Micro- and Nanoplastic (MNP) pollution is an emerging challenge globally, posing a significant threat to both aquatic and terrestrial ecosystems worldwide. This review critically examines the sources, exposure routes, and impact of plastics, with particular focus on implications for the livestock sector. MNPs enter animals’ bodies primarily through ingestion of contaminated feed and water, inhalation, and dermal exposure, subsequently accumulating in various organs, disrupting physiological functions. Notably, MNPs facilitate the horizontal transfer of antimicrobial resistance genes (ARGs), exacerbating the global challenge of antimicrobial resistance (AMR). In agricultural environments, sources such as organic fertilizers, wastewater irrigation systems, surface runoff, and littering contribute to soil contamination, adversely affecting plant growth and soil health, which in turn compromises feed quality and ultimately animals’ productivity. This review synthesizes current evidence demonstrating how MNP exposure impairs animal production, reproduction, and survival, and highlights the interconnected risks to food safety and ecosystem health. The findings call for the urgent need for comprehensive research under controlled conditions to underscore the fine details regarding mechanisms of MNP toxicity and to inform effective mitigation strategies. Addressing MNP pollution is crucial for safeguarding animal health, ensuring sustainable livestock production, and promoting environmental sustainability and integrity. Full article

Research on anticoagulant rodenticides (ARs) in wildlife has primarily focused on apex predators, with less attention given to their potential integration into lower trophic levels and the associated exposure pathways. At the base of the terrestrial food web, invertebrates have been suggested as potential vectors of ARs to insectivorous species such as small mammals, reptiles, and birds. To explore this hypothesis, we analyzed the presence of nine anticoagulant rodenticides—including both first-generation (FGARs) and second-generation (SGARs) rodenticides—in 36 liver samples from Yemen chameleons (Chamaeleo calyptratus) and 98 liver samples from six non-raptorial, predominantly insectivorous bird species from the Canary Islands. Through HPLC-MS/MS analysis, only SGARs were detected in both animal groups collected between 2021 and 2024. Approximately 80% of reptiles and 40% of birds tested positive for at least one SGAR, with brodifacoum being the most frequently detected compound. In more than 90% of positive cases, it was found as the sole contaminant, while co-occurrence with other SGARs was uncommon. Additionally, most concentrations were below 50 ng/g wet weight, except for two bird specimens, suggesting heterogeneous exposure scenarios and potential variability in contamination sources across individuals. These findings provide evidence of AR integration at the base of the terrestrial food web in the Canary Islands and suggest secondary exposure via invertebrates as a plausible route of contamination. Further research directly analyzing invertebrate samples is needed to confirm their role as vectors of ARs to insectivorous wildlife in insular ecosystems. Full article

Sustainability in food production is a pressing priority due to environmental and political crises, the need for long-term food security, and feeding the populace. Food producers need to increasingly adopt sustainable practices to reduce negative environmental impacts and food waste. The ocean is a source for sustainable food systems; deforestation, water scarcity, and greenhouse gas emissions burden traditional, terrestrial resources. Our oceans contain the largest unexploited resource in the world in the form of mesopelagic fish species, with an estimated biomass of 10 billion metric tons. This resource is largely untapped due in part to the difficulties in harvesting these species. To ensure sustainability of this resource, management of fish stocks and fish processing practices must be optimised. Generation of fish protein hydrolysates from by-catch/underutilised species creates high-value, functional ingredients while also reducing waste. Marine hydrolysates offer a renewable source of nutrition and align with the principles of the circular economy, where waste is minimised and resources are reused efficiently. Ocean-derived solutions demand fewer inputs, generate less pollution, and have a smaller carbon footprint compared to traditional agriculture. This review collates clearly and succinctly the current and potential uses of FPHs for different market sectors and highlights the advantages of their use in terms of the scientifically validated health benefits for humans and animals and fish, and the protection and crop yield benefits that are documented to date from scientific studies. Collagen is a structural protein found in the connective tissues of terrestrial and marine animals. Its diverse functional attributes span its applications in several industries, including food, supplements, cosmetics, and pharmaceuticals. Typically derived from mammalian sources, collagen and its derivatives, including gelatin and collagen peptides, are essential for the food and supplement industries. Recently, marine collagen has emerged as a viable mammalian collagen alternative due to its unique functionality and sustainability. Marine vertebrates and invertebrates are reliable sources of marine collagen. Some marine organisms are promising sustainable sources of collagen for nutritional applications. Recent research highlights significant advances in marine collagen extraction, processing, and novel applications. Hence, recent interest has propelled research in identifying novel collagen sources and advancing technologies to produce marine collagen-based products. Considering the recent scientific interest in marine collagen, this review provides an overview of recent progress in marine collagen production, including novel sources, innovative processing technologies, nutritional and functional properties, safety and quality control, current challenges, and future research directions. The review highlights certain challenges, including unpleasant odor, flavor, color, insufficient supply, and inconsistent quality of marine collagen. Future research should focus on increasing the collagen extraction yield, improving the smell and flavor, and developing novel delivery systems to increase bioavailability and functionality. Mercury is considered to be one of the chemical elements posing the greatest threats to the health of most animals and can be transferred from aquatic ecosystems to terrestrial food webs. Many bat species forage above water, and their food sources include aquatic and amphibious organisms. Bats are very sensitive to the slightest changes in the environment. The objective was to determine the accumulation of mercury in the fur of insectivorous bats in summer habitats in an area with limited anthropogenic activity in the conditions of the middle taiga in the northwest European part of the Russian Federation. In the studied species, the average values of the metal’s content (μg/g) increased in the following order: Myotis daubentonii (3.294 ± 0.934), Myotis dasycneme (3.909 ± 0.543), Vespertilio murinus (8.011 ± 1.136), Pipistrellus nathusii (8.366 ± 0.546), and Nyctalus noctula (8.408 ± 1.386). The key factor regarding the mercury accumulation in each bat species is the foraging strategy. The mercury content in the fur of adult bats was higher than in subadults. Full article

