive
We changed them
Figure 2: x and y axis titles are not well placed and does "19" mean "end" on x-axis?
Regarding x and y axis titles, some problems occurred during journal management, whereas we have clarified in the figure caption the meaning of “end”, this corresponded to the final fermentation day, which was variable in function of the starter.
line 264: "with" respect
OK, we changed it
line 268: "As regards" not standard English
We used alternative expression
line 269 and 351: try to avoid using "very" in scientific writing
We eliminated “very” in all the manuscript.
line 272: in "the" fermentation
Ok, we added it
fig 3: resolution not that good
We increased the figure resolution
line 297: bad proofreading as the subtitle of the results is in the caption
We modified it
line 302: with "the" exception
Ok, with modified it.
table 1 and 2 unsure why some parts of the caption are in boldface
Probably, it was a problem related to proofreading; we have modified them.
line 337: with "the" exception
Ok, we modified it.
line 358: As regard is not standard English
We change “As regard” with alternative expression
line 390: far "from" each other
We modified it.
fig 5: figure is quite bad and actually not interpretable. should definitable be reworked
We made again this figure, by improving its quality.
Line 463: avoid contractions
We changed it.