Background. It is well-established that a range of macronutrients, micronutrients and bioactive compounds found in animal-source foods play unique and important roles in human health as part of a healthy diet. Methods. This narrative review focuses on terrestrial animal source foods (TASFs). It particularly analyzes five groups: poultry eggs, milk, unprocessed meat, foods from hunting and wildlife farming, and insects. The objectives were as follows: (1) examine the nutrient composition of TASFs within and across livestock species, drawing on the country and regional food composition databases; (2) analyze the influence of intrinsic animal characteristics and production practices on TASF nutritional quality. Results. TASFs are rich in high-quality proteins and fats, as well as micronutrients such as vitamin B12, iron or zinc. This study found differences in the nutritional quality of TASFs by livestock species and animal products, as well as by characteristics of livestock production systems. Our findings suggest that there may be public health opportunities by diversifying TASF consumption across species and improving certain aspects of the production systems to provide products that are both more sustainable and of higher quality. Conclusions. Future research should adopt a more holistic approach to examining the food matrix and the dietary patterns that influence TASF digestibility. It is necessary to include meat from hunting and wildlife farming and insects in global food composition databases, as limited literature was found. In addition, scarce research focuses on low- and middle-income countries, highlighting the need for further exploration of TASF food composition analysis and how intrinsic animal characteristics and livestock production system characteristics impact their nutritional value. Background. Animal source foods are under scrutiny for their role in human health, yet some nutritionally vulnerable populations are largely absent from consideration. Methods. Applying a Population Intervention/Exposure Comparator Outcome (PICO/PECO) framework and prioritizing systematic review and meta-analyses, we reviewed the literature on terrestrial animal source foods (TASFs) and human health, by life course phase. Results. There were consistent findings for milk and dairy products on positive health outcomes during pregnancy and lactation, childhood, and among older adults. Eggs were found to promote early childhood growth, depending on context. Unprocessed meat consumption was associated with a reduced risk for anemia during pregnancy, improved cognition among school-age children, and muscle health in older adults. Milk and eggs represent a risk for food sensitivities/allergies, though prevalence is low, and individuals tend to outgrow the allergies. TASFs affect the human microbiome and associated metabolites with both positive and negative health repercussions, varying by type and quantity. Conclusions. There were substantial gaps in the evidence base for studies limiting our review, specifically for studies in populations outside high-income countries and for several TASF types (pig, poultry, less common livestock species, wild animals, and insects). Nonetheless, sufficient evidence supports an important role for TASFs in health during certain periods of the life course. Full article

The addition of marine macroalgae to animal feed has garnered interest due to the demonstrated benefits of gut health in many livestock species. Most macroalgae have a higher mineral content than terrestrial vegetables, making them an attractive, sustainable source of minerals. However, some macroalgae contain elevated concentrations of iodine and arsenic, which may be transferred to the meat of livestock fed with macroalgae. This study evaluated the mineral profile of rabbit serum, muscle, liver, and kidney of rabbits fed diets supplemented with different marine macroalgae, with the goal of improving post-weaning gut health and reducing reliance on antibiotics. We found increased deposition of iodine in muscle, liver, and kidney due to macroalgae supplementation, which is particularly promising for regions with low iodine endemicity. Higher, though relatively low arsenic concentrations, compared to those in other animal meats and food sources, were also detected in the muscle, liver, and kidney of macroalgae-fed rabbits. The absence of apparent interactions with other micronutrients, particularly selenium, suggests that the inclusion of macroalgae in rabbit diets will not affect the overall mineral content. Enhanced bioavailability of elements such as phosphorus and iron may provide additional benefits, potentially reducing the need for mineral supplementation. Full article

Microcystins (MCs), natural hepatotoxic compounds produced by cyanobacteria, pose significant risks to water quality, ecosystem stability, and the well-being of animals, plants, and humans when present in elevated concentrations. The escalating contamination of irrigation water with MCs presents a growing threat to terrestrial plants. The customary practice of irrigating crops from local water sources, including lakes and ponds hosting cyanobacterial blooms, serves as a primary conduit for transferring these toxins. Due to their high chemical stability and low molecular weight, MCs have the potential to accumulate in various parts of plants, thereby increasing health hazards for consumers of agricultural products, which serve as the foundation of the Earth’s food chain. MCs can bioaccumulate, migrate, potentially biodegrade, and pose health hazards to humans within terrestrial food systems. This study highlights that MCs from irrigation water reservoirs can bioaccumulate and come into contact with plants, transferring into the food chain. Additionally, it investigates the natural mechanisms that organisms employ for conjugation and the microbial processes involved in MC degradation. To gain a comprehensive understanding of the role of MCs in the terrestrial food chain and to elucidate the specific health risks associated with consuming crops irrigated with water contaminated with these toxins, further research is necessary. Rabies, one of the most lethal global zoonoses, affects all mammals. It remains circulating worldwide in sylvatic cycles through terrestrial and airborne reservoirs, and in Brazil, bats are currently the main reservoirs and source of transmission. Wild boars, an important invasive alien species in Brazil, are a proven food source for hematophagous bats and may participate in the Brazilian sylvatic cycle of rabies. We evaluated the presence of this pathogen in hunted wild boars from the São Paulo state using histopathology, the direct fluorescent antibody test (DFA), viral isolation in cell culture (VICC), the rapid fluorescent focus inhibition test (RFFIT), and quantitative reverse transcription polymerase chain reaction (RT-qPCR). The results of histopathological, DFA, VICC, and RT-qPCR analysis were negative for all samples; seven serum samples tested positive in the RFFIT, and titers ranged from 0.13 IU/mL to 0.5 IU/mL. The presence of rabies virus-neutralizing antibodies in the studied wild boars suggests the circulation of the virus in these animals. Educative actions directed at hunters should include information on the prevention of this important zoonosis. Full article

Chicken collagen is a promising raw material source for the production gelatins and hydrolysates. These can be prepared biotechnologically using proteolytic enzymes. By choosing the appropriate process conditions, such changes can be achieved at the molecular level of collagen, making it possible to prepare gelatins with targeted properties for advanced cosmetic, pharmaceutical, medical, or food applications. The present research aims to investigate model samples of chicken gelatins, focusing on: (i) antioxidant activity using 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2-azinobis-3-etylbenzotiazolin-6-sulfonic acid (ABTS); (ii) the distribution of molecular weights via gel permeation chromatography with refractometric detection (GPC-RID); (iii) functional groups and the configuration of polypeptide chains related to molecular-level properties using Fourier transform infrared spectroscopy (FTIR); (iv) the microbiological populations on sabouraud dextrose agar (SDA), plate count agar (PCA), tryptic soy agar (TSA), and violet red bile lactose (VRBL) using the matrix-assisted laser desorption ionization (MALDI) method. Antioxidant activity towards ABTS radicals was more than 80%; activity towards DPPH radicals was more than 69%. The molecular weights of all gelatin samples showed typical α-, β-, and γ-chains. FTIR analysis confirmed that chicken gelatins all contain typical vibrational regions for collagen cleavage products, Amides A and B, and Amides I, II, and III, at characteristic wavenumbers. A microbiological analysis of the prepared samples showed no undesirable bacteria that would limit advanced applications of the prepared products. Chicken gelatins represent a promising alternative to products made from standard collagen tissues of terrestrial animals. Full article

Perfluorinated and polyfluorinated alkyl substances (PFAS), more than 4700 in number, are a group of widely used man-made chemicals that accumulate in living things and the environment over time. They are known as “forever chemicals” because they are extremely persistent in our environment and body. Because PFAS have been widely used for many decades, their presence is evident globally, and their persistence and potential toxicity create concern for animals, humans and environmental health. They can have multiple adverse health effects, such as liver damage, thyroid disease, obesity, fertility problems, and cancer. The most significant source of living exposure to PFAS is dietary intake (food and water), but given massive industrial and domestic use, these substances are now punctually present not only domestically but also in the outdoor environment. For example, livestock and wildlife can be exposed to PFAS through contaminated water, soil, substrate, air, or food. In this review, we have analyzed and exposed the characteristics of PFAS and their various uses and reported data on their presence in the environment, from industrialized to less populated areas. In several areas of the planet, even in areas far from large population centers, the presence of PFAS was confirmed, both in marine and terrestrial animals (organisms). Among the most common PFAS identified are undoubtedly perfluorooctanesulfonate (PFOS) and perfluorooctanoic acid (PFOA), two of the most widely used and, to date, among the most studied in terms of toxicokinetics and toxicodynamics. The objective of this review is to provide insights into the toxic potential of PFAS, their exposure, and related mechanisms. Full article

Microplastic contamination has become a concerning topic of study in recent decades. This review discusses the development of microplastic pollution based on a selection of South Asian countries consisting of Bangladesh, Iran, Philippines, Thailand, India, Indonesia, and Vietnam. The condition of microplastic pollution related to the abundance of microplastic found in various environments as well as the presence of microplastics in food and the air, is covered in this review. Several reports found that drinking water sourced from taps was found to have about 83% of microplastic particles in the year 2017 based on results from 14 nations, and in the year 2018, 260 bodies of water for human consumption in 11 countries were found to have about 93% of microplastic particles. Micro debris pollution in seas and oceans worldwide is predicted to be at an amount of 236,000 metric tons based on a statistical report. A mean value of 30 micro debris per liter of glacier water was recovered from the top of Mount Everest, whereas about 2200 small particles per liter were discovered in the deep waters of the Mariana Trench. The main environments that are severely microplastic-contaminated are water-based places such as rivers, estuaries, and beaches. The presence of microplastics in food items, such as tea bags, sugar, shrimp paste, and salt packets, has been reported. In terms of impacts on the environment, microplastic contamination includes the ingestion of microplastics by aquatic creatures in water environments. The impacts on terrestrial environments relate to microplastics sinking into the soil, leading to the alteration of the physicochemical parameters of soil. Meanwhile, the impacts on the atmospheric environment include the settling of microplastics on the external bodies of animals and humans. Full article

Fish products are consumed by human beings as a high-quality protein source. However, overfishing, and pollution puts out an urgent call to seek a new strategy to substitute fish protein for secure eco-sustainability. Plant-based fish analogs, which mimic the structure, texture, and flavor of fish meat products, are a rapid-growing segment of the food products. The purpose of this review is to discuss the feasibility and potential strategies for developing plant-based fish analog. The nutritional properties, especially the protein quality of plant-based fish analogs, were discussed. Furthermore, a thorough comparison was made between fish and terrestrial animal muscle structures, including both macroscopical and microscopical structures. Potential processing technologies for producing plant-based fish analogs from plant proteins and approaches for the characterization of the fish analog structures were elaborated. Comparing all the current processing techniques, extrusion is the predominately used technique in the current industry. At the same time, 3D-printing and electrospinning have shown the prominent potential of mimicking fish muscle structure as bottom-up approaches. Finally, key challenges and future research were discussed for the potential commercialization of plant-based fish analogues. The primary focus of this review covers the innovative works that were indexed in the Web of Science Core Collection in the past five years. Full article

Characterization of Intertidal Macrofaunal Communities of Two Sandy Beaches under Different Anthropogenic Pressures

The macrofauna in the intertidal zone of sandy beaches provides the trophic connectivity between land and sea, by linking microbiome, meiofauna, and megafauna, representing a food source for several terrestrial animals, including shorebirds and mammals. However, the macrozoobenthos in urbanised beaches is subjected to intense disturbances, such as breakwater barriers and tourism, which limit or impede the energy transfer from the marine to the terrestrial habitats. Because the information about diversity and abundance of the macrozoobenthos of the intertidal zone on the Mediterranean sandy coasts is scant, the main objective of this study is to increase the knowledge on the macrofauna living in this habitat and to identify taxa sensitive to cumulative human-induced stresses. To achieve this purpose, the structure and dynamics of macrozoobenthic communities from (1) a highly frequented beach characterized by breakwater barriers and (2) a marine protected area (MPA) in the Adriatic Sea were compared. The hypotheses that macrofauna composition and abundance changed in the two sites and over time were tested. Results highlighted that the macrozoobenthos in the MPA is mainly dominated by juvenile bivalves, which peaked from autumn to winter, and to a lesser extent by ostracods and mysids. Conversely, ostracods and the bivalve Lentidium mediterraneum (O. G. Costa, 1830) are particularly abundant in the highly disturbed beach, while the gastropod Tritia neritea (Linnaeus, 1758) increased only during summer. A possible combined effect of breakwater barriers and intense trampling has been theorized to explain the main differences between the two sites especially in the summer. Full article
